1/4 cup olive oil
3 tablespoons chopped fresh basil
3 to 4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
4 medium tomatoes, diced
2 tablespoons grated Parmesan cheese
1 loaf (1 pound) unsliced French bread

Steps:

  • In a large bowl, combine oil, basil, garlic, salt and pepper. Add tomatoes and toss gently. Sprinkle with cheese. Refrigerate at least 1 hour. , Bring to room temperature before serving. Cut bread into 24 slices; toast under broiler until lightly browned. Top with tomato mixture. Serve immediately.

1/2 cup olive oil, plus 1 tablespoon
2 tablespoons balsamic vinegar
1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, drained well
1/2 cup chopped sweet onion
2 tablespoons chopped fresh basil leaves
1/2 teaspoon finely chopped garlic
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 teaspoons grated Parmesan cheese

Steps:

  • Preheat oven to 400°F. Brush both sides of each bread slice with 1/2 cup olive oil. Place slices on baking sheet; bake 5 minutes on each side, or until golden brown.
  • Combine remaining olive oil, balsamic vinegar, tomatoes, onion, basil, garlic, salt, pepper and parmesan cheese; mix well. Spoon evenly divided portions onto each slice of toast. Serve.

8 plum tomatoes, diced
1 cup chopped fresh basil
½ red onion, minced
freshly ground black pepper
3 cloves garlic

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.
  • Arrange bread on a baking sheet. Place in oven, and bake until well toasted, approximately 5 minutes.

1 cup grape tomatoes, halved

3 garlic cloves, minced
16 slices French bread baguette (1/2 inch thick)
2 beef ribeye steaks (3/4 inch thick and 8 ounces each)
1-1/2 teaspoons Montreal steak seasoning
2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 400°. In large skillet, heat 2 tablespoons oil over medium-high heat; saute onion until softened. Reduce heat to medium-low; cook until golden brown, 25-30 minutes, stirring occasionally., Toss tomatoes with 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper; spread in a 15x10x1-in. pan. Roast until softened, 10-15 minutes. Stir tomatoes into onion, mashing lightly. In small bowl, mix cream cheese, blue cheese, garlic and the remaining salt and pepper., Brush bread slices with remaining oil; grill, covered, over medium heat until lightly toasted, 1-2 minutes per side. Sprinkle steaks with steak seasoning. ½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

½ pound diced fresh mushrooms
5 green onions, minced

3 large tomatoes, diced
1 teaspoon balsamic vinegar
2 cups shredded mozzarella cheese

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Arrange bread slices on a baking sheet in a single layer.
  • Broil bread slices until toasted, 1 to 2 minutes; watch carefully to prevent burning. Remove toasted slices and set aside on baking sheet.

1 pound plum tomatoes (about 4 to 5 large), or another variety of ripe tomatoes
1 teaspoon kosher salt

2 medium tomatoes (diced)
1/2 small onion (diced)
2/3 cup olive oil
3 tablespoons white vinegar
2 teaspoons basil (dried or fresh)
1 teaspoon italian seasoning (Thyme, Oregano, etc.)

black pepper
10 1/2 inches thick slices Italian bread
1 cup shredded mozzarella cheese
olive oil
salt and black pepper (to taste)

Steps:

  • 1.) Combine the first 8 ingredients and stir together in a medium sized bowl. Cover and place in fridge for at least one hour. (Hint, the longer the mixure marinates, the better flavor you will get! I like to let it sit in the fridge over night.).
  • 2.) Pre-heat oven to 400 degrees.
  • 3.) Place all ten slices of Italian Bread on a baking sheet and bake/toast for 6 to 7 minutes per side in the 400 degree oven. (This is more to dry the bread out than giving any color to the bread. So, don't worry if there is not much browning of the bread!).
  • 4.) After the bread is baked/toasted on both sides, drizzle a little Olive Oil on each piece of bread.
  • 5.) Then top each piece of bread with 1 1/2 to 2 spoonfuls of the Tomato and Onion marinade.
  • 6.) Sprinkle each piece of bread with Salt and Black Pepper to taste.
  • 7.) Sprinkle each piece of bread with the Mozzarella cheese.
  • 8.) Place topped slices of bread back into the 400 degree oven until the cheese has melted. (usually about 8-10 minutes).
  • 9.) Enjoy!
