When my nephews Nic and Stu came to the ranch to visit a few weeks ago, they worked cattle, built fence, hauled hay, mowed, weedeated, and passed out

2 lb. Tenderized Round Steak Or Cube Steak, Cut Into 1-inch Strips
1 c. Flour
1 tsp. Seasoned Salt
1/2 tsp. Black Pepper
1/4 tsp. Cayenne
3 whole Eggs
1 c. Milk
Canola Oil And Butter For Frying
2 c. Milk (additional)
Salt And Pepper, to taste

Steps:

  • Combine flour, seasoned salt, pepper, and cayenne in a dish. Whisk together milk and eggs in a separate dish. To bread the meat, first dredge in flour, then dip quickly in egg mixture, then put back into the flour to coat on both sides. Continue until all the meat is breaded. Heat canola oil with 2 tablespoons butter in a large skillet over medium to medium-high heat. Fry steak strips 4 or 5 at a time, turning midway through. When golden brown, remove from the pan to a paper towel-lined plate. Continue until all the meat is done. Cover loosely with foil to keep warm.To make the gravy, pour off all the grease from the pan. Add 1/4 cup of the grease back in, then sprinkle on 2 to 4 tablespoons of the flour mixture (or you can use fresh flour.) Whisk mixture till it becomes a paste (add more flour if you need to) and cook the paste over medium-low heat until it's deep golden brown. Pour in milk, whisking constantly. Allow the gravy to cook and thicken, whisking regularly and adding more milk if it seems too thick right off the bat. Season gravy with salt and pepper. Serve steak fingers with gravy and a salad. Yum!

Steak Fingers with Country Gravy: Crispy chicken fried steak strips, with ultra creamy white gravy for dipping. A dish that no one can resist!

2 pounds tenderized cube steak
1 1/2 cups all-purpose flour
3 tablespoons Cajun seasoning
2 teaspoons baking powder
3 1/4 cups milk, (divided)
3 large eggs
2 tablespoons Worcestershire sauce
5 tablespoons butter
Salt (and pepper)
Oil (for frying)

Steps:

  • Preheat the oven to 200 degrees F. Pat the cube steak thoroughly dry with paper towels. Then cut the steaks into strips approximately 1 to 1 1/2 inches wide and 3 to 4 inches long.
  • In a small bowl mix the flour, Cajun seasoning, and baking powder together. In another bowl, whisk together 3/4 cup milk, 3 eggs, and Worcestershire sauce. Place a large skillet over medium-high heat. Add enough oil to fill the skillet 1/4 inch deep.
  • Once the oil is between 350-375 degrees F, dip 6-8 steak strips in the flour mixture. Shake them off, then dunk the strips in the egg mixture. Shake off the drippings, then dunk back in the flour mixture. Shake off all excess flour. (Flour that falls off into the oil will burn and turn the oil dark.)
  • Gently place the strips in the hot oil and fry for 1-2 minutes per side. Use tongs to move the steak fingers to a paper towel lined plate. Add additional oil to the skillet if needed, and repeat with the remaining steak strips. Place the finished strips in the oven to keep warm.
  • Once all the steak fingers are fried, carefully wipe the skillet out with a paper towel. Place it back over medium heat and add the butter. Once melted, whisk in 1/4 cup of the remaining seasoned flour. Whisk until bubbling, then whisk in 2 cups of milk. Continue to whisk the gravy until it is thick. Taste, then season with salt and pepper as needed. Remove the gravy from heat. If the gravy starts to thicken too much, whisk in an additional 1/2 cup of milk.
  • Serve the steak fingers and warm country gravy together for dipping.

2 cups all-purpose flour
¼ teaspoon seasoning salt, or more to taste
salt and ground black pepper to taste
2 large eggs
2 tablespoons milk
2 (6 ounce) beef top sirloin steaks
1 cup vegetable oil for frying, or as needed
2 cups cold water
1 (2.64 ounce) package country gravy mix

Steps:

  • Pour flour into a mixing bowl and season generously with seasoning salt, salt, and pepper.
  • Whisk eggs and milk together in a separate bowl.
  • Place steaks on a cutting board between two layers of plastic wrap; beat with a meat tenderizer on both sides for 3 to 5 minutes.
  • Discard plastic wrap and sprinkle seasoning salt on top of steaks. Dip steaks in flour mixture until coated on both sides. Dip into egg mixture, then back into flour mixture a second time; steaks should be completely covered in flour on both sides. Sprinkle again with seasoning salt.
  • Fill a large skillet halfway with vegetable oil and heat to medium-high. Allow oil to heat to 375 degrees F (190 degrees C).
  • Fry steaks in the hot oil for 3 minutes per side. Remove to a paper towel-lined plate to drain.
  • While steaks are frying, stir water into gravy mix in 2-quart microwavable bowl. Microwave on high until thickened, stirring every minute, 4 to 6 minutes total.
  • Serve hot steaks with gravy.
