Tired of regular or canned string beans? Here's an easy way to flavor up those veggies! Even my string bean hating roommate loves these!

2 tablespoons olive oil
1 pound fresh green beans, trimmed and snapped
garlic salt to taste
garlic powder to taste
ground black pepper to taste
dried minced onion
1 (16 ounce) jar marinated cocktail onions, with liquid

Steps:

  • Heat oil in a wok over high heat. Reduce heat to medium, and place beans in the wok. Cover, and cook 10 minutes, stirring occasionally. Season with garlic salt, garlic powder, pepper, and minced onion. When beans are almost tender, mix in cocktail onions with liquid. Continue cooking 5 minutes, until heated through.

PORTUGUESE SWEET BREAD

Number Of Ingredients 15

1/2 cup unbleached bread flour
1 tablespoon granulated sugar
2 1/4 teaspoons instant yeast
1/2 water, at room temperature
6 tablespoons granulated sugar
1 teaspoon salt
1/4 cup powdered milk
2 tablespoons unsalted butter, at room temperature
2 tablespoons vegetable shortening
2 large eggs
1 teaspoon lemon extract
1 teaspoon orange extract
1 teaspoon vanilla extract
3 cups unbleached bread flour
About 6 tablespoons water, at room temperature

Steps:

  • To make the sponge, stir together the flour, sugar, and yeast in a small bowl. Add the water and stir until all the ingredients are hydrated and make a smooth batter. Cover the bowl with plastic wrap and ferment at room temperature for 60 to 90 minutes, or until the sponge gets foamy and seems on the verge of collapse.
  • To make the dough, combine the sugar, salt, powdered milk, butter, and shortening in a 4-quart mixing bowl (or the bowl of an electric mixer). Cream together with a sturdy spoon (or the paddle attachment) until smooth, then mix in the eggs and the extracts. Knead by hand (or switch to the dough hook attachment) and mix in the sponge and the flour. Add the water, as needed, to make a very soft dough. The finished dough should be very supple and soft, easy to knead, and not wet or sticky. It will take 10 to 12 minutes with the electric mixer and close to 15 minutes by hand to achieve this consistency. (Dough with high amounts of fat and sugar usually take longer to knead because the gluten requires more time to set up.) The finished dough should pass the windowpane test (see NOTE below) and register 77 to 88 degrees F. Lightly oil a large bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.
  • Ferment at room temperature for approximately 2 hours, or until the dough doubles in size.
  • Remove the dough from the bowl and divide it into two equal pieces. Form each of the pieces into a boule. Lightly oil two 9-inch pie pans and place 1 boule, seam side down, in each pan. Mist the dough with spray oil and loosely cover the pans with plastic wrap.
  • Proof at room temperature for 2 to 3 hours, or until the dough fills the pans fully, doubling in size and overlapping the edges slightly. (If you only want to bake one loaf, you may retard the second in the fridge for 1 day, although it will take 4 to 5 hours to proof after it comes out of the refrigerator.)
  • Very gently brush the loaves with egg wash. Preheat the oven to 350 degrees F with the oven rack on the middle shelf.
  • Bake the loaves for 50 to 60 minutes, or until they register 190 F in the center. After 30 minutes, check the loaves and rotate 180 degrees, if necessary, for even baking. Because of the high amount of sugar, the dough will brown very quickly, but don't be fooled into thinking it is done. It will get darker as the center gradually catches up with the outside, but it will not burn. The final color will be a rich mahogany brown.
  • Remove the bread from the pie pans and place on a rack to cool. The bread will soften as it cools, resulting in a very soft, squishy loaf. Allow the bread to cool for at least 90 minutes before slicing or serving.

2 lbs green beans
3 tablespoons butter
2 medium sized onions, finely chopped
1/2 cup parsley, finely chopped
1 lb tomatoes, peeled seeded and chopped
1 tablespoon vinegar
1/2 teaspoon salt
pepper
1 dash nutmeg

Steps:

  • Cut the beans into 2 inch lengths and cook uncovered in plenty of salted boiling water until barely tender , about 10 minutes.
  • Drain and rinse under cold water and set aside.
  • Heat butter in a large skillet.
  • Add the onions and parsley and saute until lightly browned.
  • Add the tomatoes and simmer 15 minutes.
  • Add the beans , vinegar , salt. pepper and nutmeg and toss until beans are heated,
  • Serve immediately.

STRING BEAN "CASSEROLE" SALAD

Kosher salt and freshly ground black pepper
1 pound haricots verts, trimmed and cut into thirds
1 red bell pepper, seeded and sliced
1/2 cup apple cider vinegar
2 ounces dried porcini mushrooms
3 cloves garlic, smashed
8 sprigs fresh thyme
1 tablespoon Dijon mustard
4 tablespoons mushroom soaking liquid
2 tablespoons olive oil
1/2 cup French-fried onions, lightly hand-crushed (recommended: French's)

Steps:

  • Fill up a large bowl of water and a few handfuls of ice, set aside.
  • Bring a large pot of water to a rolling boil. Add a heavy pinch of salt, the green beans, and the bell peppers. Stir to dissolve the salt and cook the vegetables until bright and still crisp, just a few minutes. With a sieve or slotted spoon, remove the vegetables to the bowl of ice water to stop them from over cooking. Once the vegetables are cooled remove them to a paper towel-lined baking sheet and pat dry.
  • To prepare the mushrooms: In a small saucepot on medium heat add 2 cups of water, the vinegar, mushrooms, garlic, thyme, and 1 teaspoon salt. Stir to dissolve the salt, cover and cook on medium heat for 15 minutes. Turn off the heat and let it rest covered for 15 minutes more.
  • To make the vinaigrette: Whisk together the mustard, 4 tablespoons of the liquid the mushrooms are soaking in, and olive oil in a small bowl. Season with some salt and a grind or two of pepper.
  • Shake the excess liquid off the mushrooms and add them to a large bowl along with the cooked vegetables and the vinaigrette. Toss and serve with fried onions sprinkled over the top.

  • In a medium saucepan over medium heat, place the green beans with liquid and wine. Cook until heated through; drain.
  • Place the cheese in a microwave-safe bowl. Heat in the microwave on low or medium power in 1 minute intervals, until melted.
  • Scoop the melted cheese over the heated green beans, and season with minced garlic to serve.

1 garlic clove, minced
1/3 cup Italian style breadcrumbs

Steps:

  • Wash and trim fresh string beans.
  • Add string beans to a pot of boiling water.
  • Cook until soft and drain water.
  • In large frying pan, heat butter and olive oil over medium heat and add minced garlic.
  • Let garlic sautee in butter and oil until a light golden brown and add string beans.
  • Stir, coating all the string beans with butter and oil.
  • Sprinkle string beans with bread crumbs and stir, coating all of the string beans.
  • (If it's a little dry add some more oil) Sprinkle with parmesan cheese, oregano, salt and pepper.
  • Serve immediately.
