Gambas al Ajillo, Spanish Garlic Shrimp image

Any shrimp will do here, but I love this with spot prawns. You want lots of garlic, a little chile, and enough lemon to balance out the olive oil. This recipe is best done with shell-on shrimp that you peel at the table, but you can do it with peeled and deveined shrimp, too.

1/4 cup olive oil
1 to 2 pounds large shrimp, preferably spot prawns
Salt
4 to 6 cloves garlic, roughly chopped or sliced thin
1 or 2 small, hot chiles, sliced thin, (or 2 dried, hot chiles, crumbled)
Juice of a lemon

Steps:

  • Heat the olive oil in a large saute pan over high heat. When it just barely begins to smoke, add all the shrimp and toss to coat with the oil.
  • Add the garlic, chile and salt the pan well. Cook over high heat, tossing and/or stirring, until all the shrimp just barely turn pink, about 2 minutes, tops. Toss with the lemon juice and serve at once.

½ cup butter
2 pounds frozen medium shrimp
2 tablespoons garlic powder, or more to taste
¼ cup water
2 tablespoons cornstarch
salt and ground black pepper to taste

Steps:

  • Melt butter in a large skillet or wok over medium-low heat. Add shrimp; cook and stir until shrimp turn pink, about 5 minutes. Mix in garlic powder.
  • Whisk water and cornstarch together in a bowl to make a slurry. Pour into the skillet and stir until butter sauce thickens, 3 to 5 minutes. Season with salt and pepper.

Spot Prawn Recipe: Butter Garlic Shrimp image

This decadent Alaska spot prawn recipe features shrimp cooked in an easy butter garlic sauce. Ready in minutes!

1 pound spot prawns, thawed + shells removed (Or use another variety of shrimp)
1 teaspoon Italian seasoning (Or use your favorite dried herb mixture, such as Herbes de Provence)
1 teaspoon garlic powder
¼ teaspoon sea salt (Skip if using salted butter)
4 ounces unsalted butter
1 lemon, juiced
1 tablespoon capers (optional)
1 tablespoon fresh herbs, torn or chopped into small pieces if needed (optional) (I used thyme and chopped chives)

Steps:

  • Add the shrimp to a bowl and toss with the Italian seasoning, garlic powder and salt. Set aside.
  • In a large pan, melt the butter over medium heat. Once the butter melts (but before it browns), add the shrimp in a single layer.
  • Cook the shrimp for 1-2 minutes per side, until both sides are opaque and pink.Remove the shrimp from the pan and place them in a serving dish (if using).
  • Add the lemon juice and capers (if using) to the pan, and simmer for about a minute. Spoon the melted butter mixture over the shrimp. Top shrimp with fresh herbs (if using) and serve immediately.
