1/4 cup green pepper, chopped
2 tablespoons onions, chopped
1 cup sliced celery
1/4 cup sweet pickle relish (or sliced green olives)
1/2 teaspoon salt
1/4 teaspoon celery seed
1 cup grated cheddar cheese
1/4 cup mayonnaise

Steps:

  • Rinse hominy and drain well.
  • Chop green pepper, onion and celery.
  • Toss hominy and veggies together.

4 medium sweet potatoes
1 large red onion, peeled and quartered
2 (15 ounce) cans yellow hominy, rinsed and drained well
2 fresh ancho chilies, roasted, peeled, and seeded
1 navel orange, juice of, large
2 -3 tablespoons fresh lime juice
1/2 cup olive oil
1 teaspoon kosher salt
generous amount black pepper, to taste
1/2 cup chopped fresh cilantro (optional)

Steps:

  • Peel and quarter the onions, toss with a small amount of vegetable oil, an.
  • Bake the sweet potatoes at 350 degrees until easily pierced by a skewer, about 35 to50 minutes. Remove from oven, let cool, then peel and cut into bite-sized chunks. Place in a large bowl with the hominy and red onion.
  • Dressing: Place roasted peeled chile in blender jar with the citrus juices, oil, and seasonings. Blend until pureed and add to vegetables in bowl. Toss well and let marinate 30 to 60 minutes. Toss with cilantro before serving.

2 tablespoons fresh lime juice
1 teaspoon honey
1 teaspoon extra virgin olive oil

A different kind of potato salad--this one boasts Okinawan Sweet Potatoes (purple flesh), a medley of red, yellow, orange and green bell peppers, and red onions. It's tossed in a tangy honey-mustard dressing right before serving. Delicious and nutritious! If you count the time it takes to chill down the potatoes, this salad takes about 1hour and 45 minutes to prepare. Or, steam the potatoes a day ahead, and it will only take about 1/2 hour!

5 lbs okinawan sweet potatoes, skin on, whole (purple flesh, white skin)
2 medium red bell peppers
2 medium yellow bell peppers
2 medium orange bell peppers
2 medium green bell peppers
1 large red onion
1 cup salad oil
2 cups honey
4 cups vinegar (what ever kind you enjoy)
2 tablespoons sea salt (or to taste)
2 1/2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
fresh ground pepper
1 bay leaf
2 garlic cloves, minced

Steps:

  • Scrub the sweet potatoes, and steam them whole, with skins on. When you can pierce it with a fork, it is done. Allow the potatoes to cool, refrigerate for an hour.
  • In the meantime, Combine all the dressing ingredients and chill.
  • Julienne the bell peppers, and toss together, chill.
  • Julienne the red onion, set aside to chill.
  • Cut the chilled potatoes into cubes. (You may remove the skin if you wish, but the skin has a lot of fiber, and adds to the color of the dish).
  • In a large bowl (I use a clear glass bowl to help show-off the salad), Place a layer of cubed potato on the bottom. Top with a layer of the bell pepper medley, and red onion.
  • Repeat layers, ending with the bell pepper medley and red onion.
  • If you'd like, you could strain the dressing so that no pepper or garlic bits are in the salad. Pour the dressing over the salad just before serving.

4 medium sweet potatoes (about 1 1/2 pounds), peeled and cut into 1-inch chunks
1 large onion, preferably red, chopped
1/2 cup extra virgin olive oil
Salt and freshly ground black pepper
1 to 2 tablespoons minced fresh hot chili, like jalapeno
1 clove garlic, peeled
Juice of 2 limes
2 cups cooked black beans, drained (canned are fine)
1 red or yellow bell pepper, seeded and finely diced
1 cup chopped fresh cilantro

Steps:

  • Heat oven to 400 degrees. Put sweet potatoes and onions on a large baking sheet, drizzle with 2 tablespoons oil, toss to coat and spread out in a single layer. Sprinkle with salt and pepper. Roast, turning occasionally, until potatoes begin to brown on corners and are just tender inside, 30 to 40 minutes. Remove from oven; keep on pan until ready to mix with dressing.
  • Put chilies in a blender or mini food processor along with garlic, lime juice, remaining olive oil and a sprinkle of salt and pepper. Process until blended.
  • Put warm vegetables in a large bowl with beans and bell pepper; toss with dressing and cilantro. Taste and adjust seasoning if necessary. Serve warm or at room temperature, or refrigerate for up to a day.

2 pounds sweet potatoes, peeled and cut into 1-inch chunks
1/3 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 cup finely chopped fresh cilantro leaves
salt and freshly ground black pepper to taste
1/2 medium-size red bell pepper, seeded and cut into 1/4 inch dice [See how on streaming video]
4 scallions, white and light green parts, finely chopped

Steps:

  • Place the sweet potatoes in a large saucepan and cover with water. Bring to a boil and cook until just tender, 7 to 10 minutes (don't overcook or your salad will be mushy and falling apart.) Drain and transfer to a large bowl.
  • While the potatoes are cooking, make the dressing. Whisk together the olive oil, lime juice, chili powder, cumin, cilantro, salt, and pepper in a small bowl.
