THREE-CHEESE PASTA SALAD WITH OLIVES

Steps:
- Cook pasta in pot of boiling water until tender but still firm to bite. Drain. Rinse with cold water and drain well.
- Mix pasta, olives, bell pepper, all cheeses and basil in large bowl to combine. Pour vinegar into small bowl. Gradually whisk in oil. Add sugar; season dressing to taste with salt and pepper. Toss salad with enough dressing to coat. Cover and refrigerate until well chilled, about 2 hours. (Can be prepared 8 hours ahead; keep refrigerated.)

- Bring 1 gallon salted water to a rolling boil in a large stockpot. Add 1 tablespoon olive oil, and pasta, and cook until al dente, about 6 to 8 minutes. Drain in a colander, shaking vigorously, and immediately transfer to an oiled cookie sheet or clean countertop to cool. When cool, transfer to a bowl, and toss with 1/4 cup extra virgin olive oil.
- Mix all remaining ingredients in a bowl. Toss with pasta, adjust seasonings, and serve.

- Heat 3 tablespoons oil in heavy large Dutch oven over medium-high heat. Add onion and garlic; sauté until onion is translucent, about 5 minutes. Mix in tomatoes, dried basil and crushed red pepper. Bring to boil, breaking up tomatoes with back of spoon. Add broth; bring to boil. Reduce heat to medium; simmer and mixture thickens to chunky sauce and is reduced to 6 cups, stirring occasionally, about 1 hour 10 minutes. Season with salt and pepper. (Can be made 2 days ahead. Cover and chill. Rewarm over low heat before continuing.)
- Preheat oven to 375°F. Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain well.

- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente. Drain.

- Cook the pasta in boiling water until JUST firm-tender (don't overcook) drain well under cold water.
- Transfer the pasta to a large bowl and toss with a couple tablespoons with olive oil so that the pasta will not stick.
- Add in the olives, bell pepper, all of the cheeses and fresh basil (or dryed basil if using); toss to combine.
- In a small bowl whisk together the oil, vinegar and sugar; pour over the pasta and cheese in the bowl and toss to combine well.
- Season with salt and lots of black pepper.
