Steak Salad With Fish Sauce Dressing image

For this delicious dish, you only need to cook some steak and quickly prepare a salad. For the latter, you will need lettuce, cherry tomatoes, red and yellow, peas and radishes. Don't forget the special mixture of fish sauce and soy sauce, flavored with mint, lemon, and coriander.

1 tablespoon vegetable oil
7 ounces of round steak
1 red chili, sliced
2 coriander sprigs, chopped
1 teaspoon coriander seeds
1 teaspoon salt
1 teaspoon fish sauce
1 teaspoon soy sauce
1 tablespoon lemon juice
3 fresh mint leaves, chopped
1 lettuce head
2 ounces of cherry tomatoes, halved
2 ounces of yellow cherry tomatoes, halved or quartered
¼ cup peas
4 radishes, sliced

Steps:

  • Heat the vegetable oil in a skillet over medium heat, then cook the steak on both sides until golden brown. Set aside.
  • Add the red chili, chopped coriander, coriander seeds, and salt to a grinding mortar and crush them. Add the fish sauce, soy sauce, and lemon juice and grind more, adding the mint in the process.
  • Add the lettuce, red and yellow cherry tomatoes, peas, and radish slices to a bowl and lightly toss them. Add some of the fish sauce and soy sauce dressing and toss some more.
  • Slice the meat and serve together with the salad.

1tablespoon chopped garlic
1 tablespoon chopped shallots
1/2 cup corn kernels
2 blue foot mushrooms, sliced (substitute white mushrooms or shiitake mushrooms)
1 cup demi-glace
6 sun gold tomatoes, halved (substitute: any yellow cherry tomato)
6 sweet 100's tomatoes, halved
1 tablespoon whole butter
1 Idaho potato
1 cup raw spinach
1 red onion, julienned
A1 Ranch Dressing, recipe follows
8 ounces grilled sirloin steak
1 cup ranch dressing
1/4 cup A1 steak sauce
2 tablespoons pommery mustard
Salt and pepper

Steps:

  • Tomato mushroom sauce: Saute the garlic and shallots in olive oil until tender, about 4 minutes. Add the corn, mushrooms, and demi-glace and bring to a simmer. Reduce by 1/4. Add tomatoes and remove from heat. Swirl in whole butter and add salt and pepper, to taste.
  • Tom's Steak Fries: Place potato in salted, cold water and bring to a boil. Reduce heat and simmer for approximately 20 minutes. Drain and cool potato. Quarter and deep-fry until golden brown. Season with salt and pepper.
  • To assemble dish: Place grilled steak in the center of the dish. Spoon vegetables and sauce over the steak. Top with spinach and onion and drizzle with A1 dressing.
  • Mix together all of the ingredients, to taste.

Ingredient info: Harissa powder is a spice blend sold at Middle Eastern markets, specialty foods stores, and online at wholespice.com. If unavailable, combine 2 teaspoons ground coriander; 1 1/2 teaspoons ancho chile powder; 1 teaspoon each garlic powder, paprika, and cumin; 1/2 teaspoon salt; and 1/4 teaspoon cayenne pepper.

Steps:

  • Whisk 1/2 cup oil, lemon juice, and harissa in medium bowl. Season dressing with salt.
  • Prepare barbecue (high heat). Grill bell pepper quarters, skin side down, until skin is blackened all over (do not turn). Reduce heat to medium (if using gas grill) or let coals cool slightly (if using charcoal grill). Pour remaining 3 tablespoons oil onto rimmed baking sheet. Place eggplant rounds and zucchini on prepared sheet; turn to coat. Sprinkle vegetables with salt and pepper. Grill until charred in spots and cooked through, turning occasionally, about 10 minutes. Return vegetables to same sheet. Peel peppers. DO AHEAD: Dressing and vegetables can be made 2 hours ahead. Let stand at room temperature.
  • Line platter with lettuce. Cut eggplant rounds crosswise in half; arrange in concentric circles atop outside edge of lettuce, leaving center empty. Cut bell pepper and zucchini into 1-inch pieces; mound in center. Drizzle some of dressing over. Sprinkle with cilantro. Serve with lemon wedges; pass additional dressing.

450 grams (1 pound) sirloin steak, excess fat trimmed
Olive oil or groundnut oil, to drizzle
1 tablespoon fish sauce
2 baby gem lettuces, quartered
Bunch of spring onions, trimmed
Bunch of asparagus, woody ends snapped off
2 zucchini, thinly sliced lengthways
Bunch of cilantro, leaves picked
2 tablespoons roasted peanuts, roughly chopped
Juice of 1 lime
1 tablespoon fish sauce
1 teaspoon superfine sugar
2 tablespoons olive or groundnut oil
1 tablespoon sesame oil

Steps:

  • Put the steak in a dish with a drizzle of oil, the fish sauce and plenty of black pepper. Set aside.
  • Place a griddle pan over a high heat. Toss the vegetables in a little oil, then griddle them for 2 to 3 minutes on all sides, or until lightly charred. Tip into a serving dish.
  • Remove the steak from the marinade, add to the pan and griddle for 1 to 2 minutes each side. Remove from the pan and set aside to rest.
  • To make the dressing, put the lime juice, fish sauce and sugar into a bowl and whisk until the sugar has dissolved, then whisk in the oils.
  • Slice the steak into generous slices and arrange on top of the griddled veggies. Scatter with the cilantro leaves and peanuts, drizzle over the dressing and serve.

A vinaigrette can be as simple as an emulsion of oil and vinegar, but a memorable one carries flavors that hint at the season. This one, featuring charred tomatoes, is perfect for summer. Blistering fresh tomatoes deepens their acidic sweetness. Made with sherry vinegar and olive oil, the dressing is at once earthy and bright.

Number Of Ingredients 7

1 pound tomatoes (about 3 medium) or 2 pints cherry tomatoes
1 shallot, peeled and minced
2 tablespoons sherry vinegar, plus more to taste
1/2 teaspoon red-pepper flakes (optional)
1/2 teaspoon kosher salt (Diamond Crystal), plus more to taste
1/4 teaspoon black pepper
1/4 cup extra-virgin olive oil

Steps:

  • Heat a broiler to high. Place the tomatoes on a sheet pan and broil until the skin is charred and peeling, about 6 minutes. Flip and char the other sides until the tomatoes are soft and begin to release some of their moisture, about 5 minutes. If using cherry tomatoes, blister without turning until the tomatoes char, collapse and release their moisture, about 10 minutes.
  • When the whole tomatoes are cool enough to handle, transfer them to a board and coarsely chop. (Skip this step if you used cherry tomatoes.) Transfer the tomatoes with their juices to a medium bowl. Add the shallot, sherry vinegar, red-pepper flakes, if using, and the salt and pepper. Stir in the olive oil. Taste and add more vinegar and salt if necessary.
  • Use immediately or refrigerate in an airtight container for up to 2 days. Serve as a dressing over cooked leafy greens, green salads, grain salads, roasted or grilled vegetables, meat and fish.

1 tablespoon medium-dry Sherry
2 teaspoons tamari soy sauce*
2 garlic cloves, minced
1 teaspoon (packed) brown sugar
1 1/4 pounds New York steak, trimmed, cut into 2/3-inch cubes
2 bunches watercress, bottom 2 inches discarded, cut into 1-inch lengths
3 cups mizuna leaves, torn in half if very large (about 1 1/2 ounces)
2 cups (lightly packed) torn Bibb lettuce leaves (about 6 large)
1 cup Thai basil leaves, cut into 1/2-inch-wide strips
1/2 12-ounce English hothouse cucumber, halved lengthwise, sliced very thinly on diagonal
12 cherry tomatoes
2 tablespoons vegetable oil
1/2 medium-size red onion, cut into thin wedges
2 shallots, sliced into thin rounds
1/4 medium pineapple, peeled, cored, halved lengthwise, cut crosswise into 1/3-inch-thick slices

Steps:

  • For dressing:
  • Whisk all ingredients in small bowl to blend.
  • For salad:
  • Mix oyster sauce, Sherry, tamari soy sauce, minced garlic, and brown sugar in medium bowl. Stir in steak. Marinate steak at least 30 minutes and up to 2 hours, stirring occasionally.
  • Combine watercress, mizuna, lettuce, basil, cucumber, and tomatoes in large bowl. Add half of dressing and toss to coat. Arrange greens mixture on large rimmed platter.
  • Heat oil in large nonstick skillet over high heat. Add onion and shallots and sauté 30 seconds. Add beef with marinade. Sauté until beef is brown outside but still pink inside, about 4 minutes. Add pineapple slices and stir until pineapple is heated through, about 1 minute longer. Spoon steak mixture with any pan juices atop dressed greens mixture on platter. Drizzle salad with remaining dressing and serve.

2 sprigs rosemary
5 garlic cloves, thinly sliced
1 1/4 pounds hanger steak
Coarse salt and ground pepper
1 medium eggplant, cut into 1/4-inch-thick slices
1 zucchini, cut into 1/4-inch-thick slices
1 yellow squash, cut into 1/4-inch-thick slices
1/2 pound cherry tomatoes on the vine, or plum tomatoes, halved
1 bunch scallions
1 sweet bell pepper (any color), cut into sixths, seeds and stem removed
2 tablespoons balsamic vinegar
1 1/2 teaspoons honey

Steps:

  • Heat a grill to medium-high. Clean and lightly oil hot grill. In a small ovenproof pot, combine oil, rosemary, and garlic and place on grill. Cook until oil begins to bubble, 2 minutes. Remove herb oil from heat and set aside 3 tablespoons in a small bowl.
  • Brush steak with herb oil, season with salt and pepper, and grill, turning occasionally, about 10 minutes per side for medium-rare (move steak to a cooler part of grill if it begins to overbrown). Transfer to a cutting board and tent with foil. Let rest 10 minutes before slicing thinly against the grain.
  • In batches, brush vegetables with herb oil, season with salt and pepper, and grill, turning occasionally, until tomato skins are split and vegetables are tender, 3 to 5 minutes total. Transfer to a serving platter, along with sliced steak. Add vinegar and honey to reserved oil and whisk together. Season to taste with salt and pepper, then drizzle dressing over steak and vegetables.
