1 (16 ounce) can whole berry cranberry sauce
¼ cup brown sugar
½ teaspoon ground ginger
¼ teaspoon salt
3 green onions, chopped
1 fresh jalapeno chile (or more to taste), seeded and chopped
1 sprig fresh rosemary

Steps:

  • Combine pineapple tidbits, cranberry sauce, brown sugar, ginger, and salt in a saucepan; bring to a boil. Reduce heat and simmer, stirring often, until berries pop, about 5 minutes.
  • Remove from heat and mix in green onions and jalapeno peppers. Garnish with rosemary.

3 Tbsp. unsalted butter
1 large shallot, finely chopped
2 jalapeños, seeds removed from 1 chile, both chiles very thinly sliced
1 lb. fresh (or frozen) cranberries
2/3 cup honey
1/2 tsp. kosher salt
2 tsp. finely grated lime zest
2 Tbsp. fresh lime juice

Steps:

  • Melt butter in a large saucepan over medium heat. Cook shallot and jalapeños, stirring often, until shallot is starting to turn golden, about 4 minutes. Add cranberries, honey, and salt and increase heat to medium-high. Bring to a boil and cook, stirring often and reducing heat as needed to avoid scorching, until cranberries burst, juices are syrupy, and pan is visible when a wooden spoon is dragged across the bottom, 12-15 minutes. Remove from heat and stir in lime zest and juice; let cool.

  • Sauce can be made 1 week ahead. Cover and chill.

This hot red-pepper cranberry relish with jalapeños and cayenne fits the bill. You can keep the seasoning somewhat tame, or ramp up the heat to taste. It will keep for 2 weeks or so; make it in advance, as soon as cranberries are available, and have it on hand in the fridge through the holiday season.

1 cup sugar
2 large jalapeños, preferably red, seeded and finely diced
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon cayenne
1 tablespoon grated ginger
12 ounces cranberries

Steps:

  • Put sugar, jalapeños, lemon juice, salt and cayenne in a heavy-bottomed saucepan over medium-high heat. Add 1/2 cup water, then stir with a wooden spoon to dissolve sugar, and simmer 2 minutes.
  • Add ginger and cranberries, and bring to a boil. Reduce heat to medium and let mixture cook, stirring occasionally, until cranberries have softened and no liquid remains in pan, about 15 minutes.
  • Let cool and taste. Add more cayenne or jalapeños if desired. It can be stored in the refrigerator for up to 2 weeks.

2 tablespoons unsalted butter
1 onion, peeled and finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 cup port wine
1/4 teaspoon Mexican cinnamon
1/4 teaspoon allspice
1/2 cup cranberry juice
2 cups chicken stock
2 tablespoons cold unsalted butter
1/4 cup fresh or frozen cranberries, coarsely chopped
Salt and freshly ground pepper

Steps:

  • Heat butter in a medium saucepan over medium-high heat. Add the onions, celery and carrots and cook until soft. Raise the heat to high and add the port, cook until dry. Add the spices, cranberry juice, and chicken stock. Strain the sauce and discard solids. Return to pan to heat, whisk in the cold butter, stir in cranberries, and heat through. Season with salt and pepper to taste.

1/2 cup water
8 whole cloves
1 inch (25-mm) piece fresh ginger (peeled)
4 cups (12 oz) fresh cranberries
1 cinnamon stick
1 red chile (halved lengthwise and seeded)

Steps:

  • In a medium saucepan over medium heat, combine the sugar and water and slowly bring to a boil. Once the sugar has dissolved, lower the heat.
  • Stick the cloves into the fresh ginger and add to the saucepan, followed by the cranberries, cinnamon stick, and chile. Adjust the heat to bring the mixture to a simmer. Cook until the cranberries have popped and the sauce has thickened, 10 to 15 minutes.
  • Remove from the heat and discard the ginger, cinnamon stick, and chile halves. Let cool to room temperature before serving. The sauce can be served immediately, or refrigerated overnight to allow the flavors to meld. Bring to room temperature before serving.

2 cinnamon sticks (3-inch)

3/4 cup water (I use orange juice instead of water)

Steps:

  • Combine all ingredients in a saucepan and simmer, covered, stirring occasionally for 5 to 10 minutes, or until the cranberries have burst and the mixture has thickened. (I put the cloves in a tea diffuser for easier removal and usually cook the sauce a little longer than the time given.).
  • Transfer the sauce to a bowl and let cool.
  • The sauce may be made 2 days in advance and kept covered and chilled.
  • Serve at room temperature.
