2 small acorn squash (2 lb.)
1/4 cup plus 2 Tbsp. butter or margarine, divided
1 can (8 oz.) crushed pineapple in juice, undrained
hot water
1 pkg. (6 oz.) STOVE TOP Cornbread Stuffing Mix
1/2 cup chopped toasted pecans
1/2 cup raisins
2 green onions, sliced
1/2 tsp. pepper

Steps:

  • Heat oven to 350°F.
  • Cut squash crosswise into 1-inch-thick slices; arrange in single layer in 15x10x1-inch pan. Melt 2 Tbsp. butter; brush onto squash slices. Cover. Bake 15 min.
  • Cut remaining butter into small pieces; place in medium bowl. Drain pineapple, reserving pineapple and juice separately. Add enough hot water to reserved pineapple juice to measure 1-1/2 cups. Add to pineapple mixture; stir until butter is melted. Add stuffing mix, pineapple, nuts, raisins, onions and pepper; stir just until moistened. Spoon evenly over squash slices.
  • Bake 20 min. or until squash is tender and stuffing mixture is heated through.

Steps:

  • Slice the squash into one and one half inch rings. Remove seeds and strings and place on buttered nonstick baking sheet. Top with remaining butter, season with salt and pepper and bake at 375 degrees for approximately 25 minutes, turning once, so that the squash is cooked through and still retains its shape. Serve with cranberry relish.

2 acorn squashes
1 tablespoon olive oil, plus more for brushing and drizzling
salt, to taste
pepper, to taste
¾ cup wild rice, uncooked and rinsed
1 ¼ cups vegetable broth, plus 2 tablespoons, divided
½ teaspoon chili powder
¼ teaspoon ground cumin
1 ½ teaspoons maple syrup
5 oz cremini mushroom, quartered and sliced
5 oz shiitake mushroom, quartered and sliced
½ medium onion, chopped
2 cloves garlic, minced
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
¼ cup white wine
2 cups kale, chopped
2 tablespoons pomegranate seeds

Steps:

  • Preheat the oven to 375°F (190°C).
  • Place the acorn squash stem-side up on a cutting board and cut in half. Scoop out the seeds and pulp, and transfer to a bowl. Separate the seeds from the pulp. Set aside.
  • Set the squash halves cut-side up on a baking sheet. Brush with olive oil and sprinkle with salt and pepper. Bake for 40 minutes, or until almost cooked through.
  • In a small pot, combine the wild rice and 1¼ cups (300 ml) vegetable broth, and bring to a boil. Once boiling, cover and reduce the heat to low. Simmer for 45 minutes, or until the liquid is absorbed and the rice is tender.
  • Rinse the squash seeds and dry on a dish towel (some residual moisture is okay). Transfer to a small bowl and add the chili powder, cumin, salt, and maple syrup. Mix until well-coated.
  • Remove the squash from the oven and move to one side of the baking sheet. Using parchment paper, make a tray for the squash seeds. Spread the squash seeds on the tray.
  • Bake for 15 minutes, stirring halfway through, until the squash is completely tender and the seeds are crispy.
  • Heat the olive oil in a large skillet over medium heat. Once the oil begins to shimmer, add the mushrooms and cook for 6-8 minutes, until they've released a good amount of liquid.
  • Add the onion and cook for 3-4 minutes, until semi-translucent. Add a drizzle of olive oil and the garlic, rosemary, and thyme, and cook for 3-4 minutes, until fragrant. Deglaze the pan with the white wine and cook until most of the liquid has evaporated.
  • Add the kale, salt, and pepper, and cook until the kale wilts and reduces in volume by about ¼. Add the remaining 2 tablespoons of vegetable broth and cook until kale is almost completely wilted and most of the liquid has evaporated. Stir in the wild rice and remove from the heat.
  • Fill each squash half with the mushroom mixture and garnish with the squash seeds and pomegranate seeds. (Save leftover squash seeds for snacking!)

  • Preheat Oven to 375. Arrange squash slices on pan (use aluminum foil to cover whole pan before placing squash down) Melt 2 tbs. butter and brush on the squash slices. Cover with foil and bake for 15 min. -Meanwhile... Cut the remaining 1/4 cup butter into small pieces and place in medium bowl. Drain the pineapple and reserve the juice. Add enough hot water to pineapple juice to equal 1/4 cups. Add juice mixture to butter and stir until butter is melted. -Add the pineapple, stuffing mix, pecans, raisins, scallions, and pepper. Stir just until the mixture is moistened. Spoon evenly over the hot squash slices. Top everything off with butter juice.   • Melt butter in heavy medium nonstick skillet over medium heat. Add bell pepper and green onions; sauté until tender, about 3 minutes. Transfer to large bowl; cool. 4 small acorn squashes
1/2 cup bulgur wheat
1 cup cooked brown rice
1/4 cup chopped, roasted, unsalted cashews
1/2 medium yellow onion, minced
1/2 -inch fresh ginger root, peeled and minced
1 clove garlic, minced
1/2 sweet red pepper, minced
1/2 sweet green pepper, minced
1 small jalapeno pepper, finely sliced
1 tablespoon olive oil
2 tablespoons tomato paste
8 tablespoons low-fat yogurt
Salt and freshly ground black pepper to taste
1 teaspoon mixed ground spices
Grind 4 or 5 cardamom seeds
1/2 teaspoon coriander seeds
A small piece of cinnamon stick
6 cloves cinnamon

Steps:

  • Preheat the oven to 350 degrees. Pierce each squash with a fork in a dozen places and roast for about 1 hour. Remove the squashes from the oven, let them cool slightly and then cut each one in half and scoop out the seeds.
  • Place the bulgur wheat in a bowl and add 1 1/2 cups of boiling water. Set aside to soften for at least 30 minutes.
  • Drain the bulgur wheat and combine it in a bowl with the rice, cashews and spices. Mix well and set aside.
  • Saute the onion, ginger, garlic and peppers in the olive oil over medium-low heat until they are soft but not brown.
  • Add the bulgur wheat mixture to the saute pan and continue to cook over medium-low heat for 3 to 4 minutes. Mix in the tomato paste and add 2 tablespoons of yogurt. Remove from heat and stir until the yogurt is thoroughly incorporated. Then add the rest, 2 tablespoons at a time. Taste and season with salt and pepper if desired.
  • Turn the oven up to 400 degrees. Mound about 4 or 5 tablespoons of stuffing in each squash half. Place the squashes on a cookie sheet and drizzle a little olive oil over them. Bake for 20 minutes, or until both stuffing and squashes are lightly browned. Serve immediately.

1/2 cup breadcrumbs, soft whole grain
2/3 cup low fat cottage cheese

2 teaspoons curry powder
1 teaspoon coriander
3 tablespoons apple juice concentrate

1/8 teaspoon pepper

2 cups cooked stuffing
1/4 cup grated Parmesan cheese, optional
1 teaspoon paprika
Chopped fresh parsley, optional

Steps:

  • Cut squash in half; discard seeds. Place cut side down in a 15x10x1-in. baking pan; add 1/2 in. hot water. Bake, uncovered, at 400° until tender, about 30 minutes. , When squash is cool enough to handle, scoop out flesh, leaving a 1/4-in. shell (flesh will measure about 3 cups). Drain water from pan; place squash shells cut side up in pan and set aside. , In a large bowl, combine the flesh, egg, salt and pepper. Dissolve bouillon in boiling water; add to squash mixture. BAKED STUFFED ACORN SQUASH

This makes a substantial vegetarian - or vegan if you leave out the cheese - Thanksgiving main dish. It is another riff on the native American tradition of the Three Sisters - corn, beans, and squash. I used acorn squash here, and it serves as a vessel for the sweet and pungent bean, corn and tomato filling. Acorn squash comes in various sizes; the larger ones, which are sometimes all I can find, take almost an hour to soften and cook through; the finished squash can be cut in half or even into thirds if too big for one serving. With everything that comes on the Thanksgiving sideboard, that will probably be the case. I always bake the squash for about 20 minutes before cutting it in half; they soften up a little bit, which makes it much easier to cut.

4 large or 6 smaller acorn squash
3 tablespoons extra virgin olive oil, plus additional for basting
1 medium onion, finely chopped
1 red pepper, diced
1 28-ounce can chopped tomatoes with juice, pulsed to a coarse purée in a food processor
2 tablespoons tomato paste
2 tablespoons mild honey, maple syrup or pomegranate molasses
2 tablespoons red wine vinegar, sherry vinegar or apple cider vinegar
Salt to taste
1/2 teaspoon cayenne
3 cups cooked pintos, black beans or red beans, or 2 cans, drained and rinsed
1 cup corn kernels
2/3 cup breadcrumbs
2 ounces / 1/2 cup Gruyère, grated

Steps:

  • Heat oven to 375 degrees. Place squash on a baking sheet and bake 20 minutes, until soft enough to easily cut in half. Wait until cool enough to handle (about 15 minutes), then cut in half (stem to tip) and scoop out seeds and membranes.
  • Meanwhile, heat 2 tablespoons of olive oil over medium heat in a large skillet and add onion. Cook, stirring often, until it begins to soften, about 3 minutes. Add red pepper and a generous pinch of salt and cook, stirring, until tender, about 5 minutes. Add tomatoes and tomato paste and cook, stirring often, until tomatoes have cooked down slightly, about 5 minutes. Add honey, maple syrup or pomegranate molasses, vinegar, salt and cayenne, and bring to a simmer. Simmer 8 to 10 minutes, until thick and fragrant. Taste and adjust seasonings. Stir in beans and corn and simmer another 5 minutes.
  • Oil 1 or 2 baking dishes or a sheet pan that will accommodate all the squash. Season cavities and cut sides of the squash with salt and pepper and brush with olive oil or melted butter. Fill with bean mixture. Mix together bread crumbs, Gruyère and remaining olive oil and sprinkle over the filling. Brush exposed edges of squash with oil. Place in the baking dish or on baking sheet and cover tightly with foil. Bake large squash for 45 minutes, check smaller squash after 30 minutes. The flesh should be easy to penetrate with the tip of a knife. Uncover and return to oven for 5 to 10 minutes, or until breadcrumbs and cheese are lightly browned. Serve hot or warm.
