Steps:
- Sprinkle gelatin over milk in a small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin dissolves (about 2 minutes). Set aside.
- Beat cream cheese and Splenda granular at medium speed with an electric mixer until smooth. Gradually add sour cream, lime juice, lime peel and rum extract, beating until smooth.
- Gradually add gelatin mixture, beating until blended.
- Chill 30 minutes or until mixture begins to thicken, stirring frequently.
- Stir mango into gelatin mixture; spoon into pie crust.
- Chill 2 hours or until set.
- Garnish with mint sprigs and mango slices.

- Mix cookie crumbs and butter; press onto bottom and up side of 9-inch pie plate.
- Bring 1 cup water to boil. Add to combined dry gelatin mix and mint in small bowl; stir 2 min. until gelatin is completely dissolved. Cover bowl tightly with plastic wrap; let stand 5 min. Stir in remaining water. Pour through strainer into medium bowl; discard mint leaves. Refrigerate gelatin 15 min. or until slightly thickened.
- Add COOL WHIP to gelatin; stir with whisk until blended. Refrigerate 15 min. or until mixture is thick enough to mound. Spoon into crust. Melt chocolate as directed on package; drizzle over pie. Refrigerate 2 hours or until firm.

- Arrange 36 wafers on bottom and up side of 9-inch pie plate. Drizzle 2 Tbsp. coffee over wafers on bottom of pie plate.
- Beat Neufchatel in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat 1 min. Gently stir in 2 cups COOL WHIP.
- Spread 1/2 the pudding mixture over wafers on bottom of pie plate; sprinkle with 1/2 the chocolate. Cover with remaining wafers; drizzle with remaining coffee. Top with remaining pudding mixture, chocolate and COOL WHIP.
- Refrigerate 3 hrs. or until firm.
