Super easy, crispy oven-baked BEST ever potato wedges with a savory-seasoned outside and fluffy inside, served with the most amazing two-ingredient sauce!

2 pounds red potatoes (about 6-8 potatoes)
2 tablespoons oil
1 teaspoon salt
1 teaspoon smoked paprika (may substitute regular paprika in a pinch)
1 teaspoon garlic powder
½ teaspoon onion powder
pinch black pepper
⅓ cup mayo (regular, or reduced fat)
⅓ cup bbq sauce (any favorite bbq sauce works)

Steps:

  • Preheat oven to 450 degrees. Line a large, rimmed baking sheet with parchment. (See note)
  • Cut the potatoes into about 8 wedges (They should be less than 1/2 inch thick on the wide edge, if your potatoes are larger, cut any larger wedges in half again). Pat the potato wedges dry with paper towels to absorb excess starch. (see note)
  • In a large bowl, combine potato wedges and oil, toss to coat.
  • Stir together salt, paprika, garlic power, onion powder, and pepper. Sprinkle over potato wedges and toss to coat.
  • Transfer potato wedges to your prepared baking sheet, arranging them in a single layer so they aren't overlapping, and doing your best to have them not touching (it's fine if some of them are).
  • Bake for 15 minutes. Remove from oven, turn over the potato wedges with fork or tongs. Return to oven for 15 minutes. While potatoes are baking, stir together mayo and bbq sauce. Potatoes should be appear browned and crispy on the edges and be fork-tender. Serve with dipping sauce.

3 medium russet potatoes, preferably organic
2 tablespoons olive oil, plus more for the pan
Kosher salt and freshly ground black pepper

3 cloves garlic, finely chopped
1 teaspoon smoked paprika
1/2 cup mayonnaise
2 tablespoons finely chopped flat-leaf parsley

Steps:

  • Place a large rimmed baking sheet in the oven; preheat the oven to 425 degrees F.
  • Wash the potatoes well, then pat them dry. Cut each potato lengthwise into 1-inch-thick wedges. Toss the wedges with 1 tablespoon of the oil, 1 teaspoon salt and some pepper.
  • Carefully remove the hot baking sheet from the oven and brush it lightly with oil. Arrange the wedges, cut-side-down, on the sheet in a single layer. Bake until the underside is golden brown and not sticking to the baking sheet, about 25 minutes. Use a metal spatula to loosen and flip the potatoes, then continue to bake until golden brown and crisp all over, about 20 minutes more.
  • Meanwhile, heat the remaining 1 tablespoon oil in a small skillet over low heat. Add the garlic and cook, stirring often, until golden, about 3 minutes. Add the paprika and cook 30 seconds, stirring. Remove from the heat and cool slightly; then stir the mixture into the mayonnaise.
  • Sprinkle the potato wedges with parsley and serve with the aioli for dipping.

These were an experiment I did for tonight's meal and I think they turned out pretty well. They aren't out and out low fat but the only fat used is extra virgin olive oil so it is a good fat and a little bit of fresh Parmesan cheese and you could use the reduced fat version of that if desired. So, far better than deep fried French fries.

3 potatoes
2 1/2 tablespoons extra virgin olive oil
1/2 tablespoon dried basil
1/2 tablespoon dried oregano
1/2 teaspoon garlic salt
2 1/2 tablespoons fresh parmesan cheese, grated

Steps:

  • Preheat the oven to 425 degrees.
  • Cut each potato in half length wise and then quarter each half to make potato edges.
  • Arrange the wedges on a baking tray with the skin side down.
  • In a bowl mix together the oil, herbs and garlic salt.
  • Brush the oil mixture onto each potato wedge.
  • Sprinkle the grated cheese over the wedges.
  • Put in the oven and bake for about 25 to 35 minutes or until done depending on the thickness of your wedges.
  • Serve.

1kg red-skinned potato , such as Desiree
25g butter , melted
1 tbsp tandoori curry powder or jerk seasoning
1 tbsp Dijon mustard
1 tsp clear honey
5 tbsp mayonnaise

Steps:

  • Make the dip. Ripple the mustard and honey through the mayonnaise in a small bowl. Cover and chill.
  • Preheat the oven to fan 180C/ conventional 200C/gas 6. Cut each potato into eight wedges, then cook in boiling salted water for 5 minutes.
  • In a large bowl, mix the butter and spice with a little seasoning. Drain the potatoes, then add to the bowl and shake. Transfer to two baking sheets and bake for 20-25 minutes, turning occasionally, until crisp and browned. Serve hot, with the dip.

6 ounces cremini mushrooms, halved
1 medium sweet onion, sliced thinly
2 tablespoons balsamic vinegar
6 ounces smoked gouda cheese, shredded

Steps:

  • 1. Prepare the Simply Potatoes Rustic Italian Seasoned Russet Wedges.
  • as directed on the package and keep warm.
  • 2. In a non-stick pan, slowly cook the mushrooms and onion until well carmelized. The onions should be medium brown and the mushrooms soft, but not mushy.
