1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup mashed very ripe bananas (2 to 3 medium)
3 egg whites
1/4 cup canola oil
1/4 cup fat-free (skim) milk
1 teaspoon vanilla
1/3 cup miniature semisweet chocolate chips
1 tablespoon sugar
1/8 teaspoon ground cinnamon

Steps:

  • Heat oven to 375°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray, or line with paper baking cups.
  • In large bowl, mix flour, 2/3 cup sugar, baking powder, baking soda, 1/2 teaspoon cinnamon and salt.
  • In medium bowl, beat bananas, egg whites, oil, milk and vanilla with fork until smooth. Stir into flour mixture just until flour is moistened. Gently stir in chocolate chips. Divide batter evenly among muffin cups.
  • In small bowl, mix topping ingredients. Sprinkle evenly over batter in cups.
  • Bake 20 to 24 minutes or until light golden brown and toothpick inserted in center comes out clean. Immediately remove muffins from pan to cooling rack.

2 cups white whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2/3 cup vegetable oil
1/4 cup Wholesome Organic Stevia
2 large eggs
1 tablespoon vanilla extract
3 ripe bananas, mashed
3/4 cup mini chocolate chips, divided

Steps:

  • Preheat oven to 350 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside. In a large bowl, combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon. In a large glass measuring cup or another bowl, whisk together vegetable oil, Wholesome Organic Stevia, eggs and vanilla. Fold in bananas until just combined. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add 1/2 cup chocolate chips and gently toss to combine. Scoop the batter evenly into the muffin tray. Sprinkle with remaining 1/4 cup chocolate chips. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean. Remove from oven and cool on a wire rack.

⅓ cup white sugar
2 tablespoons Dutch process cocoa powder
1 tablespoon baking powder
1 cup mashed bananas
⅔ cup canola oil
1 egg, beaten
1 cup semi-sweet chocolate chips

Steps:

  • In a large bowl combine the flour, sugar, cocoa powder and baking powder.
  • In another bowl, blend the bananas, oil and egg together. Add to dry ingredients, mixing just until blended. Fold in the chocolate chips. Spoon the batter into a greased muffin pan, filling three-fourths full.
  • Bake in a preheated 425 degree F(220 degrees C) for 15 to 20 minutes. Remove the muffins to a wire rack to cool completely.

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 -3 tablespoons chocolate chips
2 tablespoons chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
  • In large bowl, mash bananas with fork.
  • Whisk in egg, milk, granulated sugar, and brown sugar.
  • In separate bowl, combine flour, baking soda, and salt.
  • Add flour mixture to banana mixture and combine well.

3 ripe bananas, mashed
¾ cup chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray or line with paper liners.
  • Beat sugar, butter, flax seed, vanilla, and eggs together in a bowl with an electric mixer until smooth and creamy.
  • Sift flour, salt, and baking soda together in a separate bowl. Mix creamed sugar mixture, 1/2 cup at a time, into the flour mixture until fully incorporated and batter is stiff. Beat bananas into batter with an electric mixer on low. Fold chocolate chips and walnuts into batter; spoon into the prepared muffin cups, filling each cup 3/4 full.

3/4 cup mashed ripe bananas (1 to 2 medium)

Steps:
