GARLIC-BASIL TOMATOES WITH MOZZARELLA
This salad is the perfect showcase for your fresh garden tomatoes and basil!

- Place tomatoes in glass or plastic dish.
- Shake remaining ingredients except cheese and salad greens in tightly covered container. Pour over tomatoes. Cover and refrigerate at least 3 hours to blend flavors, turning occasionally.
- Layer cheese alternately with tomatoes on salad greens.

- In a small skillet, saute garlic in oil for 1 minute. Add bread crumbs; cook and stir until lightly browned. Remove from the heat., Cut tomatoes in half widthwise. Place cut side up in an 8-in. square baking dish. Sprinkle with basil and pepper; top with bread crumb mixture. Bake at 325° for 15-20 minutes or until tomatoes are slightly softened.

SLICED TOMATOES WITH MINTED OLIVE OIL AND BASIL
A lovely summer dish. Be sure to make the oil several hours ahead.

- Bring medium saucepan of water to boil. Add 1 cup packed mint and blanch 20 seconds. Drain. Transfer leaves to processor and blend well. With machine running, add oil through feed tube and blend until smooth. Season with salt and pepper. Let stand 3 hours at room temperature. (Can be made up to 3 days ahead. Cover minted oil and refrigerate. Bring to room temperature before using.)
- Arrange tomato slices on platter; sprinkle sugar, then basil over slices. Drizzle 2 to 3 tablespoons minted oil atop tomatoes. Season with salt and pepper. Garnish with additional mint leaves.

- Cut corn kernels off cob directly into a bowl, and toss with vinegar. Heat oil in a saute pan over medium-high heat until hot, and add corn mixture. Season with sea salt and pepper. Cook, stirring about 2 minutes or until corn is slightly steamed. Remove from heat, and stir in half the basil.
- Arrange heirloom tomato slices on a platter. Add cherry/grape tomatoes, and top with corn mixture. Drizzle with Rice Wine Vinaigrette with herbs, and top with remaining basil.
