½ cup soy sauce
⅓ cup brown sugar
¼ cup peanut butter
3 tablespoons hoisin sauce
2 tablespoons minced fresh ginger root
2 tablespoons minced fresh garlic
2 tablespoons chile-garlic paste
1 tablespoon cornstarch
10 boneless, skinless chicken thighs, cut into bite-sized cubes
¼ cup chopped fresh cilantro, or to taste

Steps:

  • Combine soy sauce, brown sugar, peanut butter, hoisin sauce, ginger, garlic, and chile paste in a resealable container. Mix well. Stir in cornstarch. Add chicken to marinade, cover, and refrigerate for at least 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a jelly roll pan or rimmed cookie sheet with a double layer of foil large enough to envelop the chicken.
  • Spread chicken evenly over the bottom layer of foil. Top with the marinade, fold the upper layer of foil on top, and wrap to fully cover chicken.
  • Roast in the preheated oven until chicken thighs are no longer pink, about 1 hour. Unwrap and sprinkle with cilantro.

These Thai roasted chicken thighs use a Thai-inspired sauce of lime, brown sugar, Sriracha, soy sauce, fish sauce, ginger, and garlic. These marinated chicken thighs are then roasted on a bed of roasted with carrots, onions and fragrant Thai basil leaves to bring everything together.

2 tablespoons Sriracha
2 tablespoons brown sugar
2 tablespoons soy sauce
2 tablespoons fish sauce
3 cloves garlic ((minced))
2 teaspoons ginger ((grated))
Juice and zest of 1 lime
Vegetable oil
6 bone-in, skin-on chicken thighs
4 carrots ((cut into large chunks))
1 large onion ((cut into wedges))
2 cups thai basil leaves

Steps:

  • Preheat oven to 400 degrees F. In a medium bowl, mix together the Sriracha, brown sugar, soy sauce, fish sauce, garlic, ginger, lime juice, and lime zest.
  • Heat 2 tablespoons oil in a roasting pan set over your stove burners at medium heat. Sear the chicken skin-side down for 5 minutes. Flip the chicken and sear for another 3 minutes. Add the carrots and onions to the pan. Toss in the sauce mixture, deglazing the pan as you mix everything together.
  • Position all the chicken pieces skin side up amongst the vegetables, and drizzle with a little more oil. Place in the oven to roast for 35-40 minutes, stirring in the Thai basil halfway through baking. Serve with jasmine rice!

⅓ cup chopped fresh Thai basil
¼ cup fish sauce
3 green onions, thinly sliced
3 tablespoons canola oil
2 tablespoons freshly squeezed lime juice

2 teaspoons freshly grated ginger
¾ teaspoon kosher salt
¾ teaspoon freshly ground black pepper
2 pounds skinless, boneless chicken thighs
salt and ground black pepper to taste

Steps:

  • Combine cilantro, Thai basil, fish sauce, green onions, lime juice, lime zest, brown sugar, ginger, kosher salt, and 3/4 teaspoon pepper in a medium-sized bowl.
  • Combine chicken thighs and cilantro mixture in a gallon-sized zip-top bag. Marinate in the refrigerator 8 hours to overnight, turning occasionally.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Drain chicken thighs and discard marinade. Season with salt and pepper to taste.
  • Add chicken to the preheated grill and cook until no longer pink in the centers, 7 to 10 minutes per side. An instant-read thermometer inserted into the center of each thigh should read at least 165 degrees F (74 degrees C). Serve immediately.

1 small jalapeño chili, cut in half
1 cup low-fat milk
2 tablespoons low-sodium soy sauce
1 1/2 tablespoons brown sugar
1 teaspoon coconut extract
12 chicken thighs (about 3 3/4 pounds), skin removed and fat trimmed
Chopped fresh cilantro

Steps:

  • Combine first 9 ingredients in processor. Purée mixture until smooth. Transfer to large shallow baking dish. Add chicken thighs and turn to coat. Cover and refrigerate overnight, turning chicken occasionally.
  • Preheat oven to 350°F. Bake chicken until cooked through, about 1 hour 15 minutes. Transfer chicken to platter. Garnish with chopped cilantro.

This is my first recipe - please be kind! My kids love it and when I take it to a BBQ everyone wants the recipe. It is a variation on one I found in epicurious a while ago. It is very easy and very yummy!!

12 boneless skinless chicken thighs
1/3 cup chopped fresh basil
1/3 cup chopped fresh coriander (cilantro)
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon minced chili
1 1/2 tablespoons soy sauce
1 1/2 tablespoons fish sauce
1 1/2 tablespoons olive oil
1 1/2 tablespoons brown sugar

Steps:

  • Combine all ingredients except chicken in a bowl.
  • Mix thoroughly.
  • Add chicken and leave to marinate at least one hour, preferably longer.
  • Grill chicken on the BBQ, hotplate or in the griller until golden brown and cooked through.
  • Ususlly you would expect 12 thigh fillets to feed 4 to 6 people- in my family the kids eat 4 each so this recipe serves 3.

  • Preheat oven to 400°. Generously brush cabbage wedges on both sides with oil; season with salt and pepper. Arrange, a cut side down, in a medium cast-iron skillet. Remove chicken from marinade and set, skin side up, on top of cabbage; season with salt and pepper. Roast 35 minutes. Increase oven temperature to 450° and continue to roast, rotating pan halfway through, until chicken thighs are browned and crispy, 5–7 minutes more.
  • Meanwhile, bring rice, ginger slices, remaining 1 cup coconut milk, remaining ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, and 1 cup water to a boil in a medium saucepan over medium-high heat. Reduce heat, cover, and simmer until liquid is absorbed, 15–20 minutes. Remove pan from heat. Fish out and discard ginger slices. Re-cover pan and let rice sit until ready to serve.
  • Arrange chicken on a platter; drizzle with reserved marinade and top with cilantro leaves. Serve with coconut rice and lime wedges for squeezing over.
