TEXAS TOMMY HOT DOGS
30 minutes are all you need for these grilled hot dogs wrapped in bacon and cheddar cheese.

Steps:
- Heat gas or charcoal grill. Cut lengthwise slit in each hot dog, cutting almost but not quite to other side. Cut each cheese slice into 4 strips; insert strips into openings in hot dogs.
- Wrap each hot dog with slice of bacon; secure with toothpicks.
- Place hot dogs on grill over medium heat. Cook about 10 minutes, turning often, until bacon is cooked. Add buns, cut sides down, to grill for last 1 to 2 minutes or until toasted.
- Place hot dogs in toasted buns. Serve immediately.

Steps:
- To make chili, brown ground beef in 1 tablespoon vegetable oil in a large saucepan for about 10 minutes over medium heat.
- Add onion and red bell pepper, stirring well. Add tomato sauce and seasonings, stirring well.
- Allow mixture to bubble for about 10 minutes, then reduce heat to simmer and cook at least 30 minutes.
- To make hot dogs, cook on your grill or on a grill pan until just seared on the outside.
- Meanwhile, toast buns in a 400-degree oven for about 10 minutes, taking care not to brown.
- Swipe each bun with mustard, top with chili as desired, followed by grated cheese, onion and, if you're brave, jalapenos.
- If you'd like the cheese all melty, place chili dogs on a foil-lined cookie sheet and run under a hot broiler for 2 to 3 minutes or until cheese bubbles.

TEXAS TOMMIES
Steps:
- Empty pork and beans into a large casserole dish.
- Slice hot dogs lengthways starting near one end and ending before other end, so hot dog looks like a boat. Place a slice of cheese inside the hot dog, wrap a slice of bacon around the hot dog and place on top of the beans.
- Place dish, uncovered, in oven, preheated to 350 degrees F, and cook for 30 minutes. Serve hot dog on or off a roll, with beans on the side.

Steps:
- Heat water in sauce pan and add dogs and bring to a boil. Remove pan from heat and let sit 5 minutes.
- Drain dogs and when cool enough to handle split almost all the way thru to open like a book.
- Cook bacon in fry pan (No microwave) until almost cooked.
- Cut cheddar into 1/4 X 1/4 inch sticks. Put two pieces of cheese in into each dog. Wrap with bacon and secure with tooth pick on each end so that dog sits upright with slit up.
- Cook a few minutes on grill pan and turn over and cook until bacon is crisp.
- Serve with all the fixings.

TOMMY FRIES
I duplicated this recipe from one my family loves at T-Bones Steakhouse in Charleston, SC. I have no idea why they are called Tommy Fries. They are served at the steakhouse as an appetizer.

Steps:
- Boil potatoes until soft.
- Slip peels off and cube potatoes.
- Salt and pepper potatoes to taste.
- Fry bacon until crisp, saving bacon grease.
- Crumble bacon and set aside.
- Brown cubed potatoes in bacon grease and set aside.
- Pour bottle of Ranch Dressing onto an oven safe platter.
- Pile potatoes on top of dressing.
- Crumble bacon over potatoes and spread cheddar over potatoes.
- Broil in oven until cheese melts.
- Serve as a side or an appetizer.
TEXAS TWINKIES
Brisket- and cream cheese-stuffed, bacon-wrapped jalapenos with a BBQ glaze. This recipe requires pre-cooked brisket. It is a great recipe to use up any leftover brisket.

- Preheat the oven to 300 degrees F (150 degrees C).
- Slice the jalapenos in the shape of a "T": cut a straight vertical line from top to bottom with a cross-cut directly under the stem, making sure to cut only halfway through the jalapenos. Use a spoon to remove and discard all seeds and membranes. Place jalapenos on a baking sheet.
- Bake in the preheated oven for 10 minutes.
- Remove from the oven and place jalapenos in a bowl of ice water to extract the rest of the seeds' oil. If you do not do this step, they will be extremely spicy. Raise the oven temperature to 350 degrees F (175 degrees C).
- Remove jalapenos from the water and blot dry with a paper towel. Spread 1 tablespoon of cream cheese inside of each jalapeno. Place approximately 2 ounces of brisket inside each, then wrap with a slice of bacon. Sprinkle a pinch of kosher salt and a pinch of ground pepper over the top of each bacon-wrapped jalapeno, then transfer to the baking sheet.
- Bake in the preheated oven for 30 minutes. Remove from the oven and brush tops with BBQ sauce. Continue to bake for 5 minutes more.
