FRIED FLOUNDER WITH TARTAR SAUCE



Fried Flounder with Tartar Sauce image

This is my family's method of making fried flounder. It is tried and true, and I have made only one change to it since the 1970s: I add a little mustard to the egg wash mix, which I learned in Louisiana. It adds a ton of flavor. You'll also see the homemade fries on the plate. If you want to make them, I followed this recipe from The Splendid Table.

1 cup mayonnaise
2 teaspoons mustard, (Dijon or brown)
2 teaspoons lemon juice
A few drops of Tabasco sauce
1/2 cup chopped pickles
1 teaspoon small capers
1 shallot, minced fine
1 tablespoon minced chives
Salt and black pepper
2 to 3 pounds skinless flounder fillets
Salt
1 cup flour
2 eggs
1/2 cup milk
1 tablespoon mustard
1 cup breadcrumbs
Oil for frying

Steps:

  • For the tartar sauce, mix everything in a bowl and set it in the fridge. Salt the fish lightly on both sides and set aside.
  • Set up a breading station. You will want plates or shallow bowls or somesuch. The first has the flour in it -- and if you want more seasoning than I am suggesting in this recipe, this is where you add it -- then another basin with the eggs, milk and mustard all beaten together, then the final basin with the breadcrumbs.
  • Dredge the flounder in the flour first, pressing it into the fish and making sure you get it totally covered. Now sweep the fillet through the egg wash, again making sure you get it totally coated. Finally, set it in the breadcrumbs and press them in to make a good coating. Set each fillet on a plate or tray in the fridge and let it rest 1 hour, and up to all day.
  • When you are ready to fry, pour in enough oil to get to a depth of about 1 inch in a large frying pan. If you happen to me making the fries to go with this, make them first and hold them in the oven. Heat the oil over high heat. Set a rack over a baking sheet and put that in the oven. Set the oven to "warm."
  • When the oil hits 350F, fry your fish, right from the fridge. This works because they are very thin, and you want a pretty golden crust without overcooking the fish. Room temperature flounder fried this way will overcook. It take about 3 to 5 minutes per side to get golden brown. Move each finished fillet to the rack in the oven. When they're all done, serve it up with the tartar sauce.

4 skinless flounder-fillets
Salt and pepper, to taste
Flour, for dredging fish
2 tablespoons vegetable oil
3 tablespoons butter, divided
1 lemon, juiced
1 small bottle capers

Steps:

  • Wash fillets in cold water and pat dry. Sprinkle with salt and pepper. Dredge fillets in flour. Place oil and 2 tablespoons butter in flat, heavy-bottomed skillet and heat on medium-high until butter melts. Keeping heat at medium-high, cook fish on 1 side about 3 minutes (more or less, depending on size of fillets), until deep brown and crispy. Turn fish and cook on second side, about 3 minutes. Turn fish only once.
  • Remove fish to serving platter. Turn off heat. Into hot skillet, whisk in remaining 1 tablespoon butter. Add lemon juice. Pour in capers, liquid and all. Whisk. Pour thin sauce over fish fillets. serve at once.

1 tablespoon of dry mustard

Combine all ingredients and put in a sealed container.
Breading
1 cup of Panko breadcrumbs
2 cups of House-Autry flour
1/2 cup of dry rub
Breading
? 1 cup of Panko breadcrumbs
? 2 cups of House-Autry flour
? 1/2 cup of dry rub
Grind breadcrumbs in a food processor until you get a medium grind.
Add flour and dry rub and pulse to combine. Reserve until ready for use.
Egg wash
? 1 cup of milk
? 5 eggs, lightly beaten
Gently whisk the milk into the eggs until combined.
Tomato tartar sauce
? 3 cups of mayonnaise
? 1 teaspoon of Dijon mustard
? 2 teaspoons of Creole mustard
? 1 cup pickle relish
? 1 ripe medium tomato, seeded and diced
? Salt and black pepper to taste
? Dry rub to taste
Combine ingredients and refrigerate.

? 4 (4-ounce) skinless flounder fillets
? All-purpose flour
? Peanut oil

Steps:

  • Fill a pie pan with all-purpose flour, another with egg wash, and a third with the Panko breadcrumb mixture. Season the flounder fillets lightly with dry rub, then coat the fillets in all-purpose flour. Dip the fillets in the egg wash. Finish by coating the fillets with the Panko breadcrumb mixture. Add peanut oil to a saut頰an to a level of three-fourth of the thickness of the fillets. Heat the oil to 360 degrees. Carefully place the flounder fillets into the hot oil. Do not overfill the pan or your food will steam, not fry, and it will become soggy. Cook the fillets in two batches if you don?t have a pan big enough to cook them all at once. Brown on each side, turning only once. Cook until the center is opaque. It will continue to cook a little after you take it out of the pan. Once a fillet is done, place it on a paper towel to absorb any excess oil. Serve immediately with tomato tartar sauce.

This is the first tartar sauce I liked. This has the taste of tomatoes and jalapenos mixed in with good quality mayonnaise. This recipe comes from Simply Elegant, a cookbook from the Windsor Court Hotel in New Orleans. This is a lovely accompaniment to crab cakes, fresh fish, or fried duck.

1/4 cup fat-free plain yogurt
1/4 cup reduced-fat mayonnaise
1-1/2 teaspoons capers, drained
1 garlic clove, minced
1/2 teaspoon sugar
1/2 teaspoon lemon juice
1/2 teaspoon dill pickle relish
1/2 teaspoon Dijon mustard
1/4 teaspoon dried tarragon

Steps:

  • In a small skillet, toast the bread crumbs, salt and pepper over medium heat until lightly browned, stirring occasionally. Remove from the heat. , Brush both sides of fillets with oil; coat with toasted crumbs. Place in a 15x10x1-in. baking pan coated with cooking spray. 1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon pepper
2 small or 1 large flounder fillet
4 tablespoons clarified butter, or oil
2 tablespoons unsalted regular butter
2 tablespoons chopped shallots or onion
1/4 cup dry white wine
1/2 cup fish stock (optional)
1/4 teaspoon crushed thyme
1 cup chopped canned plum tomatoes, with juice
Salt and pepper as desired
2 to 4 tablespoons additional cold, unsalted regular butter, cut up
1 1/2 cups chopped cooked pasta, or cooked orzo

Steps:

  • Preheat oven to low, or 150 degrees. Mix the flour, salt and pepper and dip the fillets in the mixture to coat both sides. Shake off the excess. Heat a large skillet very hot, add the clarified butter and when it is very hot fry the fillets quickly, turning them once, until they are golden brown on both sides (about 2 minutes or less, all told). Remove the fillets to dinner plates and keep warm in the oven.
  • Pour off any remaining clarified butter or oil from the skillet, add 2 tablespoons unsalted regular butter and (still over high heat) add the shallots and saute 30 seconds. Add the wine and fish stock and boil hard until it is almost gone. Add the thyme and chopped tomatoes and boil briefly until slightly reduced. Season with salt and pepper, remove the skillet from the heat and whisk in the additional regular butter bit by bit, incorporating each piece almost completely before adding the next. Warm the sauce again if necessary, but do not let it boil.
  • Spoon a small amount of the sauce over the fish fillets in the oven, return the skillet to the heat, add the chopped pasta and toss with the rest of the sauce until heated through. Spoon the pasta onto the dinner plates and serve with a tossed salad.

  • Bring a saucepan of water to a boil. Plunge tomatoes into the boiling water and immediately remove to a medium bowl of ice water; drain. Remove and discard skins from tomatoes. Chop tomatoes and set aside.
  • Heat olive oil in a skillet over medium heat; saute onion until tender, about 5 minutes. Stir in tomatoes, garlic and Italian seasoning; cook until tomatoes are tender, 5 to 7 minutes. Mix in olives, wine, capers, lemon juice, and 1/2 the basil. Reduce heat, blend in Parmesan cheese, and cook until the mixture is reduced to a thick sauce, about 15 minutes.
