ROASTED SWEET POTATOES AND APPLES



Roasted Sweet Potatoes and Apples image

Number Of Ingredients 9

2 sprigs fresh rosemary, picked and finely chopped
1/2 cup coarsely chopped walnuts
Juice of 1/2 lemon
2 large sweet potatoes, peeled and cut into 1-inch dice
Extra-virgin olive oil
Kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
3 Honeycrisp or Granny Smith apples

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
  • Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
  • Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
  • Serve immediately or keep in a warm oven and serve hot.

4 medium sweet potatoes, peeled and cut lengthwise into quarters, then cut crosswise into 1/8-inch slices
5 tablespoons unsalted butter, plus 3 tablespoons melted
1 tablespoon fine sea salt
2 teaspoons freshly ground black pepper
3 medium baking apples, such as Sierra Beauty or Granny Smith, peeled, cored, and cut into quarters
6 cups loosely packed braising greens such as kale, chard, or collard greens, stems removed and torn into 2-inch strips
1/4 cup loosely packed fresh parsley leaves, coarsely chopped

Steps:

  • Preheat oven to 400°F.
  • On foil-lined baking sheet, toss potato slices with 3 tablespoons melted butter, 1 teaspoon salt, and 1/2 teaspoon pepper. Bake until cooked through and slightly caramelized, about 20 minutes. Keep warm.
  • In heavy medium skillet over moderate heat, melt 3 tablespoons butter. Add apples and sauté until tender and golden brown, about 15 minutes. Keep warm.
  • In heavy large pot over moderate heat, combine remaining 2 tablespoons butter and 3 tablespoons water. Add greens and sauté, stirring occasionally, until wilted, about 5 minutes. Lower heat to moderately low and add sweet potatoes and apples. Continue cooking, stirring occasionally, until warmed through, 3 to 4 minutes. Stir in parsley, remaining 2 teaspoons salt, and 1 1/2 teaspoons pepper. Serve hot.

ground cinnamon to taste

Steps:

  • Preheat an outdoor grill.
  • In a bowl, toss the sweet potato and apple slices with the cinnamon and sugar. Divide the mixture into 4 portions, places each on a large piece of aluminum foil. Top each with an equal amount of butter. Tightly seal foil around each portion.
  • Place foil packets on the grill, and cook 40 minutes, turning every 5 to 10 minutes, until potatoes and apples are tender.

A rich potato puree with caramelized apples on top (though I would recommend using both caramelized apples and marshmallows, and they both add something different!) Served it for Thanksgiving and everyone loved it.

4 pounds sweet potatoes
¼ cup light brown sugar
1 teaspoon ground nutmeg
½ teaspoon ground cinnamon
½ cup heavy whipping cream
½ cup freshly squeezed orange juice
¼ cup unsalted butter, melted
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons unsalted butter
3 apples (such as McIntosh or Macoun) - peeled, cored, and cut into 8 pieces
3 tablespoons light brown sugar

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add sweet potato, cover, and steam until soft, about 1 hour. Scoop the meat from the skin, transfer to a bowl, and smash using an electric mixer or wooden peg.
  • Stir 1/4 cup brown sugar, nutmeg, and cinnamon into smashed sweet potatoes; allow to cool.
  • Stir cream, orange juice, 1/4 cup unsalted butter, salt, and pepper into smashed sweet potatoes; transfer to a baking dish.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt 3 tablespoons unsalted butter in a skillet over medium-high heat; cook and stir apples and 3 tablespoons brown sugar in the melted butter until lightly browned on both sides, 5 to 10 minutes. Spoon caramelized apples over smashed sweet potatoes.
  • Bake in the preheated oven until heated through, about 20 minutes.

4 medium sweet potatoes (peeled and cut into 1/2-inch thick slices)
6 tbsp butter (melted, divided)
1 tsp sea salt
1/2 tsp freshly ground black pepper ((more to taste))
3 medium sized Pink Lady or Goldrush apples (peeled, cored, and diced)
6 cups, packed Braising greens (Rinsed, stems removed and torn into 2-inch strips))
1/4 cup Coarsely chopped fresh parsley leaves
1/8 t nutmeg (freshly grated)

Steps:

  • Preheat oven to 425 degrees.
  • In a baking pan, toss sweet potato slices with 3T melted butter, salt, and pepper. Bake until tender and slightly caramelized, about 20 minutes.
  • In large Dutch oven or heavy pot, melt the remaining 3T butter over medium heat. Add apples and saute until slightly tender, about 10 minutes. Remove apples and set aside.
  • Add greens to pot, plus 2-3 tablespoons of water and braise until wilted, about 3 to 5 minutes.
  • Reduce heat to low and add apples and sweet potatoes. Add nutmeg, continue cooking, stirring occasionally, until warmed through, 3 to 4 minutes. Stir in parsley, and season with additional salt and pepper to taste. Serve hot.

1 cup sour cream

1/3 cup dried cranberries or dried cherries
1/8 teaspoon salt (optional)

Steps:

  • Peel sweet potatoes and cut into slices about 1/8-inch thick. Place in pot with water to cover; cover pot and bring to boil. Cook potatoes about 10 minutes, until they are soft.
  • Wash and quarter apples; remove core, and slice apples in food processor.
  • Place apples, apple cider and dried fruit in pot; cover and cook until apples soften, about 5 minutes.
