SOUR CREAM SCONES
A light and delicious sour cream scone

Steps:
- Preheat the oven to 400 °.
- In a large mixing bowl whisk together flour, sugar, baking powder, baking soda and salt.
- Add the cold butter to the flour and toss to coat.
- Using your thumbs and fingers shingle the butter into the flour as directed in the post.
- In a smaller mixing bowl beat egg and then add the sour cream and milk or cream to the egg and whisk to combine.
- Make a well in the dry ingredients and add the egg /sour cream mixture.
- Mix using a fork until the flour is hydrated and the dough just comes together. It will be shaggy.
- Turn the dough onto a piece of parchment paper and form a 6-8 inch circle. Don't overwork the dough or pat it smooth.
- Cut the dough round into 8 even wedges and put them on a parchment lined baking sheet.
- Chill the wedges for 30 minutes in the refrigerator.
- Bake the scones in the center of the oven for 15-20 minutes until the outside is risen and golden and the center is done.
- When the scones are done cool them completely on a wire rack.
- Make a glaze.
- Add the confectioner's sugar, 1 TBS milk or cream and 1/2 tsp vanilla in a medium bowl and stir to combine.
- Drizzle on top of the cooled scones.
- Sprinkle sanding sugar over the scones liberally.
- Serve with butter and jam or lemon curd.

- Combine the first 5 ingredients and then fold in the shredded cheese.
- In a small bowl, combine the eggs, sour cream, oil and milk.
- Add the wet ingredients to the dry and stir just until moistened.
- On a lightly floured surface, knead the dough 10 to 12 times and then pat it out to a 3/4 inch thickness.
- Cut dough with a 3" round cutter, or simply cut into 3" squares.
- Bake in a preheated 400 degree oven for 15 minutes.

- Grate the Gouda (100 gram) and add it to a bowl with All-Purpose Flour (140 gram), Sour Cream (125 gram), and Salt (1 pinch).
- Knead all of the ingredients into a dough.
- Dust a clean surface with flour. Roll the pastry to a 1/2-inch (1cm) thick sheet. Cut the dough into circles using a round cutting mold or a small glass (1-inch or 2.5cm diameter).
- Place the circles on the Philips double layer accessory and repeat the previous step with any leftover dough.
- Place the cheese scones into the basket leaving some space near the edges for the double layer accessory. No extra space is needed between the scones as they will only rise upwards during baking.
- Place the double layer accessory into the basket and then in the Airfryer. Start the device at 400 degrees F (200 degrees C) for 12 minutes.
- Bake the scones until golden. Serve warm.

- Preheat the oven to 375°F (190°C) and place rack in center of oven.
- In a small bowl whisk together heavy cream, egg, and vanilla extract.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder and salt.
- Using a pastry blender or two knives, cut the butter into the flour mixture until it resembles coarse crumbs. Stir in the chocolate chips. Add the cream mixture and stir just until the dough comes together (add more cream and/or flour as necessary).
- Transfer the dough to a lightly floured surface and knead a few times. Shape the dough into a 7-inch (18 cm) round and cut into eight wedges. Place them on the baking sheet.
- Bake for about 20 minutes or until they are firm around the edges but a bit soft in the center. A toothpick inserted into the center of a scone will come out clean. Cool on a wire rack.
- Mix the glaze ingredients together in a bowl. Drizzle on top of the scones (optional).

TRIPLE SEC CREAM SCONES
The orange flavored raisins make these so good. Make sure to soak them at least 15 minutes! EDIT: I tried these with cranberries and they do not work as well as the raisins. I would imagine any *dried* fruit would work best, since letting it soak in liquid (triple sec) reconstitutes its moisture, whereas cranberries will not absorb as much liquid. Hope that helps!

- Soak the raisins in liqueur for at least 15 minutes ahead of time. (add more triple sec if it doesn't cover the raisins).
- Preheat oven to 425°F.
- Combine dry ingredients and cut in the butter with a pastry blender until it resembles course meal.
- Drain the liqueur from the raisins.
- Mix the eggs, cream, and raisins.
- Add the egg mixture to the flour mixture, stirring just until a dough forms.
- Turn the dough on to a floured board and knead LIGHTLY for one minute (don't overwork the dough).
- Pat the dough into a 3/4 inch thick round. Cut into 8 wedges and place on a lightly greased cookie sheet.
- Bake for 15 minutes until golden.
