1 package (8 ounces) spiral pasta
1 package (10 ounces) frozen creamed spinach
1 can (14-1/2 ounces) diced tomatoes, undrained
3 tablespoons grated Romano cheese, divided
3 tablespoons grated Parmesan cheese, divided
1/2 teaspoon salt

Steps:

  • Cook pasta according to package directions. Meanwhile, prepare spinach according to package directions. Drain pasta; place in a large bowl. Add the spinach, tomatoes, 2 tablespoons of Romano cheese, 2 tablespoons of Parmesan cheese and salt; toss to coat. Sprinkle with the remaining cheeses.

2 tablespoons evoo, extra-virgin olive oil, 2 turns of the pan
1 large shallot, finely chopped
2 cloves garlic, chopped
1 (28-ounce) can diced tomatoes in juice, drained
1 can crushed tomatoes, 28 ounces
2 cups good quality vegetable stock, available in soup aisle
1/2 ten-ounce sack triple washed spinach, stems removed and spinach shredded with knife
Salt and pepper to your taste

Steps:

  • Heat a medium soup pot over moderate heat. Add oil, shallots and garlic. Sauté 5 minutes. Add drained tomatoes and crushed tomatoes, stir. Add stock and stir to combine soup. Stir in spinach in handfuls to wilt it and combine with soup. Season soup with salt and pepper to your taste. Bring soup to a bubble, reduce heat and simmer 10 to 15 minutes to reduce.

1/4 cup peanut or canola oil
1 to 2 hot fresh green chiles, very finely chopped
2 medium onions, peeled and very finely chopped
3 garlic cloves, peeled and very finely chopped
1 ripe tomato (4 ounces), peeled after dropping into boiling water for 15 seconds, and then peeled and finely chopped
3 pounds spinach, cut crosswise into very fine strips
1 teaspoon salt, or to taste
1 teaspoon garam masala

Steps:

  • Put the oil in a large, wide pot and set over medium-high heat. When very hot, put in the chile, onions and garlic. Stir and fry until the onions turn medium brown. Add the tomato. Stir and fry for 2 minutes. Now put in the spinach and salt. Cover, allowing the spinach to wilt. Stir, turn the heat to medium, cover again, and cook for 25 minutes. Uncover, add the garam masala, and stir. Cook, uncovered, another 5 to 6 minutes, or until almost no liquid is left is left at the bottom of the pan. Turn up the heat during this period, if needed.

300g cherry tomatoes, halved
4 small garlic cloves, sliced
2 tbsp extra virgin olive oil
4 tbsp tamarind paste
1 tsp sugar
1 leek, halved and finely sliced
5 spring onions, finely sliced
300g spinach, wilted, excess water squeezed out and roughly chopped
400g feta, crumbled
3 large eggs, beaten
2 tbsp finely chopped coriander leaves, plus a few leaves to serve
1 tbsp smoked paprika
6 filo pastry sheets
100g unsalted butter, melted
1 tsp chilli flakes

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Mix the tomatoes, garlic, half the oil, tamarind and sugar together, along with a generous pinch of seasoning. Tip onto a baking tray and put in the oven for 25-30 mins or until sticky and roasted. Leave to cool a little.
  • Heat the remaining oil in a large frying pan over a medium heat, then add the leek and spring onions, stirring occasionally until softened, about 10 mins. Leave to cool completely, then tip into a bowl and mix with the spinach, feta, roasted tomatoes, eggs, coriander, smoked paprika and seasoning.
  • Heat the oven to 200C/180C/gas 6. Brush a sheet of filo with melted butter, then lay another sheet on top and brush with butter again, keeping the rest of the filo covered with a clean, damp tea towel to stop it drying out, Spoon a third of the filling along the long side of the rectangle and gently roll into a long tube. Repeat this two more times until you have used all the filo and filling. In a round pie dish, or round ovenproof pan, carefully coil the three filo rolls from the outside of the dish in towards the middle, so you end up with a large spiral. Don't worry if it cracks a bit - you can layer the filo to cover any cracks. Brush the whole spiral with more butter, sprinkle over the chilli flakes and bake for 50-60 mins until deep, golden brown. Scatter over the extra coriander to serve.

¾ cup ghee (clarified butter)
2 large onions, thinly sliced
2 cloves garlic, minced
1 tablespoon ginger paste, or more to taste
2 teaspoons chile powder

2 teaspoons coriander seeds
2 teaspoons ground black pepper

Steps:

  • Wash spinach; shake dry and stem. Slice into 1-inch strips.
  • Heat ghee in a large saucepan over medium-low heat. Add onions and garlic and cook until golden and soft, 5 to 7 minutes. Reduce heat to low.
  • Add ginger paste and toss gently to incorporate. Stir in chile powder, turmeric, garam masala, coriander seeds, peppers, salt, coriander, and cumin. Cook until fragrant, about 1 minute.
  • Add spinach and coat well; add tomatoes with 1/2 of their juice. Bring mixture to a rapid boil. Reduce heat and simmer until the spinach and tomatoes have cooked down, 5 to 10 minutes.

130g basmati rice
200g split red lentils
3 tbsp olive oil
1 onion , finely sliced
1 thumb-sized piece ginger , finely grated
2 garlic cloves , crushed
2 tsp turmeric
2 tsp ground coriander
2 tsp cumin seeds
1-2 tsp medium chilli powder
1.2l vegetable stock
150g cherry tomatoes
200g spinach
1 red chilli , finely chopped
chapatis , to serve (optional)

Steps:

  • Tip the rice and lentils into a sieve and rinse thoroughly under cold, running water. Set aside.
  • Heat 1 tbsp of the oil in a large saucepan or casserole. Add the onion along with a pinch of salt and fry over a medium-high heat for 10 mins or until golden. Stir through the ginger, garlic, turmeric, ground coriander, half the cumin seeds and the chilli powder and fry for 1 min. Add the rice and lentils to the pan and pour in the stock, bring to a simmer then cover, turn down and cook for 25 mins, stirring now and then, until the lentils have turned creamy. Add the tomatoes and spinach and cook for 5 mins.
  • Heat the remaining oil in a small frying pan and add the remaining cumin seeds, cooking for 1 min. Spoon the lentils into four bowls, drizzle over the cumin oil and top with the chilli. Serve with warm chapatis, if you like.

For lasagne
2 pounds Asian or baby Italian eggplants (4 to 6), halved crosswise, then cut lengthwise into slices slightly less than 1/4 inch thick

1/2 teaspoon black pepper
10 ounces baby spinach
1 pound ricotta (preferably fresh)

8 dried lasagne noodles (not no-boil; 8 ounces)

Steps:

  • Roast tomatoes for sauce:
  • Preheat oven to 450°F.
  • Toss tomatoes with 3 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper and arrange, cut sides up, in 1 layer in 2 oiled glass or ceramic shallow baking dishes. Roast tomatoes in upper and lower thirds of oven, switching position of dishes halfway through baking, until skins are wrinkled and beginning to brown, 35 to 40 minutes. Cool slightly in baking dishes on racks.
  • Roast eggplant for lasagne:
  • Toss eggplant slices with oil, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper and arrange in 1 layer on 2 oiled baking sheets. Bake in upper and lower thirds of oven, switching position of sheets halfway through baking and turning slices over once, until tender, 12 to 14 minutes.
  • Reduce oven temperature to 350°F.
  • Finish tomato sauce:
  • When tomatoes are cool enough to handle, peel off skin and discard. Purée tomatoes with their juices in a blender, pulsing until almost smooth.
  • Cook onion and garlic in 2 tablespoons oil in a 3- to 4-quart heavy saucepan over moderate heat, stirring, until golden, about 10 minutes. Stir in tomato purée, water, 1/4 teaspoon salt, and 1/4 teaspoon pepper and simmer, partially covered, stirring occasionally, until slightly thickened and reduced to about 4 cups, about 15 minutes. Stir in basil.
  • Make filling and assemble lasagne:
  • While sauce is simmering, cook spinach in a 3- to 4-quart pot of boiling salted water, uncovered, 1 minute, then drain in a colander. When cool enough to handle, squeeze any excess water from spinach and coarsely chop. Stir together ricotta, yolk, spinach, parmesan, 3/4 teaspoon salt, and 1/4 teaspoon pepper until combined well.
  • Cook lasagne noodles in a 6- to 8-quart pot of boiling salted water , stirring occasionally, until tender. Drain noodles in a colander and rinse under cold running water.
  • Spoon 2 cups tomato sauce into a 13- by 9-inch glass baking dish (or other 3-quart shallow baking dish). Lay out 4 lasagne noodles on a work surface, then spread 1/3 cup filling evenly over each noodle and cover with eggplant slices in 1 layer. Roll up each and arrange spirals, seam sides down and without touching, over sauce in dish, then make 4 more rolls and arrange in dish. Brush noodles with water, then spoon some sauce down middle of rolls and cover dish tightly with foil.
  • Bake in middle of oven until heated through, about 20 minutes. Heat remaining tomato sauce and serve on the side.
