1/4 cup soy sauce
1/4 cup chili sauce
1/2 teaspoon Frank's™ RedHot™ Original cayenne pepper sauce
1/4 teaspoon ginger
1/4 teaspoon dry mustard
12 chicken drumettes

Steps:

  • In 12x8-inch (2-quart) baking dish, combine honey, soy sauce, chili sauce, hot pepper sauce, ginger and dry mustard; mix well. Add drumettes; turn to coat. Cover; refrigerate 1 hour to marinate.
  • Heat oven to 375°F. Uncover dish. Bake chicken in marinade at 375°F. for 45 to 60 minutes or until chicken is tender and no longer pink next to bone, brushing with marinade occasionally.

1/2 stick of margarine
1/2 cup Texas Pete Hot Sauce (or other comparable hot sauce)
1 package powdered ranch dressing mix
2 pounds chicken drummettes (baby chicken legs)
1 cup blue cheese dressing
celery stalks to accompany

Steps:

  • Melt margarine in saucepan. Add 1/2 cup Texas Pete Hot Sauce.
  • Rinse and dry drummettes. Dip chicken in hot sauce mixture. Roll them in powdered Ranch dressing mix.
  • Spread onto baking sheet. Bake at 350°F for 15 to 20 minutes.
  • Serve with celery and blue cheese dressing.

3/4 cup pineapple juice
1/3 cup reduced-sodium soy sauce
1/4 cup sweet Marsala wine
1/4 packed cup light brown sugar
2 tablespoons sesame oil
2 cloves garlic, minced
2 tablespoons chili powder
1 to 1 1/2 teaspoons crushed red pepper flakes
3 pounds chicken drumettes
Vegetable oil cooking spray
Kosher salt
1 1/2 teaspoons ground arrowroot powder or 1 tablespoon cornstarch
1/4 cup chopped fresh cilantro leaves

Steps:

  • In a medium bowl, whisk together the pineapple juice, soy sauce, Marsala wine, brown sugar, sesame oil, garlic, chili powder, and red pepper flakes until the sugar is dissolved. Put the chicken drumettes in a 1-gallon size, resealable plastic bag. Add the pineapple liquid to the chicken and seal removing as much air as possible from the bag. Marinate the chicken for 3 hours in the refrigerator.
  • Put an oven rack in the center of the oven. Preheat the oven to 450 degrees F. Line a baking sheet with foil and spray it liberally with vegetable cooking spray.
  • Remove the chicken from the marinade and arrange in a single layer on the prepared pan. Season the chicken with salt, to taste, and bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
  • Meanwhile, put the marinade into a small saucepan. Whisk in the arrowroot or cornstarch, if using, and bring to a boil over medium heat (in order to kill bacteria). Reduce the heat to a low boil and cook until thick, about 5 minutes. Cool for 10 minutes.
  • Using a pastry brush, brush some of the cooked marinade over the chicken or pour it into a small bowl and serve on the side. Arrange the chicken on a platter, sprinkle with chopped cilantro and serve.

For the Chicken:
3 tablespoons hot sauce
3 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
3 pounds (about 20) chicken drumettes
3/4 cup all-purpose flour
For the Sauce:
6 tablespoons butter
1/2 cup hot sauce
1/4 teaspoon ground cayenne, or more
1 tablespoon apple cider vinegar
Few drops Worcestershire sauce
Serving suggestion: blue cheese or ranch dip , celery sticks

Steps:

  • Gather the ingredients.
  • Heat oven to 400 F. Line a large baking sheet with foil and spray generously with nonstick cooking spray.
  • In a food storage bag, combine the 3 tablespoons of hot sauce with vegetable oil, salt, pepper, and garlic powder. Add the drumettes and toss to coat.
  • Put the flour in another bag or a bowl and add the wings, a few at a time, and toss or shake to coat well. Arrange on the baking sheet.
  • Bake for 30 minutes.
  • Using tongs, turn each wing piece over. Return the chicken wings to the oven and bake for 30 minutes longer.
  • Gather the ingredients.
  • Meanwhile, in a small saucepan, combine the butter, 1/2 cup of hot sauce, cayenne pepper, vinegar, and Worcestershire sauce. Cook over medium heat, stirring until the butter is melted and the sauce begins to simmer. Remove from the heat and set aside.
  • Remove the wings from the oven and transfer to a large bowl. Pour the hot sauce mixture over the wings and toss gently to coat thoroughly.
  • Serve as an entree or snack with blue cheese dip , ranch dressing, other dips, and some celery sticks.

Kosher salt and freshly ground black pepper
1 cup buttermilk
2 tablespoons curry powder
1 1/2 teaspoons cayenne pepper
1/2 cup all-purpose flour
1/2 cup plain bread crumbs
2 teaspoons smoked paprika
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Vegetable oil, for frying
Kosher salt, for seasoning

Steps:

  • Chicken: Season the chicken on all sides with salt and pepper, to taste, and put in a 1-gallon size resealable plastic bag. In a small bowl, whisk together the buttermilk, curry powder and cayenne pepper until smooth. Pour the buttermilk mixture over the chicken and seal the bag. Refrigerate for 3 hours.
  • Breading: In a medium bowl, mix together the flour, bread crumbs, paprika, salt, and pepper.
  • In a large heavy-bottomed saucepan, pour in enough oil to fill the pan about 1/3 of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 325 degrees F. (If you dont have a thermometer, a cube of bread will brown in about 2 minutes.) Remove the chicken from the marinade, allowing any excess to drip off, and dredge in the flour mixture. Fry, 2 to 3 pieces at a time, until golden and cooked through, about 6 to 7 minutes, depending on the size of the drumettes. Drain on paper towels and sprinkle with salt.
  • Arrange the chicken on a platter and serve.

1/2 cup soy sauce
1/2 cup rice vinegar
1/2 cup molasses
1/3 cup orange juice
1/3 cup chili paste
1/4 cup packed brown sugar
2 medium green onions, sliced (2 tablespoons)
1 tablespoon sesame seed, toasted

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. Set oven control to broil. Spray broiler pan rack with cooking spray. Place half of the drummettes on rack in pan. Broil 3 inches from heat 20 minutes, turning after 12 minutes, or until lightly browned. Transfer drummettes to slow cooker. Repeat with remaining drummettes.
  • In medium bowl, mix soy sauce, vinegar, molasses, orange juice, chili paste and brown sugar. Pour sauce over drummettes; toss lightly to coat with sauce.
  • Cover; cook on Low heat setting 3 hours. Remove drummettes from slow cooker to serving platter. Pour sauce into 1-quart saucepan; heat to boiling over medium-high heat. Cook until thickened and reduced by half, about 10 minutes. Drizzle sauce over drummettes. Sprinkle with onions and sesame seed.

2 teaspoons pepper
1 teaspoon garlic powder
1 teaspoon chili powder

20 chicken drumsticks (about 5 pounds)

Steps:

  • In a large resealable plastic bag, combine the sugar, paprika, salt, pepper, garlic powder, chili powder and cayenne. Add drumsticks, a few at a time; seal bag and shake to coat. , Place chicken in two greased 15x10x1-in. baking pans. Cover and refrigerate for 8 hours or overnight.
