STUFFED LYCHEE

Steps:

• Drain lychees.
• In small bowl of electric mixer, beat cream cheese with sherry and salt until mixture is smooth. Stir in remaining ingredients.
• Stuff lychees.

LYCHEE NUTS AND PINEAPPLE CHUNKS WITH MANGO SORBET

Steps:

• Combine nuts in syrup and diced pineapple. Chill until ready to serve dessert. Top dishes of pineapple and nuts with scoops of mango sorbet. Yummo!

STUFFED LYCHEE WITH HAMACHI CEVICHE

Steps:

• Scallop half shells
• Place scallop shells into the freezer. Pour lychees into a bowl and refrigerate. Remove white connective tissue from the fish. In a separate bowl, whisk remaining ingredients and mix fish in 30 minutes before serving. Refrigerate for 30 additional minutes
• The fish should be lightly dressed. Salt and pepper to taste and adjust for balance.

CREAMY LYCHEE JELLY

Steps:

• Combine 3 1/2 tablespoons cold water and gelatin in a small microwave-safe bowl; let stand until gelatin starts to dissolve, about 5 minutes. Warm the water in the microwave to dissolve the gelatin completely, 5 to 10 seconds.
• Bring 1/2 cup water to a boil in a small pot. Stir in rock sugar until dissolved. Stir in lychees and 1 1/4 cup reserved syrup.
• Combine gelatin mixture, lychee mixture, and 1 cup plus 1 1/2 tablespoons milk in a bowl. Pour into a container and chill until set, about 4 hours.

LYCHEE DELIGHT

Steps:

• Cut lychees in half. Soak goji berries in hot water in a bowl until softened, at least 5 minutes; drain.
• Bring 3 cups water to a boil in a saucepan; add agar-agar. Cook, stirring occasionally, until agar-agar is dissolved, about 5 minutes.
• Stir sugar into agar-agar mixture and cook until dissolved, about 5 minutes. Remove saucepan from heat and stir reserved lychee juice into agar mixture. Pour mixture into a ring mold and add lychees and goji berries. Refrigerate until firm, at least 3 hours. Cut into wedges.
