Quick, easy turkey fried rice. It conquers that need for something "different" after a day of roasted turkey and the fixin's.

nonstick cooking spray
1 medium onion, diced
½ cup frozen peas and carrots
2 tablespoons salted butter
3 cups cold cooked rice
2 cups diced cooked turkey
2 tablespoons soy sauce, or more to taste
1 tablespoon sesame oil, or as needed
2 large eggs

Steps:

  • Coat a large pan with cooking spray. Add onion and saute over medium heat until translucent, about 5 minutes. Add frozen vegetables and butter; cook and stir, allowing butter to melt and veggies to thaw, 3 to 5 minutes.
  • Increase heat to medium-high and stir in rice and turkey. Add soy sauce, 2 tablespoons at a time, and stir until rice takes on color. Push everything to the sides of the pan. Add sesame oil to the center of the pan and stir rice mixture until coated. Push everything to the sides of the pan again. Break eggs in the center of the pan. Scramble in the center until set, 2 to 3 minutes; then stir into rice mixture until well combined.

1 tablespoon canola oil
1 cup diced carrot
1 cup corn kernel
1/2 cup frozen peas
3 cups cold cooked brown rice
1/2 cup chopped scallion
2 tablespoons soy sauce
1/4 teaspoon white pepper (if unavailable, use black pepper)
8 ounces diced tofurkey
1/4 cup fresh cilantro

Steps:

  • In a large wok or skillet over medium-high heat, cook garlic in hot oil about 10 seconds.
  • Add carrots, corn and peas; stir-fry 1 minute.
  • Add rice, scallions, soy sauce and pepper; stir-fry 1 minute, until well combined.
  • Add tofurkey; stir-fry 1 to 2 minutes, or until heated through.
  • Sprinkle with cilantro.

1 tablespoon olive oil
2 eggs, beaten
1/2 pound ground turkey
2 green onions, sliced
3 cups cold cooked rice
1 cup bean sprouts
1/4 cup minced fresh cilantro
1/4 cup reduced-sodium soy sauce
2 tablespoons chunky peanut butter
1 teaspoon sugar
1/2 teaspoon garlic powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground ginger

Steps:

  • In a large skillet, heat oil over medium-high heat. Pour eggs into skillet. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely cooked, remove to a plate; set aside., In the same skillet, cook turkey and onions over medium heat until meat is no longer pink. Stir the rice, bean sprouts and cilantro. In a small bowl, whisk the remaining ingredients until blended; stir into skillet. Chop egg into small pieces; stir into skillet and heat through.

1 cup uncooked brown rice
2 cups cubed cooked turkey breast
3 tablespoons soy sauce
1 egg, lightly beaten
1 small onion, chopped
1/4 cup green pepper, chopped
1/4 cup celery, chopped
1 tablespoon canola oil
1 cup romaine lettuce, shredded

Steps:

  • In a saucepan, bring broth to a boil. Stir in rice. Reduce heat; cover and simmer for 45-50 minutes or until liquid is absorbed and rice is tender. Remove from the heat; cool. Cover and refrigerate overnight.
  • In a bowl, combine turkey and soy sauce; cover and refrigerate. In a large nonstick skillet, cook and stir the egg over medium heat until completely set. Remove and set aside. In the same skillet, saute onion, green pepper and celery in oil until tender. Add rice and turkey; cook and stir over medium heat for 6-8 minutes. Add lettuce and reserved egg; cook and stir for 1-2 minutes. Serve immediately.

I make this fried rice recipe with tofu all the time, as we always seem to have leftover cooked rice. You can add other vegetables or leftover cooked chicken as well. Make sure you have all your ingredients prepared by the time you start cooking!

½ cup tofu
3 tablespoons soy sauce, divided, or to taste
2 tablespoons vegetable oil
½ onion, finely chopped
1 carrot, peeled and finely chopped
2 ½ cups cooked rice, or to taste
3 eggs
1 tomato, chopped
1 teaspoon white sugar
salt to taste
ground white pepper to taste

Steps:

  • Combine tofu and 2 tablespoons soy sauce in a bowl and marinate while you prepare the rest of the ingredients.
  • Heat oil in a skillet over medium heat. Add onions and carrot; cook until lightly browned, about 5 minutes. Add tofu and marinade and cook for 2 to 3 minutes, stirring occasionally. Stir in rice and cook for 3 minutes while stirring.
  • Move all ingredients to one half of the skillet and crack eggs into the empty half. Cook for 2 minutes until eggs start to set. Mix eggs and the rest of the ingredients until well combined. Season with remaining soy sauce and sugar; mix well.
  • Stir tomato into the skillet; cook and mix for 1 minute. Season with salt, white pepper, and more soy sauce if desired.
