8 ears corn
2 cups water

Steps:

  • Husk the corns, cut off the bottom "stub" and wash well.
  • To the pressure cooker base add the water, and arrange the corn vertically, with the larger end in the water and the smaller end up - if the ear is too tall lay it diagonally or snap it in half and put the wider end onto the base of the pressure cooker. Do not crowd the corn cobs - leave space around ears for steam to get there and cook the kernels evenly.
  • Close and lock the lid of the pressure cooker.
  • Electric pressure cookers: Cook for 2 minutes at high pressure. Stovetop pressure cookers: Turn the heat up to high and when the cooker indicates it has reached high pressure, lower to the heat to maintain it and begin counting 1 minute pressure cooking time.
  • When time is up, open the pressure cooker with the Normal release - release pressure through the valve.
  • Serve with lots of butter and salt.

Steps:

  • Add 1 1/2 cups water to a 6-quart Instant Pot® and add the rack. Stand the corn on the rack, broken ends down (the corn will fit snugly). Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 4 minutes (see Cook's Note).
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid.

1 ½ teaspoons onion powder
1 (12 ounce) bottle beer

Steps:

  • Place brisket fat-side up on a rack inside an electric pressure cooker. Sprinkle garlic powder and onion powder over brisket; pour beer into the pot.
  • Seal pressure cooker and cook beef on the "meat" setting according to manufacturer's instructions, about 1 hour 30 minutes. Allow pressure to release naturally according to manufacturer's instructions.
  • Transfer brisket to a cutting board. Remove top layer of fat from the brisket. Slice across the grain using an electric knife.

1 chicken carcass, from a 4-5 lb roasted chicken
2 large carrots, peeled and broken in half
2 large celery ribs, broken in half
1 medium onion, peeled and quartered
10 peppercorns
2 bay leaves
10 cups cold water

Steps:

  • Add all the ingredients to the pressure cooker.
  • Lock on the lid and bring to pressure over high heat.
  • Reduce heat to medium and cook for 40 minutes.
  • Let the pressure drop naturally.
  • Remove the lid and strain through a cheesecloth lined colander.
  • Cool in the fridge, skim off the fat, and use or divide up for freezing.

1 onion, diced
4 cloves garlic, minced
4 cups fresh corn kernels
4 cups peeled and diced potatoes
4 cups vegetable broth
½ teaspoon fresh thyme leaves
½ teaspoon paprika
1 teaspoon salt
1 teaspoon ground black pepper
1 cup heavy cream

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter and melt. Stir in onion and garlic; cook until onion is soft and translucent, about 5 minutes. Turn off Saute function.
  • Add corn, potatoes, vegetable broth, thyme, paprika, salt, and pepper to the pot; stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Release any remaining pressure carefully using the quick-release method according to manufacturer's instructions. Unlock and remove the lid. Remove 1 cup of potatoes and corn to a bowl. Mash with a fork and return to the pot.
  • Select Saute function again and pour in heavy cream. Cook until soup has thickened to desired consistency.

Number Of Ingredients 12

HERBS:
2 pounds chicken wings (or a combo of drumsticks and or thighs)
2 stalks celery
1 onion (just cut into quarters and don't worry about peeling)
2 carrots (no need to peel)
2 cloves garlic (unpeeled)
2 teaspoons whole peppercorns (I put mine into a tea "ball" to easily remove)
Olive oil
Salt & pepper
Small bunch of fresh parsley (about 1 dozen stalks)
2 bay leaves
NOTE: I don't add salt to my chicken broth until I actually use it. That way, I can control the seasoning if I use it within a recipe.

Steps:

  • Preheat oven to 400°F. Season chicken with salt and pepper. Place into a roasting pan and add vegetables, onion and garlic. Drizzle with olive oil, and mix with hands to coat. Roast for approximately 45 minutes, until everything has achieved a dark color. If you don't own a pressure cooker (buy one!) then simmer this on a stove top for about an 90 minutes. If using a pressure cooker: Pour in 8 cups of water into the pot. Add all the roasted chicken and vegetables into the pot. Add the bay leaves and fresh parsley. Lock on the lid, and pressure cook on HIGH for 35 minutes (or use the SOUP button). When the PC beeps, do a quick pressure release. Carefully strain the broth. The broth can be frozen for future use. This uses only the husks and cobs, not the corn kernels. I estimate that a 6-quart pressure cooker would be large enough for this recipe.

5 large corn husks
5 large corn cobs
5 cups cold water (1.2kg)

Steps:

  • Preheat oven to 175 degrees C or 350°F.
  • Shuck the corn, reserving the husks.
  • Scatter the husks on a baking sheet. Top with an inverted cooling rack.
  • Bake until golden brown, about 15 minutes.
  • Cut the kernels from the cobs; reserve the corn kernels for some other use.
  • Place the corncobs and toasted husks, BUT NOT THE KERNELS, in a 6-quart or larger pressure cooker. Add the water.
  • Secure the lid and pressure-cook at 1-bar (low pressure) for 30 minutes (start timing when full pressure is reached). (If your stove runs hot, and it is difficult to maintain only 1 bar of pressure, either stack another burner grate or use a heat diffuser.).
  • Remove from heat, allow pressure to reduce naturally.
  • Strain through a sieve lined with 1 layer of cheesecloth.
  • Stock may be used warm or cold. Keeps for 5 days in the refrigerator or up to 6 months when frozen.
