GAMBAS AL AJILLO, SPANISH GARLIC SHRIMP
Any shrimp will do here, but I love this with spot prawns. You want lots of garlic, a little chile, and enough lemon to balance out the olive oil. This recipe is best done with shell-on shrimp that you peel at the table, but you can do it with peeled and deveined shrimp, too.

Steps:
- Heat the olive oil in a large saute pan over high heat. When it just barely begins to smoke, add all the shrimp and toss to coat with the oil.
- Add the garlic, chile and salt the pan well. Cook over high heat, tossing and/or stirring, until all the shrimp just barely turn pink, about 2 minutes, tops. Toss with the lemon juice and serve at once.

GARLIC BUTTER SHRIMP
Steps:
- Melt butter in a large skillet or wok over medium-low heat. Add shrimp; cook and stir until shrimp turn pink, about 5 minutes. Mix in garlic powder.
- Whisk water and cornstarch together in a bowl to make a slurry. Pour into the skillet and stir until butter sauce thickens, 3 to 5 minutes. Season with salt and pepper.

- Add the shrimp to a bowl and toss with the Italian seasoning, garlic powder and salt. Set aside.
- In a large pan, melt the butter over medium heat. Once the butter melts (but before it browns), add the shrimp in a single layer.
- Cook the shrimp for 1-2 minutes per side, until both sides are opaque and pink.Remove the shrimp from the pan and place them in a serving dish (if using).
- Add the lemon juice and capers (if using) to the pan, and simmer for about a minute. Spoon the melted butter mixture over the shrimp. Top shrimp with fresh herbs (if using) and serve immediately.
