Lemony Sauteed Collard Greens with Smoked Paprika image

This is a tasty way to use collard greens. The smoked paprika really lends a lot of flavor to this yummy side dish, so it's best not to substitute regular paprika. Makes a great side for any Southern-themed meal, especially for vegetarians!

1 ½ pounds collard greens
1 tablespoon olive oil
1 small yellow onion, thinly sliced
2 cloves garlic, minced
2 tablespoons lemon juice
1 teaspoon smoked paprika
salt and ground black pepper to taste

Steps:

  • Trim the ends off of the collard greens where the stem is thickest. Stack leaves on top of each other and roll together. Cut greens into 1-inch pieces and rinse.
  • Heat oil in a skillet over medium heat. Add onion and cook until it begins to soften, about 5 minutes. Add garlic and cook for 5 minutes more. Add greens and saute over medium heat, stirring frequently, until tender, about 15 minutes. Stir in lemon juice, paprika, salt, and pepper; cook for 3 minutes more. Serve warm.

1 teaspoon garlic powder
½ teaspoon salt

4 (6 ounce) tilapia fillets
cooking spray

Steps:

  • Combine olive oil, paprika, garlic powder, salt, and black pepper in a small bowl; stir well. Brush oil mixture evenly over tilapia fillets.
  • Heat a large nonstick grill pan over medium-high heat; grease with cooking spray. Grill fish until it flakes easily with a fork, about 4 minutes per side.

Soft slivers of garlic and shallots and a dash of smoked paprika give this verdant side dish its complexity and charm. You can make it with any greens you have on hand. Softer spinach and chard make for a silkier dish, while sturdy kale and collard greens give it more heft. Just adjust the cooking time as needed to make sure your greens are thoroughly tender.

1 1/2 tablespoons extra-virgin olive oil
1 large shallot, thinly sliced
1 large garlic clove, thinly sliced
Kosher salt and black pepper
1/4 teaspoon smoked paprika
1 small bunch greens, such as kale, chard, spinach or mustard greens, torn into bite-size pieces (about 6 cups)
1/4 cup turkey, chicken or vegetable broth, or use water, plus more as needed
Lemon wedges, for serving (optional)

Steps:

  • Place a large skillet over medium-high heat. Add the oil and let it heat up for about 20 seconds. It will thin out to coat the pan. Stir in shallot slices and garlic, and cook until pale golden at the edges and softened, about 2 minutes. Add a big pinch of salt and the paprika. Give everything a stir.
  • Add the greens to the pan, using tongs to toss everything well. Add broth, and let greens simmer, until very soft, about 3 minutes for tender greens, and up to 15 minutes for tougher, mature greens. If the greens still seem tough but the pan is dry, splash in a little water and let cook for another few minutes.
  • Taste and adjust seasoning, if needed. Squeeze on a little lemon juice, if you like, then serve hot or warm.

  • To prepare polenta, bring milk to a boil in a medium saucepan; gradually add polenta, stirring constantly with a whisk. Reduce heat, and cook 5 minutes or until thick, stirring constantly; stir in 1/4 teaspoon salt. Remove from heat. Stir in cheese; cover and keep warm.

After extreme frustration at the lack of stock and high prices of smoked paprika I took matters into my own hands. This works like a charm, and you end up with 18 oz, or 1.22 pounds of the stuff. I used 3.5 oz of Wright's Hickory Liquid Smoke at a $1.29 a bottle, and Spanish Style Paprika, $4.29 for 18 oz.

1 (3 1/2 ounce) bottle liquid smoke, hickory
1 (18 ounce) bottle spanish paprika

Steps:

  • In a large bowl slowly whisk together the paprika and liquid smoke.
  • When totaly incorporated-NO lumps-spread out on a foil lined cookie sheet to dry overnight.
  • Or.
  • Line a deep sided metal pan with foil and when your done grilling place in grill on top grates for about 2 hours-this is what I did and wow-amazing smell! I used a whisk to stir every 30 minutes.
  • When completly dry/cool place in food processor-small batches and pulse to remove any small clumps.
  • Pour back into your Paprika bottle, use at will.
  • 24 hour "cooking time" is the max dry time you will need-depending on the humidity in your house.

4 (3- to 5-ounce) thin fish fillets, such as flounder, tilapia, or grouper
1/4 cup freshly grated Parmesan cheese
1 teaspoon smoked paprika (regular paprika can be substituted)
Pinch of cayenne pepper
4 tablespoons unsalted butter
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper, to taste
Lemon wedges, for garnish
For the greens:
1 to 2 large garlic cloves, minced
1/ 4 teaspoon red pepper flakes
2 bunches chard, or other leafy greens like collards or kale, washed and sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
1 to 2 tablespoons red wine vinegar

Steps:

  • Turn oven on broil. Generously season tops of fish with salt and pepper. Combine Parmesan, paprika, and cayenne in a small bowl. Melt 3 tablespoons of butter in a large cast iron skillet over medium heat until gently bubbling. Place the fish in the pan and cook for 3 minutes. Using a fish spatula, carefully turn the fillets over and sprinkle with Parmesan cheese mixture. Place skillet under the broiler and continue cooking until fish is bubbling and golden, 2 to 3 minutes. Transfer the fish to a warm plate and cover with foil. Return the skillet to the stovetop over medium heat and whisk in lemon juice. Taste and adjust seasoning. Pour off all but 1 tablespoon into a small serving bowl. To cook the chard, add the garlic and red pepper flakes to the leftover butter sauce in the skillet, and cook over medium heat for about 30 seconds. Add the sliced chard, salt, and pepper. Increase heat to high and sauté until just beginning to soften, 3 to 5 minutes. Stir in the red wine vinegar and salt and pepper to taste. Serve fish and greens with brown butter sauce, lemon wedges and additional Parmesan on the side.
