CRANBERRY ORANGE OATMEAL COOKIES
The subtle taste of orange is an unexpected, but delightful surprise in these oatmeal and dried cranberry cookies.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla, orange zest and orange extract. Combine the flour, baking soda and cinnamon; stir into the butter mixture. Stir in the oats and cranberries. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, or until golden brown. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

- In another bowl mix flour, baking powder and salt.
- Add butter mixture and beat on low speed for about 5 minutes.
- Stir in cranberries and coconut.
- Shape dough into 1-inch balls and place 2 inches apart on buttered baking sheets.
- Bake in a 350° oven for 8 minutes.
- Remove from oven and let cookies cool on sheets for 5 minutes.

- In a large bowl, with a mixer on medium speed, beat 1½ cups butter, sugar, orange peel, and vanilla until smooth. Beat in egg, until well blended.
- In a medium bowl, mix flour, baking powder, and salt. Add to butter mixture, stir to mix, then beat on low speed until dough comes together, about 5 minutes (see notes). Mix in cranberries and coconut.
- Shape dough into 1-inch balls and place about 2 inches apart on buttered 12" x 15" baking sheets.
- Bake in a 350°F regular or convection oven until cookie edges just begin to brown, 11 to 15 minutes (shorter baking time will yield a chewier cookie; longer baking time will yield a crispier cookie). If baking two sheets at once in one oven, switch their positions halfway through baking. Let cookies cool on sheets for 5 minutes, then use a wide spatula to transfer to racks to cool completely.
- NOTES: The mixture may look dry until it comes together as a dough. If its too crumbly to form into balls, the dough need to be mixed longer; it should be a smooth homogeneous mass.

SPARKLY ORANGE COCONUT CRANBERRY CHEWIES
Awesome Christmas cookie with all the sweet tastes of winter in one beautiful little bite, and rolling the dough in granulated sugar before baking gives them the sparkly effect.

- Heat Oven to 350
- Combine shortening and sugar in large bowl. Beat at medium speed with electric mixer until well blended. Beat in eggs one at a time, then add the zest and orange juice mixing until well blended.
- In separate bowl combine flour, baking powder, and salt. I like to mix this mixture with a wire whisk to even out all the ingredients throughout the bowl. Proceed to add the mixture while mixing 1 cup at a time until all dry ingredients have been incorporated into the cookie dough.
- Now add the coconut and cranberries to the dough. I like to use my hands or a rubber spatula works almost as well. Now take rounded teaspoonfuls and roll in granulated sugar and place on a parchment paper lined cookie sheet. I can usually fit about 20 on mine depending on the size I decide to make.
- Bake at 350 for 14-16 mins or until the bottoms are lightly browned. Cool on the cookie sheet before transferring to cooling rack or paper towels. These would be great with hot mulled cider or any kind of hot tea.
