CREAMY TOMATO-SMOKED SALMON PASTA
Steps:
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, melt butter and olive oil in a pot over medium heat and cook shallots until soft and translucent, about 5 minutes. Add tomatoes and 1/2 the juice. Season with Italian herbs, salt, and white pepper. Cover pot and simmer for 10 minutes. Remove pot from heat and puree contents using a stick blender until smooth. Stir in cream.
- Return pot to stove and bring to a boil. Add white wine, smoked salmon, and sherry. Season with salt, white pepper, and basil and heat until warmed through but do not boil.
- Serve spaghetti with tomato-smoked salmon sauce and freshly grated Parmesan cheese.

- First, cook spaghetti according to the package instructions.
- Chop garlic and onions very fine and cook in the the skillet over medium heat for 5 minutes. until very fragrant.
- Cube salmon fillet, slice mushrooms and add to the skillet. cook for additional 5-7 minutes, add salt and pepper
- Meanwhile, mix goat cheese and milk in a little bowl with the fork. You want to melt goat cheese as much as possible.
- Turn the heat off. Add cheese mixture to the skillet, stirring constantly.
- Drain your noodles and add to the skillet. Mix together and serve. Garnish with chopped green onions and cherry tomatoes.

MARINATED GRILLED SALMON WITH TOMATO, BASIL, AND GOAT CHEESE
The is a recipe I've developed over the years. I use it on other fish than just Salmon, because not everyone in my family likes Salmon. Any fish will work, just make sure you have a nice sized steak. It is very flavorful and a little different than just another fish on the grill. It is definitely a MUST-TRY! Enjoy.

- Mix first 10 ingredients in bowl.
- Pour marinade into large freezer bag.
- Marinate fish at least 20 minutes with bag sealed at room temperature.
- Thinly slice the tomato and sprinkle with salt and pepper.
- Place fish on hot grill. Add salt and pepper to taste. (Fresh ground is preferred).
- As the fish cooks (3-5 minutes per side), use a brush and mop the marinade onto fish.
- Turn salmon a quarter (90 degrees) after a quarter of the way through cooking. (This will give it nice grill cross hatch marks).
- Flip fish half way though cooking. Add salt and pepper to taste to this side as well.
- Continue to baste the fish with marinade. (Try to use all if possible).
- Turn fish another 90 degrees after 3/4 done cooking.
- Before fish is completely cooked, top it with thinly sliced tomato. Top tomato with fresh basil. Top basil with crumbled goat cheese. Shut the grill for a minute or two before taking fish off. Let rest a few minutes and enjoy!
- Feel free to make the marinade to taste. It should be sweet, and salty, and sour. I did not measure anything out when making this dish. I simply tasted it a few times until it was balanced the way I liked it.

- First, start your balsamic reduction by combining balsamic vinegar and sugar in small pot over medium low heat.
- Let cook until reduced for 20-25 minutes. It will be thickened and syrupy when finished.
- Meanwhile, preheat oven to 425 degrees F.
- Bring pot of water to boiling and cook pasta according to package.
- While water is heating up and oven is preheating, combine tomatos, olive oil, 2 tablespoons balsamic vinegar, garlic, and salt. Toss to combine.
- Place on baking sheet (I lined mine with aluminum foil), and roast in preheated oven for 12-15 minutes, until tomatoes start to soften and break down.
- Once tomatoes and pasta are cooked, toss them together, along with the remaining 2 tablespoons of balsamic vinegar and basil.
- Add goat cheese and toss gently.
- Finish off with balsamic reduction drizzle.
