ROASTED SWEET POTATOES AND APPLES

Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.

- In a greased 1-1/2-qt. baking dish, layer half of the sweet potatoes and apples. In a small bowl, combine the brown sugar, nutmeg, allspice, salt and pepper; sprinkle half over apples. Dot with half of the butter. Repeat layers. , Cover and bake at 350° for 15 minutes. Baste with pan juices. Bake, uncovered, 15 minutes longer or until apples are tender.

- Place the sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 30 minutes or until tender. Drain. When cool enough to handle, peel potatoes and cut into 1/2-in. slices. , Preheat oven to 375°. In a small bowl, combine brown sugar, walnuts, cinnamon and salt; set aside. In a large skillet, saute apples in 2 tablespoons butter 3-4 minutes or until tender. , In a greased 1-1/2-qt. baking dish, layer half the sweet potatoes, apples and brown sugar mixture. Repeat layers. , Dot with remaining butter. Cover and bake 30 minutes. Uncover; bake 15 minutes longer or until bubbly.

- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a small bowl, mix brown sugar, cinnamon and nutmeg.
- Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
- In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
- Bake in the preheated oven 30 minutes, or until lightly browned.

SWEET POTATO AND APPLE CASSEROLE

- Preheat the oven to 350 degrees F. Grease a 13- by 9- by 2-inch baking dish with margarine.
- Peel the potatoes and yams. Place the potatoes and yams in a large pot of water. Bring to a boil; reduce the heat. Boil gently until the potatoes and yams are tender, about 20 minutes. Remove the potatoes and yams from the water. When cool enough to handle, slice into rounds and set aside. Peel, core and slice apples.
- Place one layer of yams, apple slices and then sweet potatoes in the greased baking dish; repeat and make at least two layers of each. Top with the golden raisins.
- To make a glaze, in a small pan stir together the honey, orange juice, cinnamon and vanilla extract. Stir over low heat until the consistency is even. Pour the glaze over the yam, sweet potato and apple slices.
- Bake, uncovered, until browned, 15 to 20 minutes. Remove from the oven and sprinkle with powdered sugar. Serve immediately.
APPLE - SWEET POTATO BAKE
My late Aunt Donna used to frequent farmer's markets during various local produce seasons, and she would find the best local recipes whenever she did. This one was on the table every Thanksgiving once she discovered it. My family normally prefers sweet potatoes unadulterated (wrapped in foil and simply baked), but we always empty the dish when this casserole is made. Prep and cook time do not reflect time for cooking sweet potatoes.

VEGAN HARVEST BAKED SWEET POTATOES AND APPLES
A cheering fall and winter vegan recipe, this medley of sweet potatoes and apples makes a great side dish for Thanksgiving dinner, though you need not save this easy preparation for special occasions only.

- Preheat the oven to 350 degrees F (175 degrees C). Place sweet potatoes on a baking sheet.
- Bake in the preheated oven until cooked through but still firm, about 20 minutes.
- Remove sweet potatoes from oven; leave oven on. Allow sweet potatoes to cool until safe to handle; peel and cut into 1/2-inch slices.
- Coat a deep 1 1/2-quart baking casserole with oil. Arrange 1/2 the sweet potato slices on the bottom. Drizzle with 1/2 of the melted vegan margarine followed by 1/2 of the maple syrup. Top with apple slices and sprinkle lightly with cinnamon and cloves. Repeat layers. Pour apple juice on top. Cover casserole with a lid or aluminum foil.
- Bake in the hot oven, covered, for 30 minutes. Remove lid or aluminum foil and bake for 10 minutes more. Serve immediately or cover and keep warm until serving.

Steps:
- Boil sweet potatoes in water enough to cover for 30 to 40 minutes, until tender. Drain, cool and peel. At this point the peels are easily removed by hand. Mash together with melted butter, brown sugar, cinnamon and nutmeg.
- Butter a 13x9 inch glass pan. Add 1/2 of the sliced apples and top with 1/2 of the mashed sweet potatoes. Layer the remaining apples and sweet potatoes.
- Mix together topping ingredients and sprinkle on top. Bake covered at 350 for about 45 minutes.
