Wild salmon has less saturated fat, fewer calories, and 5 to 10 times fewer contaminants and persistent organic pollutants (POPs) than farm-raised (in early studies, POPs have been linked to impaired brain development, type 2 diabetes, and obesity). There's no need to give up all farmed salmon, and eating some is always better than none. Aim to eat at least 1 to 2 servings of omega-3-rich fatty fish weekly.

1/4 cup toasted walnuts, divided
2 1/2 tablespoons extra-virgin olive oil, divided
1 ounce grated fresh Parmigiano-Reggiano cheese (about 1/4 cup), divided
1 1/2 tablespoons fresh lemon juice
1 tablespoon white balsamic vinegar
2 teaspoons honey
2 teaspoons Dijon mustard
1 teaspoon water
1 teaspoon minced fresh garlic
1/2 teaspoon kosher salt, divided
4 (6-oz.) wild salmon fillets (about 1 in. thick)
1/4 teaspoon freshly ground black pepper
4 cups baby kale
4 cups baby spinach
1 cup thinly sliced ripe pear

Steps:

  • Preheat oven to 425°F.
  • Finely chop or grind 2 tablespoons walnuts. Combine finely chopped walnuts, 2 tablespoons olive oil, 2 tablespoons cheese, and next 5 ingredients (through 1 teaspoon water) in a small bowl. Add garlic and 1/4 teaspoon salt, stirring with a whisk.
  • Sprinkle salmon with remaining 1/4 teaspoon salt and pepper. Heat a large cast-iron skillet over high. Add remaining 1 1/2 teaspoons oil to pan; swirl to coat. Add salmon, skin side down; cook 3 minutes or until skin begins to brown, gently pressing fillets. Place pan in oven (salmon should still be skin side down). Bake for 4 to 5 minutes or until desired degree of doneness.
  • Combine kale, spinach, and pear in a large bowl. Add 4 tablespoons dressing; toss to coat. Divide kale mixture evenly among 4 plates, and sprinkle evenly with remaining 2 tablespoons cheese and remaining 2 tablespoons walnuts. Top each salad with 1 fillet. Drizzle fillets evenly with remaining dressing.

Four 5-ounce center-cut salmon fillets (about 1-inch thick)
3 tablespoons fresh lemon juice
3 tablespoons olive oil
Kosher salt
1 bunch kale, ribs removed, leaves very thinly sliced (about 6 cups)
1/4 cup dates
1 Honeycrisp apple
1/4 cup finely grated pecorino
3 tablespoons toasted slivered almonds
Freshly ground black pepper
4 whole wheat dinner rolls

Steps:

  • Bring the salmon to room temperature 10 minutes before cooking.
  • Meanwhile, whisk together the lemon juice, 2 tablespoons of the olive oil and 1/4 teaspoon salt in a large bowl. Add the kale, toss to coat and let stand 10 minutes.
  • While the kale stands, cut the dates into thin slivers and the apple into matchsticks. Add the dates, apples, cheese and almonds to the kale. Season with pepper, toss well and set aside.
  • Sprinkle the salmon all over with 1/2 teaspoon salt and some pepper. Heat the remaining 1 tablespoon oil in a large nonstick skillet over medium-low heat. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on one side, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch, about 3 minutes more.
  • Divide the salmon, salad and rolls evenly among four plates.

1 pound haricots verts (very thin string beans)
2 limes
1/4 cup fresh rosemary leaves
1/8 cup fresh tarragon leaves
1/4 cup fresh cilantro leaves
3 tablespoons stone-ground mustard
1/8 cup rice wine vinegar
1 tablespoon chopped fresh ginger
1/2 cup grapeseed oil (or your choice of olive or canola oil), plus 1/4 cup
1/8 cup bottled water
2 tomatoes, seeds removed and finely diced
1 medium red onion, finely diced
Six 6-ounce salmon fillets, skin on
Salt and pepper or adobo seasoning

Steps:

  • First blanch the haricots verts in salted boiling water until al dente (or cooked to your liking). Once this is done, drain the beans into a strainer or colander and then they should be shocked by dunking the strainer of beans into a waiting bowl of ice water to stop the cooking process, which will also help them retain a great color. Drain and set aside in refrigerator until needed.
  • Place 1 of the limes in a small microwave-safe bowl and microwave it until the essential oils in the skin are released. These limes will be hot coming from the microwave, so you can let them cool before squeezing them. Turn on the blender and through the feed tube, add the rosemary, tarragon, cilantro, stone-ground mustard, rice wine vinegar, and fresh ginger, and blend together until a smooth paste has formed. At this point the limes should be cool enough to squeeze. With the power on, add the lime juice through the blender feed-tube, and then very slowly add the oil and water until the mixture thickens and can coat the back of a spoon. Adjust the seasoning with salt and pepper. Set aside in refrigerator until needed. (When chilled, the dressing should resemble something like mayonnaise.)
  • Reserve some of the dressing to drizzle on the plate later. Then, mix the beans, tomato, and onions with the dressing (adjusting the amount to your preference) and refrigerate for only a couple of hours. (Don't mix too far ahead, because the salad ingredients will bleed and you will have a very runny dressing).
  • Heat a large saute pan or heavy skillet for about 3 minutes over high heat. Season the salmon fillets with your choice of seasoning. Add the oil carefully, a little bit at a time, to the pan swirling it around to coat the sides. Place the salmon, flesh side down, and leave untouched for about 3 minutes. (Do not shake the pan! You are trying to get the fish's natural sugars to come to the surface in this browning process.) After about 3 minutes, use a spatula to turn the fish over and cook the other side. The fish will cook quickly, although cooking time will vary according to the thickness of the fillet. Do not overcook it. When you touch the flesh and it springs back, it is done. Remove the fish to a platter and let it rest for a couple of minutes. This rest time is very important; it will allow the juices to flow back into the fish. (Don't worry, it won't get cold!)

2 teaspoons Dijon mustard
2 garlic cloves, minced (about 2 teaspoons)

2 tablespoons freshly squeezed lemon juice
1/2 teaspoon black pepper, plus more to taste
1/4 cup thinly sliced shallot (from 1 large shallot)
1 small grapefruit
2 to 3 navel oranges, blood oranges or Cara Cara oranges, or a combination (about 1 1/2 pounds total)
4 (6-ounce) skin-on salmon fillets
2 to 3 ounces baby arugula (about 4 cups)
1/2 medium fennel bulb, trimmed, cored and very thinly sliced crosswise
1 ripe avocado, halved, pitted, peeled and thinly sliced
1/4 cup shelled, roasted salted or unsalted pistachios, chopped

Steps:

  • Make the glaze for the salmon: In a small bowl, whisk 2 tablespoons olive oil with the orange juice, mustard, half the chopped garlic and 1/4 teaspoon salt. Set aside.
  • Make the salad dressing: In another small bowl, whisk together 2 tablespoons olive oil with the lemon juice, 1/2 teaspoon salt and 1/2 teaspoon pepper. Stir in the shallots and the remaining garlic, then set aside.
  • Using a small serrated knife, peel the grapefruit and oranges and trim to remove any remaining pith. Slice all the peeled fruit crosswise into thin circles (no larger than 1/2-inch thick); remove the seeds and set aside.
  • Heat a 12-inch cast-iron or heavy stainless-steel skillet over medium-high until it's extremely hot (a drop of water flicked onto the pan should turn to steam almost immediately), about 3 minutes. Meanwhile, pat the salmon fillets dry using paper towels, brush both sides with olive oil, and season all over with salt and pepper.
  • When the pan is ready, cook the salmon fillets skin-side down over medium-high without moving until the salmon skin releases easily from the pan, 3 to 4 minutes. Using a pair of tongs or a spatula, wiggle the fillets to loosen the skin from the bottom of the pan, then carefully flip. Lower the heat to medium and cook until the salmon is cooked through but still slightly rare in the center, 4 to 5 more minutes, depending on the thickness of the fillets.
  • Transfer to a rimmed plate or serving dish, and brush the glaze all over the salmon, making sure to coat the fillets.
  • Combine the arugula and fennel in a large bowl. Pour the dressing over the salad and toss well. Add the avocado, citrus rounds and pistachios, and toss gently. Transfer to a shallow serving bowl or platter and serve alongside the salmon.

Pan-Seared Salmon Pasta with Spinach Recipe - (4/5) image

8 oz salmon fillet
5 oz fresh spinach (half a bag)
1 cup heavy cream
Small handful of parsley
3 tablespoons of butter
1/2 pound of pasta (half a box)
Zest of one lemon
Salt and Pepper to taste

Steps:

  • First things first, fill a large pot with water, salt it, and turn it on high for the pasta. This recipe doesn't take that much time, so having the water ready will avoid aimless standing in the kitchen. Melt some butter in a pan over medium-high. Once the butter has completely melted, foams, and just begins to take on a brown shade, take the fish and place it in the pan flesh side down. Since the salmon is going to be broken up into the pasta, there's no need to splurge for salmon steaks, which run you around twice the price. Sauté the fish for 3 to 4 minutes, or until the skin has nice coloring like in this beautiful picture. Cook for another 3 to 4 minutes until the middle has lost much of its redness. Don't worry too much, since the fish will be placed into the sauce later in the recipe and will finish cooking if need be. You're developing a nice crust in this stage. When ready, remove the fish and place it on a cutting board. Remove the zest from one lemon. This can be done in various ways, but we just use a microplane cheese grater. Vegetable peelers work, too--make sure to use only the yellow skin and not the bitter white layer beneath it. Finely chop a handful of parsley. Wash the spinach in a colander. Place a little more butter in the same pan as you cooked the fish, and throw in the spinach. It will seem like an absurd amount of spinach, but it will dramatically shrink in a few moments. Once it has condensed by half, throw in the lemon zest. Now is a good time to check the pot of boiling water, as the rest of the recipe will be done in 10 minutes. If ready, throw in the pasta. Once the spinach looks wilted, pour the heavy cream into the pan and let it reduce for a few minutes, depending on how far along your pasta is. Meanwhile, remove the skin from the back of the fish. It is surprisingly easy to remove once it has been cooked. You can use a fork or a knife, but it is honestly much easier to peel back with your fingers. Get all of it completely off. Flake the fish with two forks. While the meat is tender and can easily be forced apart, try to feel with the forks for the parts that will separate naturally. This will make the chunks stay together better in the pasta. Place the salmon back into the pan, then toss in a whole handful of finely chopped parsley. Drain the cooked pasta, and dump it into the pan. Toss it with a pair of tongs and serve right away.

  • Combine spinach, red bell pepper, mushrooms, strawberries, and reserved vinaigrette in a large bowl. Toss to combine. Remove skin from salmon and flake.
  • Divide salad among individual plates, top with flaked salmon, and garnish with chopped pecans and crumbled bacon.
