EASY SOUR CHERRY TARTS



Easy Sour Cherry Tarts image

A basic recipe for sour cherry tarts with options for how sweet or sour you like your cherries.

6 cups pitted sour cherries
2 cups white sugar
1 heaping tbsp cornstarch
2-3 tbsp water
1 package pastry tart shells (approximately 30 in a package)
Whipped cream to garnish
Optional: Edible flowers and thyme for garnish.

Steps:

  • Pit sour cherries if you haven't done so already. The additional time in the recipe is how long you should allow yourself to pit the cherries.
  • Combine cherries and sugar in a saucepan. Cook on medium high heat.
  • Mix together the water and cornstarch in a small dish. Mixing with water helps to avoid lumps in the sauce. Add to the cherry and sugar mixture when it boils.
  • Stir the mixture until it thickens, approximately 1-2 minutes. If it does not thicken, add more cornstarch and water.
  • Let cherries cool slightly, then spoon evenly into tart shells.
  • Bake for 375 degrees for approximately 30 minutes. The time will vary depending on your oven. The crust of the tarts should be a golden brown when finished.
  • Let cool completely. Add whipped cream, edible flowers (I used violas) and thyme for garnish if you wish.

Fresh cherries simply shine in dessert, especially when enveloped in a flaky, buttery crust and baked until the juices are bubbly and syrupy. A mix of sour cherries (often called pie cherries) with sweet cherries is key for a balanced fruit filling. If you can't find sour cherries, use all sweet and increase the fresh lemon juice to 1 tablespoon. Turbinado sugar replaces refined white sugar in the filling and adds a crunchy texture on top. Here, we call for each tart to get its own dough lid, but we also love the "naked" look of a few cutout stars atop the cherry mixture, as pictured.

4.25 ounces unbleached all-purpose flour (about 1 cup)
2 ounces white whole-wheat flour (about 1/2 cup)
1/2 teaspoon kosher salt, divided
4 1/2 tablespoons chilled unsalted butter, diced
1/4 cup ice water
2 tablespoons chilled vodka
5 tablespoons plus 2 tsp. turbinado sugar, divided
2 tablespoons cornstarch
2 1/2 cups fresh or frozen sour cherries, thawed and drained, pitted and halved (about 16 oz.)
2 1/2 cups fresh sweet cherries, pitted and halved (about 16 oz.)
2 teaspoons fresh lemon juice
1 large egg white, lightly beaten

Steps:

  • Weigh or lightly spoon flours into dry measuring cups; level with a knife. Place flours and 1/4 teaspoon salt in a food processor; pulse to combine. Add butter; pulse 6 times or until mixture resembles coarse meal. Add 1/4 cup water and vodka; pulse 6 times or until dough comes together. Turn dough out onto a lightly floured surface; gently knead 1 to 2 times. Divide dough into 12 equal portions; shape each portion into a ball and press flat. Roll each dough portion into a 4 1/2-inch circle. Arrange dough circles on a baking sheet lined with plastic wrap; cover and chill 1 hour or until firm.
  • Preheat oven to 375°F with oven rack in lower middle position.
  • Unwrap dough circles; fit 6 circles into 6 (4-inch) tart pans. Using a 1 1/4-inch star-shaped cutter, cut a star from the center of each of the remaining 6 dough circles. Refrigerate tart shells and lids until ready to use; refrigerate stars, if using.
  • Combine remaining 1/4 teaspoon salt, 5 tablespoons sugar, and cornstarch in a large bowl. Add cherries and lemon juice; toss. Spoon about 1/2 cup cherry mixture into each shell; top with dough lids, pressing edges to seal. Brush with egg white; sprinkle with remaining 2 teaspoons sugar. Arrange tartlets on a foil-lined baking sheet; bake at 375°F for 35 to 40 minutes or until golden and bubbly. Cool 10 minutes. Remove tartlets from pans; cool completely.

Gloria Zimmerman picks well-ripened sour cherries from the cherry tree in a friend's yard each summer, pits them and freezes them. Although this tart can be made with sweet cherries, it is better made with sour cherries. The pate brisee recipe is very rich and must be handled with care to make it conform to the tart mold. The unglazed tart should not be refrigerated; it should be served while still lukewarm - difficult to do in a restaurant - with strong coffee.

About 3/4 cup flour (4 ounces)
1/2 teaspoon sugar
1/8 teaspoon salt
3/4 stick (3 ounces) cold unsalted butter, cut into 1/2-inch pieces
3 tablespoons ice-cold water
1 1/4 pounds sour cherries, pitted
2 tablespoons minute tapioca
3/4 cup sugar
1/4 teaspoon almond extract
1/4 cup almonds ground in a food processor with 1 tablespoon sugar

Steps:

  • For the pate brisee, place the flour, sugar, salt and butter pieces in owl and crush the butter into the dry ingredients with the tips of your fingers until combined somewhat but with pieces of butter still visible in the mixture. Add the ice water and stir with a fork just until the mixture holds together. Gather it up, pressing it between your hands to flatten it and make it round, and wrap it in plastic wrap. Refrigerate for one hour.
  • Rub a small amount of flour into a pastry cloth and roll the dough into a very thin circle, about 12 1/2 inches in diameter. Roll the dough onto the rolling pin and gently fit it into the bottom and up the sides of an 11-inch tart pan with a removable bottom. Press the dough against the sides of the pan to fill in any holes and make it adhere to the metal. Remove any excess overhanging dough by rolling the rolling pin across the top of the pan. Refrigerate the tart shell for one hour.
  • Meanwhile, in a bowl combine the cherries, tapioca, sugar and almond extract. Sprinkle the ground almond-sugar mixture in the pastry shell and arrange the cherry mixture on top. Place the tart pan on a cookie sheet and bake in a 400-degree oven for one to one-and-a-quarter hours, until the dough is nicely browned. Unmold and serve with strong coffee.

1 1/4 cups all purpose flour
1/3 cup sugar
3/4 teaspoon grated lemon peel
1/4 teaspoon salt
6 tablespoons (3/4 stick) unsalted butter, room temperature
1 large egg, beaten to blend
For pastry cream
2 large egg yolks
1/4 cup sugar
3 tablespoons all purpose flour
1 cup whole milk
2 3-inch-long strips lemon peel (yellow part only)
1/2 teaspoon vanilla extract
1/2 cup (about) sour cherry jam
Powdered sugar

Steps:

  • Make pastry:
  • Mix first 4 ingredients in medium bowl. Add butter. Rub in with fingers until butter is size of small peas. Add egg; mix until dough comes together. Gather into ball. Shape into 5-inch-long log. Wrap in waxed paper; chill 1 hour.
  • Make pastry cream:
  • Whisk yolks and 1/4 cup sugar in heavy small saucepan. Whisk in flour, then milk. Add lemon peel. Bring to boil over medium-high heat, whisking constantly. Remove from heat. Whisk in vanilla. Transfer to bowl. Press plastic wrap onto surface. Chill until cold, about 1 hour. (Pastry and pastry cream can be made 1 day ahead. Keep chilled.)
  • Preheat oven to 375°F. Cut dough into twenty 1/4-inch-thick slices. Roll out 1 dough slice between sheets of floured plastic wrap to 3 1/2-inch round. Transfer to 3-inch-diameter tartlet pan with 1/2-inch-high sides. Repeat with 9 more dough pieces and tartlet pans.
  • Remove lemon peel from pastry cream. Spoon 1 tablespoon pastry cream into each crust. Top each with 2 teaspoons jam. Roll remaining 10 dough pieces out between sheets of floured plastic wrap to 3 1/2-inch rounds. Place 1 round atop each tartlet. Pinch dough edges together to seal.
  • Place tartlets on baking sheet. Bake until pastry is golden on top, about 30 minutes. Using small knife, loosen tartlets from pans. Remove from pans. Transfer to rack; cool. Sift powdered sugar over.

2 teaspoons pumpkin pie spice, i use Baking Spice Mix
3/4 cup sugar
3 tablespoons cornstarch
15 ounces tart cherries, pitted packed in water
16 ounces sweet cherries, I used frozen
1/2 teaspoon salt
1/2 teaspoon almond extract, or
1/2 teaspoon vanilla extract
pie double crust pie crust
1 pinch salt
1 teaspoon sugar, for topping the crust

Steps:

  • Ready pie shell and let it relax while making filling.
  • strain can of tart cherries, reserving liquid.
  • mix all cherries together, set aside
  • NOTE: it would not accept baking spice in the ingredient list, so I put pumpkin pie spice as it is the closest. The baking spice I use is 326104. Otherwise, 1 1/2 tsp cinnamon, 1/8 tsp each cloves, nutmeg, ginger, 1/4 tsp each cardamon and allspice - to the best of your pantry's ability.
  • in a large saucepan cook over medium heat the reserved liquid, cornstarch, salt, spices and sugar. Cook until thick and bubbly. Stirring constantly.
  • Stir in berries, until mixed. Add the almond or vanilla extract.
  • Cool to room temperature. (this help keep pie crust from getting soggy while baking).
  • Pour into pie shell. Either top with a lattice top (prettiest) or cover with remaining pastry dough remembering to vent in several spots.
  • Brush with heavy cream (or milk) and sprinkle with sugar and a small pinch of salt.
  • Rest pie in refrigerater for 1 hour. 20 minutes before baking, preheat oven to 425 with a baking stone set on the lowest rack possible.
  • Cook pie for 1 hour, or until all over is bubbly. You may need to tent a piece of foil over the pie to keep the shell from burning, just make sure to have steam vents.
