Cantaloupe Bread with Praline Glaze image

This excellent bread is very moist and has the texture of pumpkin or zucchini bread. Can puree and freeze extra cantaloupe to make bread in the off season.

3 eggs
1 cup vegetable oil
2 cups white sugar
1 tablespoon vanilla extract
2 cups cantaloupe - peeled, seeded and pureed
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
¾ teaspoon baking powder
2 teaspoons ground cinnamon
½ teaspoon ground ginger
½ cup butter
1 ⅔ cups brown sugar
½ cup chopped pecans

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease and flour two 9x5 inch loaf pans.
  • In a large bowl, beat together eggs, vegetable, sugar, vanilla and cantaloupe. In a separate bowl, sift together flour, salt, baking soda, baking powder, cinnamon and ginger. Stir flour mixture into cantaloupe mixture; stir to combine. Pour batter into prepared pans.
  • Bake in preheated oven for 1 hour, until a toothpick inserted into center of a loaf comes out clean. Meanwhile, combine margarine and brown sugar. Microwave for 3 minutes, stirring at 1 minute intervals; mix in pecans. Pour sauce over warm bread. Let cool for 1 hour before serving.

1 Turkish or 1/2 California bay leaf

Steps:

  • Simmer all ingredients except cantaloupes in a 1-quart heavy saucepan until reduced to about 1/4 cup, 10 to 15 minutes. Remove from heat and cool in saucepan set in a bowl of ice and cold water. Discard bay leaf.
  • Halve each cantaloupe and discard seeds. Scoop out curls from melon halves with an ice cream scoop (not one with a lever), then divide curls among 4 bowls along with any juices. Just before serving, drizzle each serving with about 1 tablespoon cooled spiced wine.

1 tablespoon alum
8 cups water
3 cups sugar
2 cups vinegar
3 cinnamon sticks
1/2 tablespoon whole cloves
1 teaspoon allspice

Steps:

  • Remove the seeds from the cantaloupe, cut off the rind and cut into 1"x2" strips or squares.
  • Dissolve the alum in the water and bring to a boil.
  • Add the cantaloupe and cook for 15 minutes.
  • Drain well.
  • Combine the vinegar, sugar, and spices.
  • Add the cantaloupe and simmer slowly until the melon is transparent, about 45 minutes.
  • Place in hot sterilized jars and seal.

1/4 cup minced red pepper
1 scallion, minced (including green part)
1 tablespoon fresh parsley, minced
1 tablespoon fresh lemon juice
1 tablespoon good-quality olive oil
salt, to taste
cayenne pepper, to taste

Steps:

  • Rinse lentils well. Cook over medium heat, with enough water to cover by at least an inch, until boiling. Then reduce heat to a simmer, and continue to cook until lentils are tender, about 25-30 minutes.
  • Drain lentils and let cool.
  • Combine all ingredients in a medium sized bowl, mix very gently to combine.
  • Serve at room temperature.

2 medium cantaloupes, peeled, seeded and cubed
2 cups orange sections, pith and seeds removed
5 cups sugar
1/2 cup bottled lime juice
2 cinnamon sticks (3 inches)
1 tablespoon grated lime zest

Steps:

  • Process cantaloupe and orange sections in batches in a blender until pureed. Transfer to a Dutch oven., Add sugar, lime juice, cinnamon and zest. Bring to a boil. Reduce heat; simmer, uncovered, until mixture is reduced to 5 cups and reaches a thick, spreadable consistency, about 2 hours, stirring frequently. Discard cinnamon sticks., Carefully ladle hot mixture into 5 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Submerge jars in a canner with simmering water, ensuring that they are completely covered. Bring to a boil; process for 10 minutes. Remove jars and cool.
