SOUTHERN CHICKEN CURRY

4 tbsp corn oil
2 med onions (thinly sliced)
2 small jalapénos (halved lengthwise & seeded)
2 to 3 cloves garlic (finely chopped)
1-2 inch piece fresh ginger (thinly sliced)
4 to 5 tbsp fresh lemon juice (from 2 lemons)
1 3/4 lb boneless (skinless chicken breasts, cut into 1 1/2 in pieces)
1/2 tsp cayenne pepper
1/2 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp mustard seeds
1 tsp kosher salt
2 ripe yellow peaches (skinned) (roughly chopped)
1/2 cup canned unsweetened coconut milk
1/2 cup plain yogurt & Indian flat bread or pita (optional)

Steps:

  • Heat 2 tbsp oil in large skillet on medium heat.
  • Cook onions in skillet for 5 min. Add jalapénos, garlic, ginger & 4 tbsp lemon juice & cook 5 min. more.
  • Transfer to plate. Add 2 tbsp oil to skillet on high heat & add chicken & cook until golden.
  • Add cayenne, coriander, cumin, mustard seeds , salt & pepper; cook 2 min. more.
  • Add peaches, onion mix. & 1/2 cup water & simmer 8 min. Add coconut milk, reduce heat & simmer gently 2 min.
  • Add remaining lemon juice if necessary.
  • Serve w/yogurt, rice or flatbread.

South Indian Chicken Curry image

The southwestern part of India known as Kerala, where I was raised, is endowed with lush, tropical growth year-round-coconut trees along the coast and, at higher elevations, an abundance of herbs and spices. So it's no wonder that in this region, highly spiced curries flavored with coconut milk are an important part of every dinner. If you don't have time to make your own fresh Curry Spice Mix, you can substitute a store-bought garam masala or curry powder.

1 Tbs. vegetable or canola oil
1/2 tsp. black mustard seeds
3 medium onions, sliced thin
Stems from 3 sprigs fresh cilantro, chopped, plus 1/4 cup loosely packed cilantro leaves
1 clove garlic, minced
1-inch piece of ginger, minced
3 potatoes, diced into 1/2-inch cubes
2 green peppers
2 lbs. chicken thighs, skinned
2 to 3 Tbs. South Indian Curry Spice Mix
2 cups fresh Coconut Milk (1 cup thick, 1 cup thin)
Kosher salt
Cooked long-grain rice, for serving

Steps:

  • In a large pot, heat oil over medium heat until it is very hot. Add mustard seeds and let them sizzle for about 1 minute. Add the garlic, ginger, sliced onion, and cilantro stems, and cook for 5 minutes, stirring frequently. Add the ground spice mix and continue cooking for 6 to 8 minutes until the onions are very soft, stirring often so that the onions cook evenly.
  • When the onions and peppers are soft and have absorbed the spices, start adding the chicken, a little at a time. Stir the pieces until they're coated with the spices, and then add more chicken. When all the chicken has been stirred in, pour the thin coconut milk over the chicken, add the salt and the potatoes, reduce the heat to medium low, cover and simmer until the chicken is cooked and the potatoes are tender, about 40 minutes. To soften the flavor of the spices, and to make a creamy sauce, the author simmers the chicken for her curry in coconut milk.
  • Remove the cover from the pot and bring the liquid to a boil. Boil for 3 to 5 minutes, until the sauce is thickened. Then add the thick coconut milk and the cilantro leaves. Return liquid to a simmer, season to taste with salt, and serve with rice.

My sister-in-law works at a Southern restaurant in Mississippi, and surprisingly they have chicken curry on the menu. She got the recipe from the owner, and it's become one of my favorite chicken curry recipes. There's nothing Southern-tasting about it, but you'll be licking the flavorful sauce off of the plate. Try to use a high-quality curry powder, as it really makes a difference. I also like serving this with shredded coconut and chopped green onions.

2 tablespoons unsalted butter
1/4 cup onion, minced
2 tablespoons curry powder
3 tablespoons flour
3/4 teaspoon salt
1 teaspoon brown sugar

1 lb skinless chicken breast, diced

Steps:

  • In a saucepan, melt butter and saute onion with curry over low heat.
  • Blend in flour, salt, brown sugar, ginger, and chicken. Keep cooking for 5 minutes, stirring constantly.
  • Add broth, stir and bring to a boil. Cover, and simmer over low heat for 15 minutes.
  • Add milk and lemon juice, and stir constantly for 1 minute, or until warm & ready to serve.

1 1/2 pounds chicken, boneless and skinless
2 teaspoons cumin
4 teaspoons flour
2 tablespoons oil
1 cup chicken stock
1 tablespoon butter
1 cup frozen peas, thawed
1 medium onion, chopped
2 carrots, peeled and sliced on diagonal
1/4 cup heavy cream
Salt and pepper, to taste
1 1/2 tablespoons curry powder
1 teaspoon cinnamon

Steps:

  • Cut chicken into 1 inch cubes. In large skillet saute chicken in oil and butter until golden brown. Remove to plate and cover with tin foil. In same skillet add onion and saute until soft. Add carrots and stir. Add curry, cinnamon and cumin. Stir to coat. Add flour, stir, and let cook for 30 seconds. Add stock and stir until thick. Return chicken to the skillet and simmer until carrots are tender, about 20 minutes. Add peas and cream. Stir well and cook until hot. Season with salt and pepper. Serve over rice
  • For the rice: Cook Basmati rice according to package directions

8 skinless, bone-in chicken thighs and drumsticks (4 of each; about 3 pounds total)
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
4 green cardamom pods
1 1-inch piece cinnamon stick
1 whole clove
2 onions, thinly sliced
1 tablespoon grated fresh ginger
4 cloves garlic, grated
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 teaspoon Kashmiri chili powder or hot paprika
1/2 teaspoon ground turmeric
3 small plum tomatoes, diced
1 pound Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
Cooked basmati rice, for serving
Chopped fresh cilantro, for topping

Steps:

  • Season the chicken all over with salt and pepper. Heat 2 tablespoons vegetable oil in a large Dutch oven over high heat. Add the chicken in a single layer and brown 3 to 4 minutes per side. Remove to a plate.
  • Reduce the heat to medium high and add the remaining 2 tablespoons vegetable oil to the pot along with the cardamom pods, cinnamon stick and clove. Cook, stirring, until the whole spices are toasted, about 20 seconds.
  • Add the onions, season with 1/2 teaspoon salt and cook, stirring, until soft and browned, 8 to 10 minutes. Add the ginger and garlic and cook, stirring, until golden, about 2 minutes. Add the coriander, cumin, chili powder and turmeric; cook, stirring and scraping the pan, until the ground spices are toasted, about 30 seconds.
  • Add the tomatoes and cook, stirring, until they break down, 4 to 5 minutes. Return the chicken and any juices to the pot. Stir in 1 1/4 cups water and bring to a boil. Reduce the heat to medium low, cover and simmer until the chicken is almost cooked through and the sauce has thickened slightly, about 12 minutes.
  • Tuck the potatoes among the chicken pieces, submerging them as much as possible; season with 1/2 teaspoon salt. Cover and simmer until the chicken is tender and the potatoes are just cooked through, 18 to 20 minutes. Uncover and simmer, turning the potatoes, until the curry is thickened, 8 to 10 minutes.
  • Thin the curry with water, if necessary; season with salt. Serve with rice and top with cilantro.

I served this at a dinner party and it was very popular. Do not expect heat or intensity or even subtlety. Instead you will have a rather heady, aromatic dish. Service with rice or rice vermicelli.

2 medium potatoes, cut into chunks
vegetable oil (for frying)
8 shallots, finely chopped
4 stalks fresh lemongrass, finely chopped
2 cloves garlic, finely chopped
2 fresh red chilies, finely chopped
2 tablespoons mild indian curry powder
450 g skinless chicken breasts, chopped into bite-sized pieces
1 teaspoon sea salt
300 ml coconut milk
600 ml chicken stock
fresh Thai basil (optional)

Steps:

  • Shallow-fry the potato pieces in hot oil until lightly browned.
  • Drain on kitchen paper and set aside.
  • Heat a little oil in a pan and saute the shallots with the lemon grass, garlic and chillies until soft.
  • Add the curry powder and stir for 2 minutes.
  • Add the chicken and cook, stirring until it is opaque.
  • Add the potatoes, salt, coconut milk and chicken stock.
  • Bring to the boil, then cover and simmer gently for about 30 minutes.
  • Garnish with Thai basil leaves, if using.

My version of chicken curry, inspired by Malaysian and Indian curries. I decided to keep this here to save the ingredients for personal purposes, but there's no harm in sharing it to others, so feel free to use.

3 tablespoons ground cinnamon
3 tablespoons ground turmeric
1 tablespoon garam masala
1 tablespoon paprika
½ teaspoon grated ginger, or to taste
4 bay leaves
2 whole star anise pods
2 cardamom pods
1 cinnamon stick
1 kaffir lime leaf
⅛ red chile pepper, sliced
2 (8 ounce) containers plain yogurt (such as Nestle®), divided
4 ½ tablespoons fish sauce (patis), divided
10 chicken leg quarters
1 tablespoon olive oil, or as needed
1 tablespoon minced onion, or to taste
1 clove garlic, minced, or to taste
1 cube chicken bouillon
2 cups water
1 tablespoon white sugar, or to taste
1 (6.5 ounce) can Filipino-style tomato sauce
1 tablespoon butter

Steps:

  • Mix ground cinnamon, turmeric, garam masala, paprika, ginger, bay leaves, star anise, cardamom, cinnamon stick, kaffir leaf, and chile pepper together in a bowl.
  • Mix 1/2 of 1 yogurt container with 2 tablespoons of spice mixture and 1 tablespoon fish sauce in a bowl. Make deep cuts into the chicken thighs to allow sauce to penetrate. Coat chicken with yogurt mixture and marinate in the refrigerator for at least 5 hours.
  • Heat oil in a pot over medium-high heat. Stir-fry onion and garlic in the hot pot for 30 seconds; add remaining spice mixture and continue to stir-fry, 30 seconds more. Add chicken to the pan and fry until spices around chicken have darkened, 2 to 4 minutes. Add marinade and bring to a boil over high heat; continue to boil, covered, for 2 minutes.
  • Dissolve bouillon in water and add to the pot. Add remaining yogurt, remaining fish sauce, and sugar. Boil chicken in sauce until nearly cooked through, about 10 minutes.
  • Add tomato sauce; boil until chicken is no longer pink in the centers and sauce has completely thickened, 5 to 10 minutes. Melt butter into mixture and cover. Turn off heat and let dish rest to let chicken absorb sauce, about 30 minutes.

KUA KLING (SOUTHERN THAI-STYLE RED CURRY)

Whereas larb is bright and acidic - light on its feet - this simple adaptation of a traditional Southern Thai dry red curry, is grounding and spicy. It owes much of its flavor to red curry paste, turmeric and fresh chile that have been toasted until they shake awake. For scorching heat (a curry like this is typically brutally hot), add more chile. As the chicken - though it could be ground pork, sliced beef or chicken, or mushrooms - cooks, its fat renders and the fired-up curry paste adheres. Season it with brown sugar and fish sauce, and serve with rice, cabbage, herbs, avocado, cucumber and-or a crisp fried egg.

Steps:

  • Add the chicken and cook, breaking the meat up with a spoon. Stir to coat the meat in the curry paste and to prevent sticking, and cook until the chicken is opaque, 7 to 10 minutes. If everything is sticking, don't panic - just add a little water or neutral oil.
  • Stir in the brown sugar, fish sauce and lime zest, and cook just until the liquid's been absorbed, about 1 minute. Season to taste with more brown sugar and fish sauce. (The chicken should be spicy first, salty second.) Serve at once with desired toppings.
