FRY BREAD

Fry Bread image

Fry bread is a Native American quick bread that can be served sweet or savory. Try it drizzled with honey and served alongside stew or braised beef. It's also served in Oklahoma and Colorado as an "Indian taco," topped with ingredients like ground beef, shredded cheddar, lettuce, tomato, and salsa that would normally be served in a hard taco shell.

Time 1h30m

Yield Makes 12

Number Of Ingredients 8

3 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
1 tablespoon granulated sugar
2 teaspoons coarse salt
1 cup whole milk, room temperature
1/4 cup warm water, plus more as needed
Safflower oil or lard, for frying
Unsalted butter, honey, jam, and confectioners' sugar, for serving

Steps:

  • Whisk together flour, baking powder, sugar, and salt in a large bowl. Add milk and water, stirring with a fork until a sticky dough forms. Transfer to a floured work surface and knead a few times with floured hands just until smooth (do not overwork or bread will be tough). Return to bowl and cover with a kitchen towel; let stand 30 minutes.
  • Heat 1 inch of oil to 365 degrees over medium-high in a heavy pot or deep-sided skillet. Pinch an egg-sized piece of dough with your fingers and flatten to an approximate 6-inch round (keep remaining dough covered and dust hands with flour if dough sticks). Cut a small slit in center of round with the tip of a knife (this will ensure the bread cooks evenly). Carefully lower into oil and fry, turning once, until puffed in places and golden brown on both sides, about 4 minutes. Drain on paper towels and repeat with remaining dough (return oil to 365 degrees between batches). Serve warm or at room temperature with butter, honey, jam, and confectioner's sugar.

AUTHENTIC NAVAJO INDIAN FRY BREAD (TACO BREAD)

Authentic Navajo Indian Fry Bread (Taco Bread) image

Step by easy step recipe for a Native American all-purpose flat bread dating back to the nineteenth century. Fry bread is considered a food of inter-tribal unity and is made at all Indian pow wows. It has a crispy outside and a chewy inside. Serve with butter & honey, powdered sugar, or cinnamon & sugar. Or add 'taco' ingredients to the top to make an Indian taco bread salad. You can also fill these with anything then fold them up to eat. Or simply serve plain with soup, stew, etc. *EDITED TO ADD: This is an old recipe and I know many of us no longer use so much salt - if that's the case for you then I suggest REDUCING THE SALT BY HALF.

FRY BREAD WITH CORNMEAL AND COCONUT OIL

Fry Bread With Cornmeal and Coconut Oil image

Ingenuity is behind Indigenous fry bread. When the United States government forcibly relocated Navajos (Diné) from ancestral lands in the 19th century, Native American women invented fry bread from government-issued commodities: flour, salt, yeast and water. Today, Native Americans have reclaimed this survival food as a tasty symbol of resilience. Cooks improvise on the basic formula using ingredients based on preference and geography: Styles, sizes and shapes differ by region, tribe and family. Fry bread is comfort food, and variations are shaped by memory and connection, leading to playful jests about the "right" kind. This particular recipe has Afro-Indigenous origins with its use of sugar and cornmeal, which add sweetness and density. But raw sugar replaces white sugar, and coconut oil steps in for lard. When used for frying, the oil's aroma announces the arrival of something special.

Provided by Kevin Noble Maillard

Categories     breads, side dish

Time 5h30m

Yield About 38

Number Of Ingredients 6

1 cup finely ground cornmeal
2 (1/4-ounce) envelopes instant dry yeast
1 cup raw sugar
1 teaspoon fine sea salt
3 1/2 cups all-purpose flour
Unrefined coconut oil, for frying (about 32 ounces)

Steps:

  • In a large pot, bring 2 cups water to a boil over medium-high. While whisking, add cornmeal to boiling water. Continue whisking slowly until smooth. Reduce heat to medium, add 1 1/2 cups cold water and cook, stirring continuously to prevent lumps, until thick, about 6 minutes. It should be the consistency of oatmeal. Remove from heat and let cool in pot.
  • Add yeast, sugar and salt to the cooled cornmeal, along with 1 to 2 tablespoons of water to moisten the mixture. Gradually add flour, stirring with a metal whisk or potato masher to get rid of as many lumps as you can. Sprinkle with water as needed to keep dough moist but thick. Cover with a damp cloth and let rise for 3 hours.
  • Once dough has risen, it should be springy and sticky. Heat 1 inch of coconut oil in a cast-iron skillet to about 350 degrees. Test the heat by dropping a small portion of dough into the oil. It should gently sizzle but not splatter. Use two large, oiled spoons to make golf-ball-size portions: Scoop the dough with one spoon and push the dough off into the hot oil with the other. Re-oil the spoons using the oil in the skillet as needed to make new balls of dough. Work in batches, leaving room in the skillet, as the balls will expand in the hot oil.
  • Fry until bottoms are cooked to your desired color (light gold, golden or dark brown), about 3 minutes for golden. Using tongs, flip balls over to cook the other side to the same color, 1 to 3 minutes. Gently lift out of the oil, shaking off excess oil, and transfer to paper towel-lined plates to drain. Eat while hot.

NAVAJO FRY BREAD - TRADITIONAL

Navajo Fry Bread - Traditional image

Time 49m

Yield 4 serving(s)

Number Of Ingredients 12

4 cups flour (high gluten flour is best)
1 tablespoon baking powder
1 teaspoon salt
1 cup warm water (or more)
1 -2 cup shortening or 1 -2 cup cooking oil
2 medium onions, chopped
1/2 lb shredded cheddar cheese
2 cups shredded lettuce

  • Mix the flour, baking powder and salt in a large bowl. Gradually stir in the water and work it in, adding more water a little at a time, if needed.
  • Knead by hand until soft but not sticky. Form the dough into a round ball, cover and let stand for about 30 minutes. Shape into 2" balls.
  • Heat shortening or cooking oil in a 1 1/2 " deep frying pan until hot.
  • Flatten each ball of dough by patting and stretching into a pizza shape. Carefully place the dough into the hot oil.
  • Fry until edges of the bread are golden and turn to cook the other side. Makes 4-5 pieces.

MAORI (NEW ZEALAND) FRY BREAD

Maori (New Zealand) Fry Bread image

I was given this recipe by a Nagati Tarawhai cook while in New Zealand. The bread was wonderful . . . I've never tried to make myself, however I believe I've converted the recipe into U.S. standards. I made the original recipe notation in parenthesis. Since this is a worldwide site, thought this would be a perfect place to share!

Categories     Yeast Breads

Time 1h10m

Yield 12 , 12 serving(s)

Number Of Ingredients 7

4 cups water, 110 degrees (as written -4 Breakfast Cups a bit hotter than warm, but not too hot to kill the yeast)
2 tablespoons yeast (as written - 2 dessert spoons yeast)
2 tablespoons sugar (as written - 2 dessert spoons sugar)
2 tablespoons all-purpose flour (as written, use plain flour, definitely not self-rising flour)
8 -10 cups all-purpose flour
1 pinch salt
1 quart cooking oil

Steps:

  • Stir together water, yeast, sugar and 2 tablespoons flour.
  • Leave to stand for 15 minutes in a warm position. At the end of 15 minutes this should have about 2 inches of froth on top.
  • In a large bowl put in 8-10 cups plain flour.
  • Add a pinch of salt and stir.
  • Make a well in centre and add the yeast mixture. Gradually stir in flour but don't add too much flour at once - a light hand is the story.
  • When the liquid has absorbed as much flour as necessary for it to be kneaded place on a floured board (in my case on1y plain paper) and knead until you can sit the dough in the palm of hand.
  • Spread some plain flour on a baking board. Let this stand for 15 minutes -- this is the working time for the yeast and the dough should be nice and spongy and fluffy.
  • As soon as I have let the dough stand for 15 minutes I prepare my cooking pot. Sufficient lard, dripping, cooking oil or tallow to cover at least 1/3 of cooking utensil. Heat until blue smoke rises (for us in NZ on electric store this takes 15 minutes).
  • Cooking tip: If the fat does not smoke at end of 15 minutes add a wee bit of used fat -- new fat takes forever to reach the required temperature.
  • Again! Don't worry overly much about the dough. If it fluffs up nice and spongy and fat is not ready to fry bread, then just knead the dough again and let stand, but perhaps for only 10 minutes this time.
  • All things being equal, the dough and the fat should be ready together by this time.
  • So press the dough out (add flour if the board is sticky).
  • Cut into required (triangles, squares, etc) shaped, pressing to about 1/4 inch thick.
  • Fry one side, then brown fry other side and there is your bread.
  • Well, hope you enjoy your cooking and eating.
  • Signed -- Ngati Tarwhai Cooks.
