Provided by Samantha

Categories     Main Course

Time 30m

Number Of Ingredients 7

1 lbs prepared pizza dough (or 2 large pre-made pizza shells)
200 ml pizza sauce
85 grams San Daniele Prosciutto (1 package)
200 grams grated mozzarella
110 grams fresh mozzarella, torn into large pieces
6 medium fresh basil leaves, thinly sliced
2 tbsp semolina flour or corse cornmeal (for sprinkling on pizza stone or tray)

Steps:

  • Remove pizza dough from fridge if using fresh pizza and preheat oven or BBQ to 475° F with 2 pizza stones or baking trays upside down on middle rack in oven.
  • Prepare fresh pizza dough as per package (or roll out into 2 pizza shapes of your choice on a floured surface).
  • Sprinkle semolina flour on preheated pizza stones or baking trays (keep trays upside down) and place pizza dough on top. Bake/grill fresh pizza dough for approximately 3 minutes (skip this step if using pre-made pizza shells).
  • Remove stones or baking trays from oven/grill and top pizza dough/shells with pizza sauce, grated mozzarella cheese, prosciutto, fresh mozzarella (tucked in between prosciutto), and sprinkle basil on top. Bake/grill** for 7-12 minutes or until dough is cooked through, cheese is nicely browned on top, and prosciutto looks crispy.

SPELT CRUST PIZZA WITH FENNEL, PROSCIUTTO, AND APPLES

Spelt Crust Pizza with Fennel, Prosciutto, and Apples image

Categories     Appetizer     Picnic     Dinner     Ricotta     Apple     Cornmeal     Fennel     Fall     Spring     Shower     Prosciutto     Party     Potluck     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 2 pizzas, to serve 4 to 6 as a main course, or 8 as a starter

Number Of Ingredients 19

Spelt Crust
2 cups whole grain spelt flour (8 ounces)
2 teaspoons baking powder
3/4 teaspoon fine sea salt
1/2 teaspoon sugar
1 cup whole-milk ricotta cheese
1/4 cup whole milk
2 tablespoons linseed oil or extra-virgin olive oil
1 large egg
Coarse cornmeal, if using a pizza peel
Toppings
4 or 5 green onions
1 cup sour cream
1/4 cup drained nonpareil capers
3/4 teaspoon freshly ground black pepper
1 Granny Smith apple, halved, cored, and sliced very thinly
1 fennel bulb, halved lengthwise, cored, and sliced very thinly
4 ounces thinly sliced prosciutto, cut crosswise into 1/2-inch-wide strips
Linseed or extra-virgin olive oil, for brushing

Steps:

  • 1 First, make the dough. To prepare the dough by hand: Whisk together the spelt flour, baking powder, salt, and sugar in a large bowl. Make a well in the center. In a small bowl, combine the ricotta, milk, linseed oil, and the egg and beat with a fork until smooth. Pour the ricotta mixture into the well. Combine with a dough whisk or a fork, stirring from the center and gradually incorporating the flour from the sides until a fairly moist dough comes together. To prepare the dough by food processor: Place the spelt flour, baking powder, salt, and sugar in the bowl and process for about 10 seconds. In a small bowl, combine the ricotta, milk, linseed oil, and the egg and beat with a fork until smooth. Pour the ricotta mixture across the top of the flour mixture and pulse, in 1-second intervals, just until a ball forms, 5 to 10 pulses. The dough will be fairly moist.
  • 2 Transfer the dough to a well-floured work surface. Lightly flour your hands and briefly knead 5 to 7 turns to get a smooth yet slightly tacky dough. Wrap the dough in plastic wrap and let sit at room temperature for 30 to 45 minutes to allow the bran in the flour to soften.
  • 3 Meanwhile, place a baking stone on a rack on the bottom shelf and preheat oven to 425°F. Liberally sprinkle a pizza peel with coarse cornmeal. Finely chop the white and light green parts of the green onions until you have 1/2 cup. Combine them with the sour cream, capers, and 1/4 teaspoon of the pepper in a small bowl. Finely chop the dark green parts as well (about 1/4 cup) and set aside for garnish.
  • 4 Unwrap the dough, transfer to a lightly floured work surface and cut into 2 pieces. Keep 1 piece covered with plastic wrap. Lightly flour your hands and briefly knead the other until smooth, 7 to 10 turns. Using a rolling pin, roll the dough into an elongated pizza, 11 by 8 inches and about 1/4 inch thick. Do this in stages, occasionally turning the dough over and rolling it out further, lightly flouring your work surface and the rolling pin each time. Place the dough on the pizza peel. Spread half of the sour cream topping across, leaving a 1/2-inch border. Cover with half of the apple slices, top with half of the fennel slices, and sprinkle with half of the prosciutto. Brush the border with oil.
  • 5 Slide the dough onto the baking stone and bake until the fennel just starts to brown at the edges and the rim turns golden brown and starts to crisp - it should yield when pressed with a finger - about 15 minutes. Use a large spatula to lift the edges of the pizza so you can slide the peel underneath; carefully transfer the pizza to a wooden board. Sprinkle with half of the reserved green onions and 1/4 teaspoon of the pepper. Cut with a sharp knife and serve at once. Repeat with the second pizza.

SPELT PIZZA DOUGH

Spelt Pizza Dough image

The 'ancient grain' spelt is related to modern wheat, but it's actually an entirely different species. From what I hear, it's easier to digest, higher in protein and fiber, and to me at least, has a much better flavor and texture than other whole-wheat flours. Top with favorite pizza toppings!

Categories     Bread     Pizza Dough and Crust Recipes

Time 2h35m

Yield 4

Number Of Ingredients 6

3 cups sprouted spelt flour, or as needed, divided
1 cup warm water (100 to 105 degrees F/38 to 41 degrees C)
2 teaspoons honey
1 (.25 ounce) package active dry yeast
1 tablespoon extra-virgin olive oil, plus more for drizzling
1 teaspoon kosher salt

Steps:

  • Whisk 1 cup flour, water, honey, and yeast together in a bowl. Let stand until yeast softens and mixture is bubbly, about 20 minutes.
  • Stir remaining flour, olive oil, and salt into yeast mixture. Beat mixture in a bowl with an electric mixer fitted with a dough hook attachment, adding more flour as necessary, until a soft and tacky dough forms, 3 to 4 minutes. Place dough in mixing bowl with a little olive oil, cover bowl with a plate, and let rise until doubled in size, 90 minutes.
  • Punch dough down and transfer to a lightly floured work surface. Divide into 4 balls; cover each and let rest until dough rises slightly, 30 to 45 minutes. Roll into desired shapes and thickness.

GRILLED TWO-CHEESE PIZZA WITH PROSCIUTTO, ARUGULA, AND LEMON VIN

Grilled Two-Cheese Pizza With Prosciutto, Arugula, and Lemon Vin image

Make and share this Grilled Two-Cheese Pizza With Prosciutto, Arugula, and Lemon Vin recipe from Food.com.

Provided by sofie-a-toast

Categories     One Dish Meal

Time 15m

Yield 1 pizza

Number Of Ingredients 7

1 pizza dough (or ready-made pizza crust)
8 ounces smoked mozzarella cheese, cut into 1/4 thick slices
4 cups arugula leaves, packed (it seems like a lot now, but it gets wilted down during the cooking process)
8 slices prosciutto
1/3 cup goat cheese, crumbled
2 tablespoons lemon juice (about 1 lemon)
1/4 cup extra virgin olive oil

Steps:

  • Preheat grill. Brush grates with vegetable or corn oil.
  • In a small bowl, whisk together the 2T lemon juice and extra virgin olive oil. Place arugula leaves into a large bowl, and dress it with the lemon vinaigrette. Toss to mix well. Set aside. [I know it may seem like a lot of arugula at this point, but it will wilt down during the cooking process.].
  • Roll out pizza dough according to your recipe or store bought instructions. Once the grill is hot (you can hold your hands an inch over the grates for no more than 2 or 3seconds), carefully place the pizza dough onto the grill. Grill for about two minutes on one side. The pizza dough will also immediately puff up. Flip the pizza dough onto the other side and grill for another two minutes. Remove from grill onto a cookie sheet with tongs. Close the lid of the grill to retain its heat. [If you are using a ready-made pizza crust, cook it for two minutes on each side to get the grill marks and flavor.].
  • Place slices of smoked mozzarella around top of the pizza crust. And then in this order, spread all of the arugula leaves around, layer with prosciutto slices, and top with crumbled goat cheese.
  • Place the cookie sheet onto the grill and close the lid. [This allows for the toppings to cook without burning the pizza crust.] Cook for about five minutes, or until the cheese has melted, the arugula has wilted, and the prosciutto has crisped up a little. Carefully remove the cookie sheet from the grill. Using tongs, slide pizza onto a cutting board. Using a sharp knife or pizza slicer, slice the pizza and enjoy!

GRILLED PIZZA WITH PROSCIUTTO, ARUGULA AND GORGONZOLA

Grilled Pizza With Prosciutto, Arugula and Gorgonzola image

Grill the pizza dough on your charcoal grill outside or indoors on a skillet right on top your stove.

Provided by Timothy H.

Categories     European

Time 25m

Yield 3-4 serving(s)

Number Of Ingredients 11

3/4 cup warm water
2 1/4 teaspoons active dry yeast (about 2 1/4 tsp.)
1/2 teaspoon sugar
2 cups flour
1 teaspoon salt
2 tablespoons extra virgin olive oil, plus more for the bowl
extra virgin olive oil, for brushing
8 ounces pre-shredded mozzarella cheese
1 cup baby arugula
1/2 lb sliced prosciutto
1/2 cup crumbled imported italian gorgonzola

Steps:

  • Pizza Dough:.
  • Pour warm water into a small bowl and stir in the yeast and sugar until dissolved. Let it stand for about 5 minutes to make sure that the yeast is activated. A thin layer of foam should appear on the top, indicating good active yeast.
  • Mix the flour and salt in a large mixing bowl. Add the yeast water and 2 Tbsp of olive oil. Mix well with your hands or a mixing spoon. Lightly flour a clean working surface. Form the dough into a ball; turn it out onto the working surface. Flour lightly the top of the dough and press down with the palm of your hand. Fold the dough over itself and press again. Continue to roll and press the dough for about 12 minutes or until the dough is smooth and elastic, adding flour only when necessary to keep from sticking.
  • Place the dough back into the mixing bowl. Rub the remaining olive oil all over the dough to keep moist while it is rising. Cover the bowl with plastic wrap, and leave in a warm place (about 75 degrees) for 2 hours or until it rises double in size.
  • Once risen, you can use the dough to make pizzas, and or the remaining dough can be refrigerated for up 2 days. Roll the dough out on a lightly floured surface working it into a circular crust about 10 inches in diameter.
  • Assembly:.
  • INDOOR: Wipe the bottom of a grilling pan or heavy bottom skillet with a paper towel moistened with olive oil. Preheat the pan over high heat for 5 minutes. Place the dough in the skillet. The crust should bubble on top within 1 minute; if not, turn the heat up.
  • OUTDOOR: If your using an outdoor grill, simply heat the grill to medium heat and place the dough on the grill, it should bubble and the crust should form.
  • Place the grilled pizza a working surface, grilled side up. Brush the grilled side of the pizza with olive oil. Top the pizza with the fresh mozzarella, then the arugula. Place the slice of prosciutto on the pizza in loose bunches, creating an alternating pattern. Finally top with the crumbled Gorgonzola, and return to the grill to grill the bottom of the pizza and until cheese is bubbling and the edges are golden brown. Serve hot.

SPELT PIZZA WITH PROSCIUTTO AND PANCETTA

Spelt Pizza With Prosciutto and Pancetta image

Make and share this Spelt Pizza With Prosciutto and Pancetta recipe from Food.com.

Provided by Laka

Categories     European

Time 1h30m

Yield 2 serving(s)

Number Of Ingredients 16

200 ml warm water
2 tablespoons olive oil
1 tablespoon sugar
1/4 teaspoon sea salt
380 g whole wheat spelt flour
2 1/2 teaspoons instant yeast
1 tablespoon olive oil
1 garlic clove, sliced
240 g canned tomatoes, chopped
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
2 teaspoons dry oregano
100 g prosciutto, thinly sliced (or smoked ham)
50 g pancetta, thinly sliced
400 g button mushrooms, thinly sliced
150 g gouda cheese, coarsely grated (or mozzarella)

Steps:

  • Place the ingredients for the dough into the breadmaker bread pan according to the manufacturer's directions. Set the PIZZA cycle and press START. After about 5 minutes of kneading, check the consistency of the dough. If it is not in a smooth, round ball, open lid and with machine ON, add water, a tablespoon at the time if too dry; add a tablespoon of flour at the time if too wet.
  • Remove the dough promptly from the breadmaker at the end of the cycle. Knead dough about 10 times on a lightly floured surface. Cover with kitchen towel and let it rise for 30 minutes.
  • Meanwhile, for the pizza sauce sauté garlic in olive oil until golden (it mustn't go dark). Add the tomatoes, bring to a simmer and cook for 5 minutes. Set aside to cool. Use as it is, lumpy, or blend with a stick blender to create a smooth sauce.
  • Take a large cookie sheet and place it on a center rack of a cold oven upside-down. Heat the oven to max. Preheating the pan in this way will allow the pizza crust to become crispy from contact with the hot pan, similar to using a pizza stone.
  • Place the pizza dough onto the floured parchment paper. Roll it into a 12-inch disc. Cover with pizza sauce and sprinkle with dried oregano.
  • Place prosciutto and pancetta slices onto the sauce. Gently slide the parchment and pizza off of the cutting board onto the hot cookie sheet bottom. Bake pizza for about 5 minutes at 250°C (or max).
  • Open the oven and slide the rack with the tray out slightly or take it out of the oven to top the pizza with sliced button mushrooms. Return the pizza to the oven, bake for another 5 minutes at max or until pizza becomes crispy. Remove from the oven.
  • Sprinkle grated cheese on top and place the pizza into turned-off oven for 1 -2 minutes to melt the cheese.
  • Cut into quarters and serve with black or green olives.
