- Cut loaf of bread in half lengthwise; hollow out top and bottom, leaving a 3/4-in. shell (discard removed bread or save for another use). Brush vinaigrette over bread halves. Layer spinach, ham, eggs, bacon, cheese and tomatoes on bread bottom. Replace top. Cut loaf in half lengthwise from top to bottom; cut crosswise 5 times to make 12 pieces.

EASY COBB SALAD
Being a college student, you don't have much time to do anything besides do homework and research, so this is a quick and easy meal that I often whip up when my time is limited. The dressing is more or less an approximation, so depending on how tangy or sweet you want it, adjust the amount of mustard and sweetener. A great time saver is to boil several eggs at once, so you have them on hand in case you want to make another salad the next day, or more for company. (I like my eggs nice and cold, so that's why I have them boiled a day ahead, but if you don't care it doesn't make a difference.)

- The night before, boil the egg until hard-boiled (10-15 mins).
- When they're boiled, rinse with cold water, peel, let them cool, and stick in the fridge.
- The next day, cook the bacon in a skillet until crispy on both sides. (about 10 mins.) Set the bacon aside on paper towels and when cooled, crumble.
- Combine all ingredients for the dressing together in a small bowl.
- Combine bacon, bell pepper, green onion and romaine in a bowl. Pour dressing over salad and toss. Garnish with sliced boiled egg and avocado.

SUPER EASY COBB SALAD SANDWICH (DELI-STYLE)
Ohhhh Yummm - nothing beats a cobb salad to me so this sandwich is a real treat. This recipe uses sliced breast of chicken or turkey cold cuts from the deli-counter, however, you could omit this if you like just the salad portion. I also use Italian soft sliced sandwich bread from the bakery but you could use any bread or rolls you like. I also say super easy in the title as I buy the pre-cooked ready bacon that I just heat in microwave & try to keep at least 2 hard boiled eggs on hand in advance - now I see you can buy them pre-made in the grocery store. Onion and salt/pepper & other ingredients are optional to taste.

- Pat chicken dry and season with salt and pepper. Heat the oil in a large nonstick skillet over medium heat until the oil is shimmering. Add the chicken and cook for 6 minutes per side or until golden brown and cooked through.
- Remove chicken to a plate and refrigerate until chilled, about 30 minutes then cut into 1/2-inch pieces.
- Mix the mayonnaise, cheese, sour cream and lemon juice in a large bowl. Add the eggs, avocado and chicken; toss gently to combine.
