Steps:
- In a large nonstick, deep-sided saute pan, heat the olive oil over medium-high heat. Add the onions and saute until just starting to get soft and translucent, about 5 minutes. Add the cauliflower and stir well. Cover and lower the heat, letting the cauliflower steam until almost fork-tender, about 5 minutes. Remove the cover; raise the heat to medium to evaporate most of the cooking liquid. Add a splash more olive oil and the garlic and brown over medium-high heat until the cauliflower is crisp-tender, about 5 minutes. Add the pasta and toss together to combine.
- Add the bread crumbs and cheese and stir well to coat, slightly browning the crumbs, about 2 minutes.
- Season with salt and pepper, to taste. Add more cheese, if desired. Serve with crusty Italian bread and butter.
PORTERHOUSE AND POTATOES ALLA MAMMA

- Preheat oven to 350 degrees F.
- To make the potatoes, in a small bowl mix the bread crumbs, 1/2-cup olive oil, and a pinch of salt and pepper together.
- Cover potatoes generously with bread crumb mixture. Place slices on a sheet pan and cook potatoes for 1 hour. After an hour, remove from the oven and sprinkle shredded mozzarella and grated Parmesan on top of the potatoes.
- To make the steaks, preheat the broiler. Put the steaks in the broiler pan and coat on both sides with the olive oil, oregano, onion powder, and garlic powder. Season the steaks generously with salt and pepper.
- Broil the steaks for 5 minutes, then turn, and cook the second side for an additional 3 to 5 minutes. Remove and let rest while you finish the potatoes.
- Adjust the oven temperature to 400 degrees F and put the potatoes back in. Cook until the cheese is melted and beginning to brown, about 3 minutes. Squeeze a half of lemon on each steak and serve with the potatoes.

Steps:
- Preheat oven to 275.
- Combine flour, salt, and pepper.
- Sprinkle steak with flour mixture.
- Brown meat on both sides in oil, remove from pan and place in prepared oven proof casserole dish.
- Combine tomatoes, green pepper, onion and garlic in blender or food processor and process until desired consistency.
- Pour over meat.
- Cover and cook in 275 degree oven for 1 1/2 -2 hours or until tender.
- Serve the tomato gravy over rice.

Steps:
- Mix Marinade ingredients in a large Zip Lock bag, mix well.
- Add Steak.
- Refrigerate for 24 hours, turning the bag each time you open the fridge or at least 6 times to keep all sides in the marinade.
- Remove steak, reserving the Marinade.
- Place steak on a greased BBQ grill over medium heat.
- Brush occasionally with Marinade.
- BBQ 4-5 min each side for medium rare or until it is cooked to your liking.
- Slice in thin slices, diagonally to serve.
