2 red chili peppers
1 Tbsp olive oil
1 Tbsp Tomato paste
400 grams crushed tomatoes (canned)
2 Tbsps balsamic vinegar
2 Tbsps brown sugar
1 tsp dried oregano
0.5 tsp dried thyme
salt
Tabasco sauce
freshly ground peppers

Steps:

  • Peel and finely dice the onion and garlic. Rinse and halve the chilis. Trim and julienne the chilis. Heat the oil in a pan, and sauté the onion, garlic, and chilis. Add the tomato paste, and sauté briefly.
  • Mix in the tomatoes balsamic vinegar, sugar, oregano, and thyme. Simmer for 25 minutes until thickened, stirring occasionally. Puree the mixture, then season to taste with salt, tabasco, and pepper. Remove from the heat and cool.

I used grape tomatoes, rather than cherry, and substituted white wine vinegar for the white balsamic. If you prefer a milder heat, you will want to seed the pepper.

(The tomato sauce may be made 1 day in advance and kept covered and chilled.)

  • In a non-stick skillet cook pork in marinade, covered, over moderately high heat 6 minutes on each side, or until just cooked through. Sprinkle pork with coriander.

2small fresh red chillies , seeded
2 red peppers , seeded and roughly chopped
2 garlic cloves , crushed
1 shallot , roughly chopped
400g can chopped tomato with juice
100g dark muscovado sugar
3 tbsp sherry vinegar

Steps:

  • Blend the chillies, peppers, garlic, shallot and tomatoes in a food processor until smooth.
  • Pour the purée into a stainless steel saucepan, add the sugar and vinegar, then bring to the boil, stirring from time to time. Reduce the heat and simmer for 40-60 mins until thick, stirring regularly, especially in the latter stages of cooking.
  • Pour into large, warm sterilized jars then cool. This will keep for up to 2 weeks in the fridge.
