Baked Salmon with Maple Mustard Glaze (5 ingredient recipe) image

This easy five ingredient baked salmon is going to be your weeknight go-to salmon recipe. The glaze is the perfect balance of spicy and sweet. Try it tonight!

2 pounds salmon, rinsed and patted dry with paper towels
2 tablespoons coarse (country style) Dijon mustard
2 tablespoons real maple syrup
1 teaspoon olive oil
1 teaspoon kosher salt
1/2 teaspoon paprika
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 400ºF. If desired, line a baking sheet with parchment paper for easy clean up.
  • Place salmon on prepared baking sheet. In a small bowl, combine mustard, maple syrup, olive oil, salt, paprika, and pepper. Spoon about half of this mixture over the salmon in an even layer.
  • Bake for 15 minutes. Remove from oven and spoon on the rest of the maple mustard mixture.
  • Return to oven and bake for an additional 5-10 minutes or until an instant read thermometer reads 145ºF and fish flakes easily with a fork. (An internal temperature of 145ºF is my personal preference for salmon, but feel free to cook it to whatever temperature you like!). Enjoy immediately!

2 teaspoons paprika
1 teaspoon chili powder
1 teaspoon ground dried ancho chile powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/2 teaspoon brown sugar
1/2 teaspoon sea salt
4 (6 ounce) salmon fillets
1 tablespoon maple syrup
1 tablespoon melted butter
1 tablespoon chopped green onion

Steps:

  • Preheat oven to 375 degrees.
  • Combine the paprika, chili powder, ancho, cumin, garlic powder, and brown sugar.
  • Place salmon on lightly sprayed baking dish or tray.
  • Sprinkle the fillets with the salt, then rub with the spice mixture.
  • Combine melted butter and maple syrup, then drizzle each fillet with a bit of the mixture; sprinkle each with a bit of green onion.
  • Bake for 10 to 12 minutes, or until it flakes with a fork.
  • Serve with rice or orzo pasta and steamed green vegetables like broccoli, gai lan (Chinese broccoli), bok choy, or green beans, drizzled with bottled fish or oyster sauce.

The perfect weeknight dinner! This Spicy Maple Glazed Salmon is sprinkled with a homemade rub then brushed with maple syrup and popped under the broiler until it's a sweet and spicy masterpiece!

¼ - ½ teaspoon cayenne pepper
½ teaspoon EACH: onion powder AND garlic powder
2 teaspoons smoked paprika
1 teaspoon kosher salt
1 tablespoon melted butter
3-4 tablespoons maple syrup
1 ¼ pounds salmon (cut into 3-4 pieces)

Steps:

  • PREP: Position a rack in the upper third of the oven and preheat the oven too 450ºF. Line a baking sheet with foil and spray with cooking spray (or brush with a little oil) and set aside. In a small bowl, combine the cayenne, onion powder, paprika, salt, and garlic powder.
  • SALMON: Place the salmon on the prepared baking sheet, brush with melted butter, and sprinkle with the prepared seasoning. Bake the salmon for 8-10 minutes depending on the thickness of the salmon. Generally, you need to bake it about 4-5 minutes for every 1/2 inch of thickness. Remove from the oven, brush with the maple syrup and place back in the oven. Switch to the broiler setting and broil for 30 seconds to 1 minute or until bubbly and brown. Serve immediately with the salad.

Rachael Ray's recipe for Chipotle Cashew Chicken inspired me to create this dish. Her recipe calls for chipotle peppers in adobo sauce. Having none on hand, I combined some smoky and hot spices to improvise. The maple glaze gives the salmon just the right balance of sweet and spicy. It is an easy, quick recipe that could be served any night of the week or is elegant enough to be served at a dinner party. I oven-roasted mine, but it would also be excellent grilled.

4 salmon fillets, skinless
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper (or to taste)
1/4 teaspoon ginger, dried
1/8 teaspoon black pepper, freshly ground
1/4 teaspoon salt
2 tablespoons olive oil
1/2 cup maple syrup, real
2 tablespoons soy sauce
2 tablespoons lemon juice

Steps:

  • Preheat oven to 400 degrees.
  • Combine maple syrup, soy sauce and lemon juice in a small saucepan over medium-high heat. Bring to a boil; boil for 3-5 minutes or until slightly thickened. Set aside.
  • Combine garlic powder, cumin, chili powder, cayenne pepper, ginger, salt and black pepper in a small bowl. Gently pat seasoning onto both sides of salmon.
  • Roast salmon on a baking sheet coated with olive oil for 10 minutes. Drizzle a little glaze over each salmon filet and return to oven to roast for an additional 2 minutes (or until fish flakes easily when forked).
  • Serve with remaining warm maple glaze drizzled atop salmon.

4 teaspoons gingerroot, peeled and minced

Steps:

  • In a small saucepan cook first 7 ingredients till boiling.
  • Reduce heat and simmer till reduced to about 1/2 Cup.
  • Season Salmon with Salt & Pepper.
  • Brush sauce on salmon and bake skin side down for 10 minutes in a 350 oven.
  • Brush again and continue to bake for another 10 minute.
  • Brush again and bake for final 10 minute.
  • Do not turn fish.

6 tablespoons Grade B maple syrup (or Grade A maple syrup flavored with 3 drops maple extract, or to taste)
1/2 cup water
2 tablespoons minced peeled fresh gingerroot
2 garlic cloves, minced
1 teaspoon dried hot red pepper flakes, or to taste
1/4 teaspoon salt
four 1-inch-thick pieces salmon fillet (about 6 ounces each)

Steps:

  • In a small heavy saucepan combine maple syrup, water, gingerroot, garlic, red pepper flakes, and salt and simmer until reduced to about 1/2 cup.
  • Cool basting sauce.
  • Preheat broiler.
  • Arrange salmon, skin sides down, on oiled rack of broiler pan and season with salt. Broil salmon about 4 inches from heat 4 minutes. Brush salmon with sauce and broil until just cooked through, about 6 minutes more.
