POTATO AND SPINACH CROQUETTES
Yummy fried croquettes are made with potatoes, spinach and Parmesan cheese.

- Place the potatoes into a saucepan and fill with enough water to cover. Bring to a boil, then reduce the heat and simmer until tender enough to easily pierce with a fork. Drain and toss gently over low heat for a minute to completley dry out. Press them through a sieve or just mash with a potato masher until smooth. Season with salt, pepper and nutmeg. Mix in the butter and egg yolk, then spread out on a tray to cool.
- Preheat the oil in a deep-fryer to 365 degrees F (180 degrees C). The oil is the proper temperature when a cube of bread browns in about 15 seconds.
- In a large bowl, mix together the Parmesan cheese and spinach. Blend in the mashed potatoes. On a floured surface, using floured hands, roll small handfuls of the mixture into cylinders about 3/4 inch thick and 2 1/2 inches long. Tap the ends to flatten.
- Season 1/2 cup of flour with salt and pepper and place on a tray. In a shallow bowl, whisk together the eggs and peanut oil. Place the bread crumbs into a separate shallow bowl. Roll the croquettes in seasoned flour, then dip into the egg and then coat with bread crumbs.
- Fry the croquettes a few at a time, so they have some room in between, until golden brown, 5 to 6 minutes. Carefully remove from the oil using a slotted spoon and drain on crumpled paper towels.

SPINACH CROQUETTES

Steps:
- Set a large pot of water to boil and salt it.
- When it boils, add the spinach and onion and cook for just about a minute, until the spinach wilts.
- Drain thoroughly and cool a bit.
- Squeeze dry. Chop spinach and onion and place in large bowl, along with the eggs, cheese and breadcrumbs.
- Mix well, then add salt and pepper.
- Form the spinach mixture into small croquettes, about 1/4 each for a total of 16. Let stand 5 to 10 minutes before frying. Let come to room temperature before cooking.
- Place oil and butter in large nonstick skillet over medium-high heat in batches (so they won't touch each other when they cook), add croquettes to the skillet.
- Adjust heat so they brown without burning, about 3 - 4 minutes; turn and brown other side, about 3-4 minutes.
- Continue until all the croquettes are cooked. Serve hot or at room temperature.
- They can be cooked ahead, cooked and refrigerated and then reheated in a 250F oven until just warmed.

- Combine spinach, flour, sparkling water, eggs, Parmesan cheese, baking powder, garlic, vinegar, salt, and black pepper together in a bowl until batter is evenly combined.
- Heat enough oil to cover the bottom of a large skillet over medium heat. Spoon batter into the hot oil, keeping about 1 inch between each croquette. Cook until golden brown, about 90 seconds per side. Repeat with remaining batter.

- In a large skillet, heat the olive oil over medium heat. Add the onion and, if using, the garlic and sauté until soft and translucent, about 5 minutes. Remove from the heat and add the spinach, bread crumbs, salt, pepper, and, if using, the nutmeg. Stir in the eggs. If the mixture is too loose, add a little more bread crumbs. The mixture can be stored in the refrigerator for a day.
- Shape the spinach mixture into patties. In a large skillet, heat a thin layer of oil over medium heat. In batches, fry the patties, turning, until golden brown, about 3 minutes per side. Drain on paper towels. Serve warm, accompanied with lemon wedges.

- Bring 1/2 cup water to a simmer over medium-high heat in a large skillet or saucepan. Add spinach, cover, and cook until wilted and tender, 2 to 3 minutes. Drain in a colander. When cool enough to handle, squeeze out as much moisture as possible with your hands (or use a ricer to press out excess). Coarsely chop spinach and transfer to a large bowl.
- Heat oil in a medium heavy-bottomed skillet, such as cast iron, over medium. Add onion and cook, stirring occasionally, until tender but no color has developed, about 6 minutes. Transfer to bowl with spinach and let cool completely.
- Stir in flour, egg, nutmeg, 2 teaspoons salt, and 1/4 teaspoon pepper. Fold in feta. Form mixture into golf-ball-size rounds, then flatten slightly into 1-inch-thick patties. Transfer to a parchment-lined tray and refrigerate until cold, at least 2 hours or, loosely covered, up to 1 day.
- Pour a scant 1/2 inch oil into skillet. Heat over medium until oil shimmers and bubbles form instantly around a breadcrumb dropped in (350°F on a deep-fry thermometer). Working in batches, fry, flipping once and adjusting heat as needed to maintain a level temperature, until crisp and golden brown, about 5 minutes.
- Drain on a wire rack set over a rimmed baking sheet; keep warm in a preheated 200°F oven while frying the rest. Serve warm, with dipping sauces.

- Dry roast 2 tbsp of pine nuts in a small fry pan under a medium heat for 3 to 4 minutes, make sure to mix them continuously so they cook evenly and don´t burn, then set aside
- Heat a large pan with a medium heat, add in a 1/4 cup of cold water and 300 grams / 10 ounces of bagged spinach, place a lid on the pan and steam for 4 minutes, then remove the lid and turn off the heat, mix the spinach so it´s all welted, transfer the spinach to a sieve with a bowl underneath and using a spoon push down on the spinach to remove any of the excess water, then add the spinach to a cutting board and finely chop as best as you can
- Heat a frying pan with a medium heat and pour in 2 tbsp extra virgin olive oil, 2 minutes later add in a 1/4 cup of finely diced onions and 2 minced garlics, mix with the olive oil, 3 minutes later add the spinach into the pan, the toasted pine nuts and season generously with sea salt & black pepper, mix together until well combined, then add in a 1/4 cup of all-purpose flour, a little at a time and mix together, once the flour is incorporated, add in a 1/4 cup of milk, again, a little at a time while you continue to mix, once all the milk has been incorporated compact the mixture, then add to a bowl, cover with seran wrap and add to freezer for 10 minutes
- Meanwhile, add a generous portion of plain breadcrumbs to a bowl, season with sea salt and mix together, in another bowl crack in 1 large egg, pour in 1 tbsp of milk, season with sea salt and whisk together
