TUNISIAN GRILLED SALAD (SELATA MISHWIYA)



Tunisian Grilled Salad (Selata Mishwiya) image

This is a a grilled salad that is quite common throughout Tunisia. There are variations on how this salad is made throughout the different cities and regions of Tunisia. You can even use it as a spread in sandwiches. It's one of my family's best-loved recipes. Enjoy with nice warm crusty French bread or even crackers.

¼ cup olive oil
2 cloves garlic, chopped
1 ½ teaspoons harissa (North African red pepper paste)
1 ½ teaspoons ras el hanout (North African spice mix)
1 ½ teaspoons ground red chile pepper
salt and ground black pepper to taste
3 large tomatoes
2 green bell peppers
1 large onion
2 green chile peppers
1 (5 ounce) can tuna packed in olive oil
2 hard-boiled eggs, halved
½ cup whole black olives
1 small lemon, cut into wedges

Steps:

  • Combine olive oil, garlic, harissa, ras el hanout, ground chile pepper, salt, and pepper in a mortar; mash into a paste with a pestle.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
  • Place tomatoes, green bell peppers, onion, and green chile peppers on the baking sheet.
  • Cook under the preheated broiler, turning occasionally, until skins have blackened and insides are soft, about 10 minutes. Cool until easily handled, about 5 minutes. Peel, seed, and chop into small pieces.
  • Place tomato mixture in a large bowl. Stir in garlic paste mixture slowly with a wooden spoon. Spoon onto a serving platter. Garnish with tuna, eggs, and olives. Squeeze 1 lemon wedge over platter. Arrange remaining wedges on the sides.

1 1/2 lbs carrots, peeled, cut into 1/4 in. rounds
3 tablespoons olive oil
2 1/4 teaspoons ground cumin
1/4 teaspoon cayenne pepper
1/2 cup water
3 tablespoons white vinegar

Steps:

  • Cook carrots in medium saucepan of boiling, salted water until crisp-tender, about 8 minutes; drain well.
  • Stir oil, cumin and cayenne in heavy large skillet over medium heat until aromatic, about 30 seconds.
  • Add carrots, then 1/2 cup water and vinegar.
  • Simmer over medium heat until liquid is absorbed, stirring often, about 5 minutes.
  • Season with salt and pepper.
  • Remove from heat; cool.
  • Mix in cilantro.

2 pounds carrots, peeled
1 teaspoon salt, or as needed
3 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground caraway
1 teaspoon ground coriander
1 teaspoon harissa or other hot sauce
Fresh lemon juice, as needed, optional

Steps:

  • Bring a pot of water to a boil, and add carrots and 1 teaspoon salt. Boil until almost tender, about 15 minutes. Meanwhile, set aside a bowl of ice water. Transfer cooked carrots to the ice bath and chill.
  • Drain carrots, and cut into disks about 1/4-inch thick. Transfer to a bowl and add olive oil. Sprinkle with cumin, caraway, and coriander. Add harissa or hot sauce, and mix gently. Season with lemon juice and salt to taste. Serve at room temperature.

1 teaspoon salt
1/4 cup olive oil
3 tablespoons white wine vinegar
1 garlic clove, crushed (add more to taste)
1 teaspoon harissa (or to taste)
2 teaspoons cumin, ground
black olives, to garnish

Steps:

  • Boil the carrots in water with salt until they are tender. Mash the carrots, or puree them with a blender or food processor.
  • Add the olive oil, vinegar, garlic and spices, and chill.
  • Place in a serving dish and garnish with the olives. Serve with bread.
  • *If you don't have harissa, you can substitute with paprika (not smoked) and a pinch of cayenne pepper.

This is delicious and a must try for anyone who likes a little heat in their food. Actually more like a dip/salsa than a salad this is traditionally served at the start of the meal with lots of crusty bread, a little Tuna on top or half a boiled egg.

Steps:

  • This dish can be made on the BBQ or on the Gas Hob, or using a kitchen blow torch. The method I will refer to uses the gas hob.
  • Wash all the vegetables well leaving the skin on. Place inside the BBQ wire grilling cage or if you're feeling adventurous directly onto a wire cake rack set over the largest burner of your gas hob set at a medium flame.
  • You may have to do this in batches but basically you want to blacken and blister the skin on the vegetables, charring them. Once they are evenly charred/blackened all over remove them from the heat and place them inside a ziplock bag. Leave them in there until all the vegetables have been charred. This makes the skins of the tomatoes and chillies slip off easily.
  • Take the vegetables out and slip of the skins of the tomato and place them into a bowl, do the same for the green chillies. Remove the papery skin from the garlic and onion and then roughly chop the vegetables before either blitzing them together in a food processor, being careful not to do this too finely or using a hand mouli push them through to get a nice even consistancy. Alternatively you can do this using a large chopping board and good sharp knife, running your knife through them and mixing as you go on the board until it all comes together evenly
  • Next add the turmeric, salt and ground black pepper to taste and a squeeze of lemon and a couple of tablespoons of really good olive oil. Mix well and taste. Adjust seasoning if required. Maybe more oil, maybe more lemon - the oil has to be good and this is an oil salad. If its too think you can add a little cold water but I never need to as I always leave the tomato seeds in giving more flavour and more juice.
  • To serve add optional tuna or boiled egg and lots of crusty bread which you dip and scoop the yummy salad with. Fantastic with grilled lamb chops, chicken, or fish. Excellent spread onto a baguette and then loaded with cooked leftover roast chicken. Fab as a relish with burgers and however else you fancy it. I use mild large green chillies but you could always use a couple of fat green chillies and temper the flavour with a red/green or orange sweet pepper to add a more subtle note of heat.

GRILLED ZUCCHINI TUNISIAN-STYLE (VEGAN FRIENDLY)

For this delicious summertime recipe I combined elements from two separate recipes printed in the cookbook Mediterranean Light: Zucchini Ajlouke (see Recipe #173461) and Tunisian Zucchini Salad. Assignment: Grill a surplus of vegetables from our CSA box: organic zucchini, yellow summer squash and carrots. If the zucchini you're using is large, go ahead and peel it. Sometimes the peel can be tough on those larger specimens. The carrots were included for color and to add a wee hint of sweetness, too. For vegan version, omit the yogurt or use your favorite non-dairy substitute.

1/2 lb zucchini, approximately (1-inch thick slices and about 4-5-inch long)
2 -3 carrots (1/4-inch slices and about 4-5-inch long)
2 tablespoons olive oil
1 garlic clove
1/2 tablespoon harissa, to taste (see this super easy homemade version ( Easiest Moroccan Harissa or Hot Sauce)
1/4 teaspoon ground cumin or 1/4 teaspoon cumin seed
1/4 teaspoon caraway seed
juice of half lemon
plain yogurt
fresh cilantro (FRESH!) or fresh parsley (FRESH!)
salt, to taste
cracked black pepper, to taste

Steps:

  • Whisk together the marinade/dressing ingredients.
  • Slice up the vegetables and place on a lined baking sheet or large pan in a single layer.
  • Brush the marinade/dressing onto the slices of vegetables. Turn over and brush on the other side. If time allows, cover and let sit for 1 hour to allow flavors to intensify.
  • Heat up a grill or stove top pan grill on medium heat.
  • Place the vegetables on top and grill on each side until the vegetables have grill marks. The zucchini/squash will probably cook faster than the carrots. The zucchini shouldn't be too mushy but still firm.
  • Transfer to a serving platter. Season with salt and pepper to taste. Garnish with the fresh cilantro or fresh parsley. Serve with a bowl of plain yogurt for garnish.
  • Serve warm or at room temperature. Servings are estimated.
