1 stick unsalted butter, plus more for the pan
12 ounces bittersweet chocolate, chopped (or 2 cups bittersweet chocolate chips)
1 cup packed dark brown sugar
1/2 cup granulated sugar
4 large eggs
2 teaspoons pure vanilla extract
1 cup all-purpose flour
1 teaspoon ancho chile powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon finely grated orange zest
Pinch of ground cloves
1/2 cup heavy cream
2 tablespoons unsalted butter
2 tablespoons packed dark brown sugar
2 tablespoons light corn syrup
Pinch of salt
4 ounces bittersweet chocolate, chopped (or about 1/2 heaping cup bittersweet chocolate chips)
2 tablespoons unsweetened cocoa powder
1 tablespoon instant espresso powder
1/4 teaspoon cayenne pepper
Dulce de leche or vanilla ice cream, for serving

Steps:

  • Make the brownies: Preheat the oven to 325 degrees F. Butter a 10-inch ovenproof skillet; set aside. Combine the butter and chocolate in a medium saucepan over medium heat. Cook, stirring occasionally, until melted and smooth, 3 to 5 minutes. Whisk in the brown sugar and granulated sugar until incorporated. Set aside to cool slightly, then whisk in the eggs and vanilla. Whisk in the flour, chile powder, cinnamon, salt, orange zest and cloves until smooth. Pour the batter into the prepared skillet and bake until a toothpick inserted into the center comes out clean, 35 minutes. Let cool slightly.
  • Meanwhile, make the chocolate sauce: Combine the heavy cream, butter, brown sugar, corn syrup and salt in a medium saucepan. Cook, whisking, until melted and barely simmering, 3 to 4 minutes. Whisk in the chocolate, cocoa powder, espresso powder and cayenne until smooth and slightly thickened. Let cool slightly.
  • Cut the brownies into wedges. Top with ice cream and the chocolate sauce.

  • Heat oven to 350°F (325°F for dark or nonstick pan). Make brownies as directed. Cool at least 30 minutes. For 16 brownies, cut into 4 rows by 4 rows.
  • Top each brownie with one scoop of ice cream; drizzle with 1 tablespoon chocolate syrup.

2/3 cup (1 1/3 sticks) melted butter
1/4 cup milk
2 large eggs
One 1-pound tube refrigerated chocolate chip cookie dough
20 chocolate sandwich cookies
1/2 cup caramel sauce
1 pint mint chocolate chip ice cream
1/2 cup chocolate sauce
Canned whipped cream, assorted sprinkles and maraschino cherries, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the brownie mix, melted butter, milk and eggs until combined. Set aside.
  • Press the cookie dough into the bottom of a 10-inch cast-iron skillet. Lay the sandwich cookies in a single layer on top. Drizzle over the caramel sauce, getting into the spaces between the cookies. Pour over the brownie batter and smooth the top.
  • Bake until set, 40 to 45 minutes. Allow to cool for 20 minutes.
  • Top the brownie with scoops of the ice cream, then drizzle over the chocolate sauce and garnish with the whipped cream, sprinkles and cherries.

Steps:

  • In a microwave, melt butter and chocolate; stir until smooth; Cool for 10 minutes. In a large bowl, beat egg, brown sugar, vanilla and salt until blended. Stir in chocolate mixture. Gradually add flour until well blended. , Line an 8-in. square baking pan with foil; grease the foil. Spread batter evenly into pan (batter will be thin). Bake at 350° until a toothpick inserted in center comes out clean, about 15 minutes. Cool completely on a wire rack. Cover; chill until firm. , Using a 3-1/2x3-1/2-in. heart pattern or cookie cutter, mark 4 hearts on surface of brownies; cut with a knife. Spread ice cream on 2 hearts; top each with a second heart. Wrap and freeze in a single layer overnight. , For chocolate sauce, in a small saucepan, combine water, cocoa and sugar; bring to a boil over medium heat, stirring constantly. 32 ounces semisweet chocolate, chopped
7 eggs
2 cups sugar

1-1/2 teaspoons salt
3/4 pound chopped walnuts, optional
HOT FUDGE SAUCE:
1 cup heavy whipping cream
1 cup sugar
1/2 cup butter, cubed
1 cup baking cocoa
Vanilla ice cream
Whipped cream and maraschino cherries, optional

Steps:

  • In a large heavy saucepan, melt butter and chocolate over low heat; stir until smooth. Cool., In a large bowl, beat eggs and sugar on low speed until combined. Beat on medium-high until thickened and lemon-colored, about 12 minutes. Beat in vanilla and chocolate mixture. Fold in flour and salt just until blended (batter will be thick). Fold in walnuts if desired. , Transfer to two greased 13x9-in. baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks for 15 minutes. , In a large saucepan, combine the cream, sugar and butter. Cook and stir until sugar is dissolved. Bring to a boil, without stirring. Reduce heat; simmer, uncovered, for 3 minutes. Cool for 3 minutes. , Place cocoa in a heat-proof bowl. Carefully whisk hot liquid into cocoa until smooth (do not scrape pan). 1 cup finely crushed chocolate wafers
½ cup finely chopped walnuts
¼ cup butter, softened
1 cup heavy cream
2 tablespoons confectioners' sugar
1 quart vanilla ice cream, softened
1 (10 ounce) package frozen sweetened strawberries, thawed
¼ cup walnut halves

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, mix together chocolate wafer crumbs, chopped walnuts, and softened butter until thoroughly combined. Press mixture firmly into bottom and sides of a 9 inch pie pan. Bake in preheated oven for 7 minutes. Refrigerate until well chilled.
  • In a medium bowl, whip together whipping cream and confectioners' sugar until soft peaks form. Spread half of ice cream into bottom of crust. Cover with strawberries, then cover strawberries with remaining ice cream. Spread whipped cream over ice cream, and garnish with walnut halves. Freeze for 2 hours before serving. Allow to stand at room temperature for 10 minutes before slicing.

2 large eggs
1 cup sugar
1/2 cup butter
1/2 cup all-purpose flour
1/3 cup cocoa

1/2 cup semi-sweet chocolate chips
1/2 cup nuts (I prefer either walnuts or pecans)

Steps:

  • Bake frozen pie crust as directed beforehand. Mix together the first seven ingredients. Stir in the chips and nuts and pour in pie shell. Bake at 375 degrees for 30-35 minutes.
