- Place peas in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 4 minutes., Meanwhile, in a large skillet, cook prosciutto in oil and butter over medium heat until prosciutto is crisp. Add garlic; cook 1 minute longer. Add the tomato, salt and pepper; heat through. Stir in peas.

SNAP PEAS WITH PANCETTA AND PARMESAN
Steps:
- Preheat the oven to 450 degrees.
- Place the pancetta slices on a baking rack set in a sheet pan and roast for 8 to 10 minutes until crisp. Remove from the oven and set aside to cool.
- Meanwhile, bring 2 to 3 quarts of water to a boil in a large pot and add 1 tablespoon of salt. Fill a large bowl with ice water and have a sieve or colander ready in the sink. Put the snap peas into the boiling water for only 10 or 15 seconds, drain, and put immediately into the ice water. Cool completely and drain. Cut each snap pea in half lengthwise and place in a large bowl.
- Place the snap peas in a large bowl and add the red onion.
- To make the vinaigrette, whisk together the olive oil, vinegar and lemon juice. Pour enough vinaigrette on the snap peas to moisten. Crumble the pancetta over the salad and add 1 teaspoon salt and the pepper. Add the Parmesan and toss well.
SWEET PEA CROSTINI

- For the Sweet Peas: Warm the chicken broth and red pepper flakes in a medium
- saucepan over medium-high heat until the broth boils. Add the frozen peas and cook until the peas are tender, about 5 minutes. Drain the peas in a mesh sieve.
- Place the peas in a food processor with the mint, salt, and pepper. Puree the pea mixture. Place the pea puree in a medium bowl and refrigerate until cool, about 30 minutes.
- Meanwhile, for the crostini: Preheat the oven to 375 degrees F. Place the baguette slices on a parchment paper-lined baking sheet in a single layer. Bake in the oven until toasted and golden around the edges, about 10 minutes. While the crostini are still warm, drizzle the tops with extra-virgin olive oil. Using a whole clove of garlic in your fingertips, rub the top of the crostini a few times to give a hint of garlic.
- To finish, whip the cream until stiff peaks form. Fold the whipped cream into the pea puree. Top each of the crostini with about 1 tablespoon of pea puree. Sprinkle with a bit of the diced prosciutto. Serve immediately.

As a child we had this at Beach Road Chicken House. My Sister figured this out. So we have had it in the family for years. It is good and also creamy.

- Cook pasta according to package directions.
- Meanwhile, place peas, spinach, basil, Parmesan, olive oil, walnuts, garlic and salt and pepper in a blender or food processor.
- Two minutes before pasta is done, ladle out 1/2 cup hot pasta cooking water and add to blender. Pulse until smooth, scraping sides and adding additional pasta water by the tablespoon, if needed.

- Muddle 2 tablespoons fresh (or frozen, thawed) peas, 1 lemon wedge, and 1 teaspoon sugar in a cocktail shaker until peas are completely mashed. Add 2 ounces vodka; fill shaker with ice. Cover and shake until outside of shaker is frosty, about 30 seconds. Pour through a fine-mesh strainer into a chilled coupe glass. Garnish with a pea tendril (optional).
