- Place scallop shells into the freezer. Pour lychees into a bowl and refrigerate. Remove white connective tissue from the fish. In a separate bowl, whisk remaining ingredients and mix fish in 30 minutes before serving. Refrigerate for 30 additional minutes
- The fish should be lightly dressed. Salt and pepper to taste and adjust for balance.

This is a Chinese dessert made by blending chopped lychees with gelatin, water, sugar, and full -fat milk. The result is a sweet and fruity jelly. It's delicious when served with evaporated milk.

- Combine 3 1/2 tablespoons cold water and gelatin in a small microwave-safe bowl; let stand until gelatin starts to dissolve, about 5 minutes. Warm the water in the microwave to dissolve the gelatin completely, 5 to 10 seconds.
- Bring 1/2 cup water to a boil in a small pot. Stir in rock sugar until dissolved. Stir in lychees and 1 1/4 cup reserved syrup.
- Combine gelatin mixture, lychee mixture, and 1 cup plus 1 1/2 tablespoons milk in a bowl. Pour into a container and chill until set, about 4 hours.

Steps:
- Cut lychees in half. Soak goji berries in hot water in a bowl until softened, at least 5 minutes; drain.
- Bring 3 cups water to a boil in a saucepan; add agar-agar. Cook, stirring occasionally, until agar-agar is dissolved, about 5 minutes.
- Stir sugar into agar-agar mixture and cook until dissolved, about 5 minutes. Remove saucepan from heat and stir reserved lychee juice into agar mixture. Pour mixture into a ring mold and add lychees and goji berries. Refrigerate until firm, at least 3 hours. Cut into wedges.
