3 large sweet onions (peeled and sliced or diced)
2 tablespoons olive oil
3 garlic cloves, minced
1/3 cup ketchup
1/4 teaspoon cayenne (optional)
1/4 teaspoon red pepper flakes, crushed (adjust for heat, I option for it!) (optional)
1 tablespoon paprika (Smoked paprika is a nice treat!I use 1/2 smoked and 1/2 sweet)
1/4 cup vinegar
salt

Steps:

  • Sauté garlic and onions in olive oil.
  • When onions are tender add ketchup, choice of cayenne or pepper flakes and paprika.
  • Simmer over a low heat for about 15 minutes.
  • Add vinegar and simmer 30-45 minutes.
  • Add salt to taste.
  • Serve over grilled hot dogs in steamed buns.

1/2 cup plus 1 tablespoon cold water

2 1/2 teaspoons Dijon mustard
2 1/2 teaspoons mustard powder
3/4 teaspoon celery salt
3/4 teaspoon fresh onion juice (use a garlic press)
3/4 teaspoon poppy seed
1/2 teaspoon onion salt
1/4 teaspoon garlic salt (plus 1/8 teaspoon)
1/4 teaspoon paprika (plus 1/8 teaspoon)

Steps:

6 tablespoons (89 ml) white vinegar
1 1⁄2 tablespoons (22 ml) red wine vinegar
1 tablespoon (8 g) arrowroot
1 tablespoon (5 g) minced onion flakes
2 1⁄2 teaspoons (13 g) Dijon mustard
2 1⁄2 teaspoons (10 g) mustard powder
3⁄4 teaspoon (3 g) celery salt
3⁄4 teaspoon (4 ml) fresh onion juice
3⁄4 teaspoon (9 g) poppy seeds
1⁄2 teaspoon (2 g) onion salt
1⁄4 teaspoon (1 g) garlic salt
1⁄4 teaspoon (0.5 g) paprika
1⁄4 teaspoon (0.5 g) black pepper
1 to 2 drops sesame oil

Steps:

  • Squeeze the onion for juice. Take a small slice of onion and place it in a garlic press. Squeeze the press to extract juice from the onion. You'll need about 3/4 of a teaspoon (4 ml) of juice and pour the juice into a small saucepan.
  • Measure all of the ingredients into a saucepan. Measure 1 cup and 2 tablespoons (225 g) of granulated sugar, 1⁄2 cup and 1 tablespoon (255 ml) of cold water, 6 tablespoons (89 ml) of white vinegar, and 1 1⁄2 tablespoons (22 ml) of red wine vinegar into a small saucepan.   • Whisk and heat the sauce. Set the saucepan on the stove and turn the heat to high. Whisk the sauce while it heats and bring it to a boil.
  • Reduce the heat and simmer the sauce for 5 minutes. Once the sauce comes to a boil, turn the heat to low. Keep whisking the sauce and let it simmer until it thickens. This should take about 5 minutes.
  • Cool and use the sauce. Turn off the heat and let the sweet onion sauce come to room temperature. Use the sauce immediately or store it until you're ready to use it. Transfer the sauce to an airtight container and keep it in the fridge for a few weeks.

Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
2 tablespoons white wine vinegar
1 tablespoon dark brown sugar
1/4 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Slice 1/4 inch off the tops and bottoms of the onions so they sit flat. Put the onions on the cutting board root-end down. Cut 3 slits in the stem side of each onion, crisscrossing to make 6 pie slices, cutting about two-thirds of the way through (do not cut all the way through).
  • Bring a medium pot of salted water to a boil. Drop the onions in and cook until tender on the outside, 4 to 5 minutes. Remove and cool. When the onions are cool enough to touch, gently open the onion "petals" so the onion opens up like a flower.
  • In a small pot, simmer the red and white vinegars, brown sugar and 2 tablespoons water over medium heat until syrupy, 2 to 3 minutes.
  • On a baking sheet fitted with parchment paper, arrange the onion flowers in a single layer with space between each. Drizzle with the olive oil and season with salt and pepper. Roast until the flowers open and the tips of the petals are lightly brown, 40 to 45 minutes.
  • Plate the onions on a platter and spoon the sauce over the onion flowers. Serve.

1/4 cup plus 1 tablespoon extra-virgin olive oil
1 large Vidalia onion (about 1 pound), sliced
1 fresh thyme sprig
1 small bay leaf
Kosher salt and freshly ground black pepper
1/2 cup vegetable stock, plus more if needed

Steps:

  • Put a pot over medium heat and coat with the 1 tablespoon oil. When the oil is hot, add the onion, thyme, and bay leaf; season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook and stir for 5 minutes, or until fragrant, but do not let the onion brown. Pour in the stock and bring to a simmer, then cover the pan and reduce the heat to low. Cook gently for 30 minutes, checking periodically to make sure the liquid has not completely evaporated and the onion is soupy; add a little stock if needed to keep the onion moist.
  • Remove the thyme and bay leaf. Transfer the onion to a blender and pulse until slightly chunky. Add the remaining 1/4 cup oil and puree until the sauce is thick and creamy. Season with salt and pepper. The onion sauce can be cooled, covered, and refrigerated for up to 1 day. Reheat gently before serving.

1/4 teaspoon freshly ground black pepper, plus more as needed
1 large red onion, cut into 1/2-inch-thick wedges
5 thyme sprigs
3 tablespoons extra-virgin olive oil, plus more as needed
8 ounces rhubarb stalks, sliced into 1/2-inch pieces (about 2 cups)
3 tablespoons honey, plus more to taste
1/2 cup cilantro or mint leaves and tender stems, torn

Steps:

  • Heat oven to 425 degrees and line sheet pan with parchment paper. Pat chicken dry with paper towels and season all over with coriander, 1 teaspoon salt and 1/4 teaspoon pepper.
  • Place onion wedges on the prepared sheet pan and lightly season with more salt and pepper. Add chicken and thyme sprigs to the pan and drizzle 3 tablespoons oil over everything. Toss until well coated, then spread chicken and onions in a single layer. Roast for 10 minutes.

  • Stir the rhubarb and onions very well, making sure to incorporate all the browned bits and chicken juices from the bottom of the pan (this is the tastiest part). Then sample a piece of rhubarb. If it's very tart, drizzle with a little more honey, tossing well. Serve chicken with rhubarb-onion mixture garnished with herbs.
