Salmon with Capers image

This salmon with capers is oven baked in foil until it's perfectly tender, then topped with a delicious garlic butter sauce. An easy healthy dinner recipe!

4 (6-ounce) salmon fillets
Olive oil, for brushing
1/2 teaspoon kosher salt, plus more for brining
1/2 teaspoon freshly ground black pepper
6 lemon slices (from 1 lemon)
Fresh oregano or thyme sprigs (optional)
3 tablespoons salted butter
2 tablespoons jarred capers, drained
1 garlic clove, grated
To garnish: finely chopped Italian parsley, chives, or other herbs

Steps:

  • Preheat the oven to 325 degrees Fahrenheit.*
  • While the oven preheats, in a shallow dish mix together 4 cups room temperature water and 3 tablespoons kosher salt. Place the salmon in the water and wait for 15 minutes.
  • Place a large sheet of aluminum foil on a baking sheet and brush it with olive oil. Pat each piece of salmon dry and place it on the foil. Sprinkle the salmon with 1/8 teaspoon kosher salt for each fillet and fresh ground pepper. Place the lemon slices and fresh herbs around the salmon (not on top). Close and seal the foil around the salmon.
  • Bake the salmon for 10 minutes in the foil. Then open the foil packet so steam can release and bake again for 3 to 6 minutes, depending on thickness, until just tender and pink at the center (the internal temperature should be between 125 to 130F in the center). A 1 inch thick fillet should cook in about 15 minutes total.
  • Meanwhile, melt the butter over low heat. Once melted, add the capers and garlic and cook until fragrant, about 3 minutes.
  • When the salmon is done, squeeze with some lemon juice from remaining lemon slices. Spoon the butter sauce over each piece of salmon. Garnish with finely chopped parsley or chives.

4 skinless salmon fillets (about 6 ounces each)
Salt and ground black pepper
1/2 cup panko breadcrumbs
2 tablespoons minced fresh parsley
1 tablespoon chopped fresh dill
1 tablespoon minced garlic
3 tablespoons olive oil
2 tablespoons olive oil
1 potato, peeled and cut into small cubes
1 onion, chopped
1 red bell pepper, chopped
4 ounces sliced smoked salmon, chopped
2 tablespoons capers
Salt and ground black pepper
2 thick slices pumpernickel bread, cut into cubes
3 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon Dijon mustard
1 small shallot, diced
1/2 teaspoon salt
Good pinch of ground black pepper
1 small cucumber, peeled and cut into cubes
2 tomatoes, cut into cubes
1/2 red onion, thinly sliced
1 tablespoon chopped fresh dill
2 tablespoons olive oil
1 shallot, minced
4 tablespoons (1/2 stick) unsalted butter, cut into cubes
1 tablespoon capers
1 tablespoon chopped fresh dill
1/2 lemon
Salt and ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • For the salmon: Season the salmon filets with salt and pepper. In a bowl, mix together the panko, parsley, dill, garlic and 1 tablespoon of the oil until the panko is evenly coated. Coat the salmon with the panko mixture and let sit for a few minutes so the crust sticks.
  • Heat the remaining 2 tablespoons of oil in an ovenproof skillet over medium-high heat. Add the salmon and cook until the breadcrumbs are golden, 2 to 3 minutes per side. Transfer the skillet to the oven and cook for 5 minutes. Keep the salmon warm.
  • For the salmon hash: Heat the oil in a large skillet over medium heat. Add the potatoes and cook, stirring occasionally, until they start to brown, 4 to 5 minutes. Add the onion and bell pepper and cook until the potatoes are cooked through and the peppers are soft, 10 minutes more. Turn off the heat and stir in the salmon and capers. Season with salt and pepper. Keep the hash warm.
  • To make the salad: Toss the bread cubes with 1 tablespoon of the oil on a baking sheet. Spread the bread in a single layer and toast in the oven, stirring once or twice, until crunchy but not too hard, 8 to 10 minutes.
  • In a large bowl, whisk together the vinegar, mustard, shallot, remaining 2 tablespoons oil, salt and pepper. Add the cucumber, tomatoes, onion and dill and stir to coat everything in the dressing. Stir in the toasted bread.
  • For the sauce: Heat the oil in a small skillet over low heat. Add the shallot and cook until softened, about 2 minutes. Turn off the heat and whisk in the butter 1 piece at a time. Stir in the capers and dill. Squeeze in the lemon juice and season with salt and pepper.
  • To plate: Divide the salmon hash among 4 plates and top each with a salmon filet. Spoon the sauce over the salmon. Divide the salad among the plates, placing it on the side of the salmon.

1/3 cup fresh lemon juice
1/2 cup butter, melted
salt and pepper
1/4 cup of chopped parsley
1/4 cup chopped capers

Steps:

  • Rub the salmon steaks with lemon juice and brush them with melted butter.
  • Season with salt and pepper to taste.
  • Arrange in a baking dish and bake in preheated hot oven (425°F) for about 20 minutes, basting with a combination of melted butter and lemon juice every 5 minutes.
  • Do not turn.
  • Arrange the cooked salmon steaks on a hot platter.
  • Mix the pan juices with the chopped parsley and capers, and pour over the steaks.
  • If additional liquid is needed, add a little dry vermouth or white wine.
  • Good with new potatoes, dressed with butter and parsley, and a cucumber salad.

12 miniature pretzels
2 teaspoons Italian seasoning

2 teaspoons capers, drained
2 to 3 teaspoons lemon juice
3-1/2 teaspoons Dijon mustard, divided
1/2 teaspoon pepper, divided
1/4 cup finely chopped onion
1/4 cup finely chopped celery
5 teaspoons vegetable oil, divided
2 pouches (6 ounces each) boneless skinless pink salmon
3/4 cup seasoned bread crumbs, divided
1 egg, lightly beaten

Steps:

  • In a small bowl, combine the mayonnaise, capers, lemon juice, 1/2 teaspoon mustard and 1/4 teaspoon pepper. 1 pound salmon or other cooked fish (16-oz can or 2 cups)
4 cups Kellogg's® corn flakes (crushed to 1 cup) divided or 1 cup Kellogg's® corn flake crumbs (divided)
2 eggs, slightly beaten
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons finely snipped parsley
3 tablespoons finely chopped onions

CAPER SAUCE
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons chopped capers
2 teaspoons caper juice
1 1/2 teaspoons grated onions
1/4 teaspoon salt
dash pepper

Steps:

  • 1. Drain salmon, reserving liquid. Remove skin, bone and flake. Set aside.2. In medium mixing bowl, combine salmon, 1/2 cup of the KELLOGG'S CORN FLAKES cereal, 1/4 cup salmon liquid, eggs, salt, pepper, parsley and the finely chopped onion. Mix thoroughly. Shape into 12 flat patties, 2 1/2-inches in diameter. Coat with remaining crumbs.3. In large fry pan or electric fry pan, place small amount of oil or shortening. 1/2 to 3/4 pound salmon fillets, preferably wild salmon
Sea salt and freshly ground black pepper
4 garlic cloves, finely chopped
1 teaspoon drained capers
4 ounces Italian roasted red peppers, cut into pieces
1/2 cup white wine
6 to 8 small new potatoes
1/2 head broccoli, cut into florets (about 2 cups)

Steps:

  • Preheat the oven to 450°F.
  • Spray the inside and lid of a cast-iron Dutch oven with olive oil.
  • Place the salmon in the bottom of the pot, skin side down. Spray the fillets lightly with olive oil, then season with salt and pepper to taste.
  • Sprinkle with the garlic and capers, scatter on the peppers, and add half the wine.
  • Pierce each potato multiple times with a fork and drop into the pot (if they are large, slice them into chunks). Season lightly with salt and pepper.
  • Add the broccoli and arrange to fit snugly inside the pot. Pour in the rest of the wine.
  • Cover and bake for 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.

1 salmon fillet (about 1 pound)
Juice 1/2 lemon
2 teaspoons fresh thyme leaves
3 tablespoons salt-packed capers, soaked for one hour and rinsed thoroughly
3 tablespoons fresh ginger, minced
2 tablespoons grape-seed or vegetable oil
Freshly ground pepper to taste
2 tablespoons chopped chives

Steps:

  • Pat the salmon dry with paper towels and rub with the lemon juice. Sprinkle with thyme leaves and set aside.
  • Dry the capers with a salad spinner. Heat the oil in a frying pan large enough to hold the salmon comfortably. Add the capers and ginger and saute for two minutes.
  • Add the salmon skin side down and cook for two minutes, using a spatula to prevent the skin from sticking to the bottom. Turn and brown on the other side. Stir the ginger and capers from time to time to prevent them from burning. Cook the fish to the desired degree and remove it to a heated serving dish. Spoon the capers and ginger on top. Season with pepper, sprinkle with chives and serve.

1 lb salmon fillet
1 pinch salt and pepper, freshly ground
3/4 cup dry white wine
1/4 teaspoon nutmeg, grated
1 pinch cayenne pepper
1 cup unsalted butter
1 tablespoon capers
1 tablespoon vinegar, from the capers

Steps:

  • Cut the salmon into 1/2in cubes, sprinkle with salt and allow it to stand for 20 minutes.
  • Wash the salt off in cold water and dry well with kitchen paper.
