4 potatoes
4 eggs
¼ cup diced red onion
¼ cup diced dill pickles
½ cup mayonnaise
¼ cup spicy mustard
2 tablespoons chopped fresh chives
1 teaspoon ground black pepper

Steps:

  • Bring two pots of water to a boil; cook potatoes in one pot and eggs in the other pot until potatoes are semi-soft, 20 minutes. Transfer potatoes and eggs to a bowl of cold water until both are cooled.
  • Dice potatoes and place in a large bowl. Cut eggs in half; remove yolks and place in a separate bowl. Dice egg whites; add to potatoes. Mix red onion and pickles into potato mixture.
  • Whisk mayonnaise, mustard, chives, black pepper, and egg yolks together until smooth. Gently mix mayonnaise mixture into potato mixture until evenly coated; refrigerate for 10 to 15 minutes.

½ cup chopped bacon ends, visible fat trimmed
¼ cup white vinegar

I got this potato salad recipe from a friend who got it from an adapted recipe from the California Avocado Commission. It's a wonderful recipe, that is lighter because the wonderful tangy dressing substitutes for mayo in most salads such as this. Lots of wonderful flavors, textures, and colors! You may serve this at room temperature, but it is best covered tightly and chilled for 1 to 3 hrs before serving. Can be prepared up to three hours in advance before serving.

1/2 cup diced celery

3 lbs new potatoes, washed
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
3 tablespoons olive oil
1 red onion, chopped
1/2 cup mayonnaise
2 tablespoons chopped fresh tarragon or 1 1/2 teaspoons dried tarragon
1 stalk celery, sliced thin
salt
fresh ground black pepper

Steps:

  • Cook the potatoes in their skins in boiling salted water until tender, about 15-20 minutes.
  • Drain well.
  • Mix together the vinegar and mustard, then slowly whisk in the oil.
  • When potatoes are cool enough to handle slice into a large bowl.
  • Add the onion to the potatoes and pour the combined vinegar, mustard and oil mixture over them.
  • Season, then toss gently to combine.
  • Leave to stand at least 1/2 an hour.
  • Mix together the mayonnaise and tarragon, gently stir in to the potatoes along with the celery.
  • Serve.

1/2 cup olive oil
2 tablespoons plus 1-1/2 teaspoons white wine vinegar
4-1/2 teaspoons white balsamic vinegar
1 tablespoon Dijon mustard
3 small garlic cloves, minced
1 teaspoon grated lemon zest
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
8 cups torn mixed salad greens
2 medium ripe avocados, peeled
4 tangerines, peeled and sectioned
1/2 cup shredded Parmesan cheese
4 bacon strips, cooked and crumbled

Steps:

  • For dressing, in a small bowl, combine the first nine ingredients. Divide salad greens among eight plates. Slice avocados; arrange avocados and tangerines over greens. Drizzle with dressing; sprinkle with cheese and bacon.

500g new potatoes
1 tbsp olive oil
squeeze of lemon juice
2 avocados
handful of toasted almonds
2 tubs mustard cress

Steps:

  • Slice the potatoes into thick rounds and boil for about 10 mins until tender, then drain. Whisk the olive oil and lemon juice together in a large bowl with a little salt and pepper, then toss in the hot potatoes and leave to cool.
  • Halve, stone and peel the avocados and cut into similar-sized chunks. When ready to serve, toss all the ingredients in with the potatoes and serve straight away.
