This creamy vegan sun-dried tomato dressing comes together with just 5 ingredients in less than 5 minutes. It's flavor-forward with oil-packed sun-dried tomatoes, fresh garlic, dried oregano, and a (not so) secret ingredient that makes this dressing so smooth and yummy - while still being totally vegan!

1/2 cup oil-packed sun-dried tomatoes, drained
1/2 cup coconut milk
2 tablespoons olive oil (or oil from the sun-dried tomatoes)
1 teaspoon dried oregano
1 clove garlic
Kosher salt
fresh cracked pepper
splash of water

Steps:

  • Add sun-dried tomatoes, coconut milk, oil, oregano, garlic, salt, and pepper to a high-speed blender or food processor.
  • Blend until everything is finely minced and well combined. Add a splash or two of water to loosen it up until it reaches your desired consistency.
  • Serve with your favorite salads!

1/2 cup apple cider vinegar or 1/2 cup red wine vinegar
1 shallot
4 basil leaves
1 teaspoon chopped chives
1 garlic clove, crushed
1 teaspoon sugar (optional)
1/2 teaspoon salt
1/8 teaspoon fresh coarse ground black pepper
1/2 cup extra virgin olive oil

Steps:

  • Combine all ingredients except oil in a blender or food processor. Pulse until all tomatoes are finely chopped.
  • Add oil, a little at a time. Pulse until thick and well blended.

2 small shallots, peeled and quartered
1 garlic clove, peeled and halved
6 sun-dried tomatoes, chopped
6 brine-cured black olives, such as kalamata, pitted
3 tablespoons balsamic vinegar
1 tablespoon fresh thyme leaves or 1 tablespoon chopped fresh basil
salt & fresh ground pepper
3/4 cup olive oil

Steps:

  • With food processor running, drop shallots and garlic through feed tube and process until finely chopped.
  • Stop machine; add sun-dried tomatoes, olives, vinegar, thyme, salt and pepper; process until finely minced.
  • With machine running, slowly pour olive oil through feed tube and process until smooth.
  • Adjust seasonings and use immediately or cover and refrigerate.

1 lb fresh green beans, trimmed
2 tablespoons olive oil
1 tablespoon butter
2 garlic cloves, finely minced
1 cup fresh breadcrumb (I used whole wheat French sourdough bread)
2 tablespoons fresh curly-leaf parsley
2 tablespoons olive oil
2 tablespoons marinated sun-dried tomatoes, drained and chopped
1 tablespoon red wine vinegar
1 tablespoon water
1 teaspoon sugar
1 pinch salt

Steps:

  • Prepare salad dressing by combining all ingredients in blender and processing until smooth. Yield: 1/4 cup salad dressing.
  • In large pot of salted boiling water, blanch the green beans for 3-5 minutes or until bright green. Drain. Immediately plunge beans into bowl of ice cold water to halt the cooking process and to maintain their color. Let stand 10 minutes then drain well again.
  • In a large saute pan, heat the olive oil and butter on medium heat. Add the minced garlic. Cook for 1 minute, stirring constantly.
  • Add the bread crumbs. Cook mixture for 5 minutes, stirring constantly to brown evenly. Cook until bread crumbs are crisp and golden.
  • Stir in the parsley with the bread crumbs. Remove pan from heat.
  • Transfer drained green beans to shallow serving platter and drizzle dressing over the beans. Sprinkle with bread crumb mixture. Toss.
  • Serve either warm or at room temperature.
