Maple syrup pumps up the flavor of puréed sweet potatoes and provides a sweet glaze for extra-peppery candied pecans in this classic Thanksgiving side.

Steps:
- Preheat oven to 350°F. Oil a 3-qt. baking dish. Cook potatoes in a large pot of boiling salted water until very tender, about 12 minutes. Drain; let sit in colander 15 minutes.
- Meanwhile, heat 1/2 cup syrup in a large skillet over medium-high. Add pecans, 3/4 tsp. salt, and 1 tsp. pepper and cook, stirring constantly, until syrup has evaporated and pecans are glazed, about 5 minutes. Transfer to a parchment-lined rimmed baking sheet and let cool.
- Purée potatoes, 1 1/2 cups water, and remaining 3/4 cup syrup, 1 1/4 tsp. salt, and 1/2 tsp. pepper in a food processor until smooth. Transfer potato mixture to prepared baking dish.
- Coarsely chop pecans and sprinkle evenly over potato mixture.
- Bake casserole until top is lightly browned, about 40 minutes. Let sit 15 minutes before serving.
- Do Ahead
- Casserole can be assembled, without topping, 2 days ahead; cover and chill. Candied pecans can be made 2 days ahead; store in an airtight container at room temperature.

- Preheat oven to 350 degrees F (175 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add sweet potato, cover, and steam until tender, 8 to 10 minutes. Strain into a bowl and mash until smooth.
- Mix flour and salt together in a large bowl. Cut in butter with a pastry blender or a fork until mixture is crumbly. Stir in sugar, raisins, cinnamon, nutmeg, and allspice. Add 3 cups mashed sweet potatoes; mix until dough comes together.
- Turn dough out onto a floured work surface; divide in half. Pat each half into a circle the size of a large dinner plate. Cut each circle into 8 wedges. Transfer wedges to two 10x15-inch baking sheets.
- Bake in the preheated oven until lightly browned, about 20 minutes.

SWEET POTATO SCONES WITH MAPLE-PECAN GLAZE

- Preheat your oven to 400° F.
- Prick the sweet potatoes all over with the tines of a fork and bake on a foil-covered pan 40-45 minutes, or until tender. Remove from the oven and let cool to the touch, about 10 minutes.
- Cut the potato in half lengthwise, scoop out the flesh into a medium bowl, and mash with a fork. Cover the bowl and refrigerate until cool, at least 20 minutes.
- In a mixing bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, cardamom, and sugars until combined. Stir dry ingredients until well combined.
- Add grated butter. Using your hand, pastry cutter, 2 forks, or 2 butter knives, cut the butter into the dry ingredients. It should look like a bowl full of small peas. Mix in cranberries and zest. Place this mixture in the fridge,
- In a separate bowl, add buttermilk, egg, vanilla, sweet potato and combine.
- Fold in your wet ingredients to your dry ingredients until just combined. It's o.k. if there's a little loose flour at the bottom of the bowl. Turn dough out onto parchment paper
- On parchment paper, use your hands to shape the dough into a 7-8 inch circle that's 1/2-1 inch thick. Cut the dough into 8 equal triangles and spread out onto the parchment paper. About 2 inches apart.
- Using a pastry brush, use a little bit of the buttermilk to brush the tops of the prepared dough.
- Bake on the center rack of a preheated oven for 18-20 minutes or until the edges are golden brown.
- Make the glaze: While scones are baking grab a small bowl add all ingredients, except the pecans, and stir until combined and there are no lumps. Mix in pecans. and add all ingredients for your glaze.
- Allow scones to cool slightly, drizzle glaze over warm scones, and serve. Enjoy!

- Heat oven to 450 degrees F and arrange rack in the middle.
- While oven heats, place pecans on a baking sheet to toast until they smell nutty and are slightly darker, about 5 minutes. Remove from oven and set aside.
- Place sweet potatoes on a baking sheet, drizzle with oil. Season well with salt and freshly ground black pepper, and toss to coat. Roast until golden brown and tender when pierced with a knife, about 40 to 45 minutes.

- Preheat the oven to 350 degrees F. In a large bowl, stir together the flour, granulated sugar, baking powder and salt.
- Cut the cold butter into small pieces. Cut the butter into the flour until the mixture resembles crumbs.
- Now finely chop the pecans and stir them into the flour mixture. Mix the egg and cream together. Add the mixture to the bowl and stir until just combined.
- Turn the mixture onto a cutting board. The dough will be very crumbly, but do not let your heart be troubled. With your hands, push the mixture together into a large ball. Do not knead or press too much; you want to leave that gluten alone!
- With a rolling pin, very gently roll out the dough into a 10-inch round, about 3/4 inch thick. With a sharp knife, cut the round into 8 equal-size wedges.
- Transfer the wedges to a baking sheet lined with a Silpat baking mat. (Or just spray the pan with cooking spray; either one will work!) Bake the scones for 22 to 26 minutes, until they're just barely starting to brown. Do not allow the edges to become dark or the Red Coats will come and get you. Allow the scones to cool completely before icing.
- In a medium mixing bowl, stir the icing ingredients until smooth. Pour generously over the scones and sprinkle with pecans. Allow the icing to set before serving.
MAPLE GLAZED SWEET POTATOES WITH PECAN TOPPING
You may prepare and bake this complete dish hours ahead, and let sit at room temperature, just rewarm in a 375 degree oven, uncovered for about 20 minutes.

- Set oven to 400 degrees F.
- Butter a 13 x 9-inch baking dish.
- In a large pot bring water with about 1 tablespoon salt to a full boil.
- Add in sweet potatoes and bring back to a boil; simmer/blanch for about 5 minutes (no more than 5 minutes at a boil); drain and rinse under COLD water; pat dry slightly with paper towels.
- Arrange the potatoes in the buttered dish, overlapping slighty.
- Sprinkle with about 1/2 - 1 teaspoon salt.

- In a large bowl, combine the flour, brown sugar, baking powder, pumpkin pie spice, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. - Whisk cream and 3 tablespoons maple syrup together in a bowl.
