2 -5 potatoes (any kind)
lawry's salt

Steps:

  • get a pan hot (medium heat)
  • add oil to the pan.
  • slice the potatoes any you would like.
  • when the oil gets hot add the potatoes (test with a splash of water - it will sizzle when hot).
  • sprinkle Lawry's salt on the potatoes (a little goes a long way).
  • when they are done they will be brown - dark brown and hard.

BAKED ITALIAN CHICKEN WITH POTATOES



Baked Italian Chicken with Potatoes image

Turn every day ingredients into something special! The chicken does not need to be marinated because this recipe makes a wonderful sauce, but if you do then it will be even more tasty. I like to par boil the potatoes because I really love how it sucks up the flavour of the Italian Dressing. But you can skip this step if you prefer to cook it all in the oven - refer to Note 4 for steps.

4 - 5 chicken thigh fillets (, skin on and bone in (about 6oz/200g each))
1/2 tbsp olive oil
1 tin (14oz/400g) crushed tomatoes
1 1/2 cups cherry tomatos
3 (around 1.5lb/ 750g in total) medium size potatoes (, peeled and cut into bite size pieces)
1/2 cup mozzarella cheese (, grated (or any other good melting cheese))
Salt and pepper
1/2 tbsp each dried rosemary and thyme ((OR oregano) leaves (or 2 tbsp fresh))
2 garlic cloves (, minced)
3 tbsp red wine or white wine vinegar ((Note 1))
3 tbsp extra virgin olive oil
1/2 tsp salt
Black pepper
Basil leaves ((optional))

Steps:

  • Preheat oven to 350F/180C.
  • Mix together Italian Dressing ingredients.
  • Boil or microwave the potatoes until slightly undercooked - about 5 minutes boiling / 5 minutes on high in a steamer in the microwave. Use a fork to rough the potatoes up a bit - this allows the potatoes to absorb more of the dressing flavour - and sprinkle with a pinch of salt and pepper.
  • Meanwhile, season the chicken on both sides with salt and pepper. Heat 1/2 tbsp olive oil in large oven proof skillet over high heat.
  • Add chicken and brown well on both sides - around 5 minutes each side.
  • Remove skillet from heat, and pour off the excess fat.
  • Place potatoes around the chicken and pour over the crushed tomatoes. Season with a pinch of salt and pepper and drizzle the Italian Dressing all over.
  • Place cherry tomatoes on top and bake for 25 - 30 minutes or until chicken is cooked through.
  • Remove from oven and sprinkle on cheese, then bake for a further 5 minutes until the cheese is melted and golden.
  • Let stand for 5 to 10 minutes before serving. Garnish with basil leaves if you wish.

2 tablespoons olive oil, divided
1 pound Italian sausage, mild or spicy
1 large yellow onion, cut in half and thinly sliced
3 bell peppers, thinly sliced
2 pound russet potatoes, cut into a small 3/4 inch dice
1 teaspoon kosher salt
Fresh black pepper to taste
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon smoked or regular paprika
1 tablespoon tomato paste
1/2 cup marsala wine
1/2 cup beef broth

Steps:

  • Add 1 tablespoon of olive oil to a large skillet over medium heat. Add the sausages and brown on both sides, cooking through most of the way but not completely. Remove the sausages from the skillet to a plate and cover with foil.
  • Add the other tablespoon of olive oil to the skillet. Add the peppers, onions and diced potatoes and season with the salt, pepper, garlic powder, oregano and paprika. Cook for 10 minutes, stirring often.
  • Stir in the tomato paste and then pour in the marsala wine. Stir and then cover the skillet and cook for another 10 minutes until the potatoes have softened.
  • Slice the Italian sausage into thick rounds and then add them to the skillet along with any juices from the plate.
  • Remove the cover and add the sausages back to the skillet along with the beef broth. Cook, uncovered for another 7-8 minutes until the sausage and potatoes are cooked through.
  • Serve on sub rolls, with or without cheese or on top of your favorite pasta.

1/2 lb ground italian sausage, any flavor
1 medium onion, finely chopped
1 lb red potatoes,sliced thin, about 5 or 6
1/2 c vegetable stock
1 1/2 tsp roasted garlic and herb seasoning
1/2 tsp each black pepper and oregano
1 c tomato sauce
1 c shredded mozzarella cheese

Steps:

  • 1. Heat oven to 400^ Heat a large Cast Iron skillet then add the sausage; cook and scramble until brown. Remove sausage with a slotted spoon to paper towel lined plate to drain; set aside. To the same skillet add the onion and cook until soft. Add the potatoes. Cook and stir gently about 2 to 3 minutes.
  • 2. Mix the vegetable stock, seasoning, pepper, oregano, tomato sauce and sausage in a large bowl..Stir to combine. Pour this mixture over the potatoes in the skillet. Bring to a boil, then cover. Place in the pre-heated oven for 25 to 30 minutes .Until potatoes are tender.
  • 3. Uncover skillet and stir gently. Sprinkle with the cheese.. and return to oven. Bake 1 minute longer or until cheese is melted and potatoes are browned a little. Let cool 10 minutes before serving.

Steps:

  • Peel and chop the potatoes into 1-inch large cubes.
  • In a large pot of lightly salted boiling water, boil the potatoes for about 5 min, until just tender.
  • In the meantime, in a large bowl whisk the eggs until well combined, add in chopped parsley and season with salt and pepper.
  • Drain well the potatoes and add them into the bowl with the eggs. Fold in the cheese (if using) and lightly mix all ingredients.
  • Heat a large non-stick skillet with the olive oil over medium-low heat. Pour in the frittata mixture, making sure to distribute the potatoes evenly over the bottom of the pan.
  • Cover with a lid and cook for about 5-10 minutes, gently shaking the pan every now and then. When the frittata is easily pulled off from the bottom, is ready to be turned. Using a plate with the same diameter of the frittata, carefully put it on top and flip the frittata on the other side.
  • Cook on the other side for a further 2-5 minutes, this time without the lid.
  • When the frittata is fully cooked, remove from the pan and slide it gently onto a serving plate, and serve
  • Store leftovers in an airtight container and refrigerate for up to 2 days.

3 pounds mini new potatoes (halved)
2 tablespoons olive oil

1 ½ teaspoon ground black pepper
10-15 cloves garlic
1 cup dry white wine
1 cup chicken stock
¼ - ½ teaspoon crushed red pepper
¾ cup frozen peas
¼ cup chopped parsley
1 lemon (cut into wedges (optional))

Steps:

  • Preheat the oven to 425 degreeas F. Set an XL cast iron sauté pan (or another deep 14 inch oven-safe pan) over medium heat. Set the frozen peas out at room temperature to soften.
  • In a small bowl, mix the oregano, salt, garlic powder, and pepper. Sprinkle the seasoning blend over the chicken pieces and potatoes.
  • Add 1 tablespoon of olive oil to the skillet. Once the oil is hot, place chicken pieces in the skillet, skin-side-down. Brown the chicken skin for 4-5 minutes, then flip and cook another 4-5 minutes. Move the chicken pieces to a holding plate.
  • Wipe the skillet out with a paper towel (if needed) and add the remaining 2 tablespoons olive oil. Place half the potatoes in the skillet, cut-side-down. Sauté until golden then move to the holding plate. Add the remaining potatoes, cut side down, and sauté until golden.
  • Now add all the potatoes back to the skillet. Add in the garlic cloves and crushed red pepper, mix well. Place the chicken pieces over the potatoes. Then pour in the wine and chicken stock.
  • Place the skillet in the oven for 30 until, until the chicken is crispy on top and cooked through, and the potatoes are soft.
  • Once the skillet comes out of the oven, sprinkle in the peas and parsley. (The peas will warm quickly.) Serve the baked chicken and potatoes with a good portion of wine sauce, and lemon wedges if desired.

1½ pounds any type potato (Russet, new red, yellow, all purpose, etc.)
2 tablespoons olive oil
1½ pounds Italian sweet sausage, cut into thick slices on the bias
1 pound onion, sliced into thick slices
2 large green peppers, cut into thick strips
¼ cup chicken or vegetable stock
3 tablespoons butter
1 teaspoon seasoned salt
½ teaspoon garlic powder
½ teaspoon dry oregano
¼ teaspoon paprika

Steps:

  • In a large skillet with a tight fitting lid, fill half full of water.
  • Peel potatoes (if using small new red potatoes, no need to peel) and cut into wedges about the same size as a steak fry. Place in water as you cut. Place pan on stove, and bring to a boil, then cover and lower to a medium boil and boil for five minutes. Potato wedges should still have a good bite. They will be cooked again later. With a strainer, remove to a plate. Discard water.
  • Wipe out the pan and add the olive oil. Heat over medium high and add the sausage pieces. Brown on both sides, then reduce heat and continue to cook and turn until they are cooked through. Remove to a medium bowl.
  • Add onions and peppers and sauté for about 8-10 minutes or until the peppers just start to lose their crunch. Add the stock and stir to loosen up any brown bits from the pan. Pour this mixture in the bowl with the sausages.
  • Add butter to pan and add seasoned salt, garlic powder, oregano and paprika. Place drained partially cooked potatoes in butter mixture and toss lightly to coat both sides then cook until potatoes are browned and cooked through, turning occasionally to brown both sides.
  • Add the sausage, peppers and onions back with the potatoes and stir lightly without breaking up the potatoes and serve.
