There are so many benefits from thyme infused oil and it is very easy to prepare it so you have nothing to lose.

Steps:
- In the clean glass jar add the thyme.
- Pour with olive oil to the level of the herbs.
- Close and leave it to a shady place for 40 days.
- After that period, strain through a cloth.
- Pour it back into the clean jar.
- Close and label it with date and name.
- Keep it in a dark and cold place.
HERB-INFUSED OLIVE OIL
For Passover dinner, add a little zest to matzo with olive oil infused with herbs like rosemary and thyme. Though you can use store-bought flavored oil, we suggest creating your own version with your favorite herbs.

- Heat olive oil over medium heat until just bubbling. Add herbs. Cook for 2 minutes, then remove from heat. Steep 1 to 2 hours. Strain out herbs, and funnel into a clean glass container. Refrigerate up to 1 week; bring to room temperature before using.
THYME OIL
This oil is very simple. Drizzle over roasting pumpkin and potatoes, or use a spoonful with butter or oil when frying mushrooms. It is also good with bacon or used in salads, soups and stews. Thyme Oil can be used soon after making it, but the flavour fully develops over a few days until it is quite strong. If you want a milder flavour, use twice as much oil or half as much herb. Keeps for around three weeks.
