Slow Cooker White Bean Ranch Dip

Steps:
- Add beans to 3-quart slow cooker, fill with enough water to cover the beans by at least an inch, then add in the garlic. Cover slow cooker and cook on low for about 8 hours or on high for 4 hours, or until beans are very soft.
- Drain beans, reserving the liquid, and place in a blender, along with dips mix, olive oil, dill and salt and pepper, and blend until creamy. If desired, add some of the reserved liquid, about ¼ cup at a time, and continue blending until dip is desired consistency.
- Serve with crackers, vegetables or chips.NOTE: 2 (8 ounce) cans of white beans, drained (liquid reserved), can be substituted for the dried beans and garlic. If canned beans are used, skip Step 1 in the instructions.

SLOW COOKER NORTHERN WHITE BEAN
White beans are cooked in a slow cooker with smoked neck bones, aromatic vegetables, seasonings, and chicken broth. This recipe can be used for cooking most any dried bean in the slow cooker. Adjust liquid when cooking tougher skin beans (such as pinto beans). Add garlic and onion powder to taste, if desired.

Steps:
- Place beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
- Place neck bones in a slow cooker and pour chicken broth over the top; stir in soul seasoning.
- Cook on High until meat is falling off the bones, about 1 hour. Transfer bones and meat to a plate and shred meat from bones; discard bones.
- Stir beans, onion, vinegar, sugar, and hot sauce into slow cooker; spread shredded meat over beans.
- Cook on High for 2 to 4 hours (or cook on Low for 4 to 6 hours).

Steps:
- Brown meat and drain - add to crockpot.
- Drain contents of all cans and add to crockpot.
- Add 2 packets of seasoning - taco and ranch.
- Cook on low or high until beans are soft'ish.
- Serve with chips, sprinkle with cheese and sour cream.
- I've added a bunch of different things in the past --
- 1 4oz can green chiles.
- Black beans.
- jalapenos.
- I've added cheese to the dip before serving to melt into dip.
- White beans.
- Anything else!

WHITE BEAN RANCH DIP
I created this dip last night. My kids love ranch dip with carrots and I wanted to lower the fat and add some additional nutritional value. It turned out great--I am having the leftovers for lunch today. I used Chick peas, but I would think any white bean would work. Next time I will probably do a homemade ranch dip mix to reduce the sodium.

- Drain beans and place in food processor. Process until very smooth.
- Add sour cream and dip mix. Process until well mixed.
- Refrigerate for at least 1 hour.
