STRAWBERRY, BLUEBERRY, RHUBARB CRISP
I love this simple dessert that is a cinch to pull together. It is amazing served slightly warm with a little scoop of vanilla ice cream...that starts to melt and mingle with the soft fruity juiciness...offset by the light tender crunch of the buttery brown sugared oatmeal topping...it just doesn't get any better! You probably have the topping ingredients on hand right now - just pick up some yummy fruit and you are good to go!

Steps:
- Preheat oven to 350 degrees F. Spray a 9x13 baking dish with non-stick spray and set aside. In a large mixing bowl, add the berries along with the sugar, lemon juice, and flour. Stir together until the berries are coated in the sugar and flour. Pour berries into baking dish and set aside.
- In another mixing bowl, add the flour, baking powder, sugar, cinnamon, and salt and stir together. Add the cubed butter and use your hands or a pastry blender to blend the butter in with the flour mixture until crumbly. Then beat in the egg and milk until combined (batter will be thick). Drop the batter in big spoonfuls on top of the berries, leaving the edge exposed. Use a knife to spread the tops of each spoonful into a more even layer (as pictured).
- Bake for approximately 40 minutes or until the berries are bubbling and the cobbler is golden brown (can insert toothpick in the cobbler topping to also ensure doneness). Serve warm with vanilla ice cream or whipped cream on top.

RECIPES
A little bit of marzipan adds flavour to a simple crumble topping, delicious spooned over fresh fruity strawberries and blueberries and served with vanilla ice cream. If you don't have individual crumble dishes, you can make the crumble in one large dish instead and cook for 30-35 minutes until golden. Keep an eye on the crumble as the marzipan can brown quickly, so loosely cover the top with foil if needed.

RIDICULOUSLY EASY BLUEBERRY CRUMBLE
This easy blueberry crumble with perfectly cooked blueberries topped with a buttery oat crumble is high on our list of favorites. There's no fancy equipment needed and you only need about 10 minutes of prep time. Before adding sugar to the filling, taste your berries. If they are already sweet, you might want to hold back on how much sugar you add.

Steps:
- Heat oven to 375 degrees Fahrenheit.
- Add blueberries, lemon juice, 2 tablespoons of flour, sugar, and pinch of salt to a 9-inch pie dish (or use a 2-quart baking dish). Toss well until combined.
- Combine flour, oats, sugar, and the salt in a medium bowl. Add the melted butter then stir until all the flour has been moistened by the butter and topping is crumbly.
- Sprinkle over blueberry filling. (We like to use our hands to do this. As we sprinkle, we press the crumbles together to create larger clumps of topping.)
- Bake 25 to 35 minutes until juices are thickened and the topping has turned light golden brown. Cool 10 minutes, and then serve.

- In a small bowl combine the chopped strawberries, raspberries, flour, and sugar. Stir together, gently, until all the berries are coated in the flour mixture. Let the berries sit while you prepare the crumble.* A tip for drying berries is to first rinse them in a colander, then lay out several layers of paper towels on the counter and put the rinsed berries on top the paper towels to dry. The berries don't have to be all the way dry but you want most the water out of them.
- Dump the bowl of berries into the prepared pan (juice and all if there is any) and layer the top evenly with the crumble.

- In an 8x8 casserole dish or equivalent, toss the strawberries and blueberries, arrowroot starch, lemon juice, and maple syrup until well-combined. Arrange in an even layer.
- In a large mixing bowl, combine the ingredients for the topping: coconut oil (it should be semi-solid), almond butter, almond flour, coconut sugar, flax meal, coconut, and sea salt. Work the crumble with your fingers or a fork until the mixture resembles pea-sized clumps. Spoon the topping over the berries—feel free to create quite a pile in the center, as some of it will sink down into the bubbling sauce.
- Transfer the baking dish to the oven and bake until the topping is golden brown, about 30 to 40 minutes. Serve warm with plant-based vanilla ice cream or coconut yogurt.
